El chef Marzio Zacchi creció en la zona rural de Piamonte en el seno de una familia que criaba gallinas, cosechaba sus verduras y curaba su propio salami, por lo cual defiende con firmeza el uso de productos frescos locales. Sin embargo, a pesar de su crianza al estilo rural, Zacchi ha llevado la comida en Osteria Antica Bologna al tipo de sofisticación que solo puede alcanzarse tras pasar varios años de entrenamiento en restaurantes londinenses.
