Austin'sでは1994年以来、昔ながらの調理法を用いています。可能な限り新鮮な食材を入手し、毎日キッチンへと運んでいます。メニューの料理を、毎日最初から作っています。ガスではなく、昔ながらの広葉樹の薪でグリルしています。ビジネスの観点からすると、これは最も時間がかからない、またはお金がかからない方法ではありませんが、当店にとってはこれが唯一の方法です。料理の一つ一つを楽しみ、印象的でおいしいものとするため、注文を受けてから調理しています。リブや胸肉をスモークし、新鮮な魚を切り身にし、ステーキを手作業でカットしています。毎日のスープ、焼きたてのパンとデザートも店内で準備しています。ゲストが美味しいと思う料理と、店がリピーターを獲得するべく作る料理は異なります。Austin'sではすべてを行っています。ゲストがそれだけのことをするにふさわしい存在だからです。当店では常に、サービスのレベルと質を、ゲストにふさわしいものにするべく努めています。
