Thoroughly enjoyed establishment and the Centro menu. The food was impressive and the students were so professional. The service was equally terrific. If you are on campus at Cornell you don't want to miss the opportunity to dine here.

Really good food, service left a little wanting but I suppose that's to be expected when everyone working is a student. Not too loud and a nice area overall. Could use some better signage to find the restaurant though.

The food was amazing no doubt. The desserts were outstanding as well. The steak tenderloin dish I had on the French Kiss menu was well balanced. The only downside of the night would be the service which is understandable considering all of the servers were students including some of my friends.
The seating felt a bit cramped, there wasn't enough room for 2 people to pass between tables in most places, but nonetheless, this was a small venue.
First time visiting Establishment, for a belated Valentine's Day celebration. The food was wonderful - we immediately said we wanted to go back as soon as possible. We shared the truffle fries for a starter, and agreed they were the best fries we have ever had. We expressed our compliments to the kitchen, and were told the truffle fries are Establishment's best selling item. No surprise there!
The special theme this week was "Anti-Book Book Club", which was explained to us by two staff members. We ordered a drink ("Hemingway Gets Turnt") and the "Chicken Chicken Boom Boom" (cornish hen) from the special menu, as well as calamari tacos from the regular menu. We followed up dinner with the special dessert ("Oh, the Places you'll Grow"), which was an exotic mix of coconut macaroon dipped in white chocolate, a date with a saffron filling on a candied lemon wedge, and an apricot poached in wine and filled with candied walnut. Oustanding experience! We also had a wine with the chicken and a lemongrass soda with the taco, which I can recommend.
We were very happy with our experience. The kitchen felt it took them to long to serve the fries, so they ended up being complimentary. We were almost the last two people to leave, but the kitchen was kind enough to still serve us dessert. I felt everyone was going out of their way to give us a great dining experience. An absolute gem in the Ithaca restaurant scene.
The Establishment is an excellent opportunity for the students to showcase their culinary and management skills. One of the kitchen managers, Noella, was exceptional in coming out to the dining room to ensure that our meal was up to her high standards. The professors of the class truly know the proper techniques to allow the students to grow and develop as future leaders of the hospitality industry. Will come back again!
The salad was a little bit too simple and plan.
The pineapple stir fry rice was not a "stir fry rice", it was like a "porridge". The taste and smell felt like not made from fresh.

Well-prepared, tastey food options with a weekly rotating theme selected by students who staff and manage the restaurant (back and front of house), along with a standard menu of good choices that are available ongoing.
Excellent food, and great specials. Service was slow, entire dining experience took about 2 hours. Service is better if you go later, but sometimes they run out of the specials. They also aren't able to make many substitutions or changes to the menu items.
Thank you for a memorable dining experience! It was our first visit to the Establishment and we will definitely return! The (Cuban) specials for the night were outstanding and we truly enjoyed the casual but attentive atmosphere - meaning we were not rushed or ignored. Servers seemed to be there just as we needed them. Cloth table coverings and napkins add a classy warmth to the meal.

Food was amazing but service was subpar. We were waiting for our entrees for a long time and then our desserts also took a long time. The meal took 2 hours which was far longer than we expected.
This is the student-run restaurant for the School of Hotel Administration at Cornell. The food can be hit or miss (it was good the night I went), but overall it's a great value and the students really work hard to provide an enjoyable experience. The room is also beautiful, particularly if you can get one of the tables near the fireplace. I highly recommend it to anyone who is stopping by campus for a visit.
Food was pretty good but service wasn't great and there was a lot of confusion between the front and back of the house in terms of what food items were actually available.
It was my first time at the establishment and I thoroughly enjoyed everything about this place-- the food, atmosphere, professionalism, service, just everything. The main dish was amazing and came in big portions, the truffle fries were to die for, and the desserts were heavenly. They even accommodated my special request for a message on the dessert, which I appreciated a lot.
The Mediterranean theme night was great and the food was delicious.
I got the 'penne and the jets' and it was kind of an average pasta dish. The peppers and sauce were consistent, I felt the sausage could've been cooked more. The sausage felt like cheap grocery store hot dog style meat, would've been nicer to have a more authentic tasty sausage. If not for the sausage, it would have been a great dish.
My companion got the 'touchdown' chicken sandwich with goat cheese. I had two bites of it and it was superb. Wish I would've picked that, I'm just a bad orderer!
Took my family to celebrate my birthday. Food and service were amazing. I love the fact that it is part of a class. My food was delicious. My favorite thing was the milkshake sundae. Also having a mini birthday cake brought out was cool too.

Wen't with friends and had a splendid time. Staff was great, and we were met very graciously. Would recommend 10/10.
We waited 30 minutes past our reservation and the food took 45 minutes to come. The waiters and hosts were friendly but the wait was uncomfortable and by the time we were finally seated, the food we wanted to order had just sold out. Food quality was ok but portion size was small; friends had complaints about their salad being soggy and sour.
Came with friend and we both really enjoyed it. Our waiter is very attentive and helpful. Ordered the chicken dish from the special menu, which is beyond expectation! My friend ordered salmon and liked it too.
They forgot to put Caesar dressing on the chicken caesar, so I salad was really dry. I had to ask for more dressing afterwards.
The waiter who's serving our table kept disappearing into the classroom, so we had to ask other waiter for things.

It was really great experience to eat there. Everything was really good! Only two things to recommend: lights were too bright, I wish it could be dimmed a little. It would match well to the atmosphere and feel of the place. Second, we constantly felt we've been monitored/observed by everyone serving there. While we are eating, we saw many times that the servants are intently looking and observing every move of the customers, us too. We felt a little uncomfortable. I understand that they need to be aware of the customers needs, but I wish it was not that obvious from the customer perspective.
The overall dining experience was okay, but we weren't so satisfied for the fact that we waited for another 15 minutes after we got there at our reservation time. We thought that the point of having people making reservations is to make sure that people get there on time. We had meetings and plans afterwards and because of that, we had to eat in a hurry.
It was a memorable experience with outstanding service, and great, perfect food selection.
The staff did a wonderful job organizing the event and making sure all customers were satisfied during the dinner. The wait staff was very attentive to our needs.
The atmosphere was great, and the food was delicious. The seafood entree was very good. The desserts were very rich; I had to split the malted cookie with a friend. The service was also very good; it was a little slow at times, but the staff was very attentive.

Quality of food and service were superb! I cannot recall enjoying a better meal in any Ithaca restaurant--and we have many good eateries in our area. Perhaps most surprising is that Establishment is run completely by Cornell University students in the Hotel School. It's one of the Best Kept Secrets in Ithaca. We'll be back often.
It was the second time I was going to the establishment. The ambience was relaxing. My friends and I were immediately welcomed by Claire, who proceeded to serve us water before bringing the menu. My friend did not like the polenta that came with the ribs and Claire did not hesitate to swap the polenta with fries. Overall it was an amazing experience and would recommend the establishment to anyone. I look forward to going back!! Mind blown that everything is student run!
