Establishment at Statler is a refined casual dining restaurant that is operated by students in the School of Hotel Administration’s Restaurant Management course. Positioned as a classroom first and restaurant second, Establishment serves as a hands-on learning environment for students to synthesize foodservice concepts, business principles, and hospitality management theories. As a restaurant open to the public, our goal is to provide our patrons with a unique and fulfilling dining experience. The menu at Establishment has been engineered to reinforce students' knowledge of various cooking methods, tools, and equipment, while simultaneously providing guests with an enticing, eclectic mix of dishes inspired by a variety of different cuisines. Service at Establishment is intended to be comfortable and relaxed, yet polished and professional. Students are trained to anticipate guests' needs and to provide the level of service expected at a refined casual dining restaurant.

Thank you for a memorable dining experience! It was our first visit to the Establishment and we will definitely return! The (Cuban) specials for the night were outstanding and we truly enjoyed the casual but attentive atmosphere - meaning we were not rushed or ignored. Servers seemed to be there just as we needed them. Cloth table coverings and napkins add a classy warmth to the meal.
This is the student-run restaurant for the School of Hotel Administration at Cornell. The food can be hit or miss (it was good the night I went), but overall it's a great value and the students really work hard to provide an enjoyable experience. The room is also beautiful, particularly if you can get one of the tables near the fireplace. I highly recommend it to anyone who is stopping by campus for a visit.
It was my first time at the establishment and I thoroughly enjoyed everything about this place-- the food, atmosphere, professionalism, service, just everything. The main dish was amazing and came in big portions, the truffle fries were to die for, and the desserts were heavenly. They even accommodated my special request for a message on the dessert, which I appreciated a lot.
I got the 'penne and the jets' and it was kind of an average pasta dish. The peppers and sauce were consistent, I felt the sausage could've been cooked more. The sausage felt like cheap grocery store hot dog style meat, would've been nicer to have a more authentic tasty sausage. If not for the sausage, it would have been a great dish.
My companion got the 'touchdown' chicken sandwich with goat cheese. I had two bites of it and it was superb. Wish I would've picked that, I'm just a bad orderer!
Took my family to celebrate my birthday. Food and service were amazing. I love the fact that it is part of a class. My food was delicious. My favorite thing was the milkshake sundae. Also having a mini birthday cake brought out was cool too.

We waited 30 minutes past our reservation and the food took 45 minutes to come. The waiters and hosts were friendly but the wait was uncomfortable and by the time we were finally seated, the food we wanted to order had just sold out. Food quality was ok but portion size was small; friends had complaints about their salad being soggy and sour.
It was really great experience to eat there. Everything was really good! Only two things to recommend: lights were too bright, I wish it could be dimmed a little. It would match well to the atmosphere and feel of the place. Second, we constantly felt we've been monitored/observed by everyone serving there. While we are eating, we saw many times that the servants are intently looking and observing every move of the customers, us too. We felt a little uncomfortable. I understand that they need to be aware of the customers needs, but I wish it was not that obvious from the customer perspective.
The overall dining experience was okay, but we weren't so satisfied for the fact that we waited for another 15 minutes after we got there at our reservation time. We thought that the point of having people making reservations is to make sure that people get there on time. We had meetings and plans afterwards and because of that, we had to eat in a hurry.
The atmosphere was great, and the food was delicious. The seafood entree was very good. The desserts were very rich; I had to split the malted cookie with a friend. The service was also very good; it was a little slow at times, but the staff was very attentive.
Quality of food and service were superb! I cannot recall enjoying a better meal in any Ithaca restaurant--and we have many good eateries in our area. Perhaps most surprising is that Establishment is run completely by Cornell University students in the Hotel School. It's one of the Best Kept Secrets in Ithaca. We'll be back often.
It was the second time I was going to the establishment. The ambience was relaxing. My friends and I were immediately welcomed by Claire, who proceeded to serve us water before bringing the menu. My friend did not like the polenta that came with the ribs and Claire did not hesitate to swap the polenta with fries. Overall it was an amazing experience and would recommend the establishment to anyone. I look forward to going back!! Mind blown that everything is student run!
Professor Wellstead and I came to support Margot Mangiarotti's group. We were impressed by the theme and the food. Loved the cabbage salad with the rama noodles. Rice was nicely seasoned and chicken kabobs were fine. We had the fondue also - certainly fits the college town theme. Both front of house and back of house flowed well and efficiently. This was an impressive night for its organization and efficiency. The level of music in the restaurant was good for conversation. I learned what mug cake was. Server was excellent as was management. Thanks for having us.
Excellent student run restaurant. The food was original and the presentation was well done. We both sampled the brussel sprouts appetizer and it was delicious...the best we ever had! Since you are not allowed to leave a tip here, it was a very reasonably priced dinner!!
We heard about Estb. only through insider information - a Cornell student in the family. The Estb. is run by the students of Cornell's Hotel Management school. That novelty value is enough to put Estb. on your list of must dos while in Ithaca. The bonus is that the food and service is excellent and the prices are reasonable (lower than other restaurants in the area that serve the same or lower caliber food). It's also delightful to see the energy and enthusiasm of the students who are putting in their best to make sure that the restaurant experience for the guests is great.
i went for the italian/sicily night. the service was good and attentive. the brussel sprouts were delicious but thought that grilled corn would be a much better compliment than the popcorn. for food improvements, the rib-eye was very well cooked and seasoned, but i wasn't expecting it to be fried and i wish that the meat itself was highlighted instead of covering it a fried coating. it would also be nice to have a vegetable or grain accompaniment in exchange for a smaller piece of meat. lastly, the cannoli filling was a little watery but had good taste. Overall, i enjoyed this experience and would come back again.
