About Ernest's at NAIT
Ernest's Dining Room at NAIT has been aptly described as the "jewel in the crown" of Hokanson Centre for Culinary Arts in the School of Skilled Trades. Ernest's decor is described as "understated elegance". Tasteful compliments of cherry wood and brass highlights, a beautiful rock feature wall, muted lighting and attention to detail provide the room with a distinct corporate ambience. Critical acclaim and numerous accolades identify the "haute cuisine" prepared by second year Culinary Arts diploma students as "outstanding". OpenTable diners voted top 100 in Canada. Seasoned chef instructors emphasize the importance of using high quality local regional products. Mastery of traditional cookery combined with contemporary artistry has resulted in a truly electric cuisine. Elegant service is provided by eager Culinary and Hospitality students. During the school year Ernest's is a venue for a variety of "special events" allowing students to demonstrate creativity while interacting with the community. The Toque Demagny Scholarship Dinner, Young Culinarians Conquering Cancer, Team NAIT and Le club Culinaire fundraisers, etc... provide students with the opportunity to challenge their personal and professional bests.
We also feature wine dinners with regional wines paired to perfection with our students culinary creations.
Parking Passes must be requested immediately by emailing firstname.lastname@example.org for DAY parking. Parking is FREE after 5pm in Lot "C". Once all the DAY reserved parking permits stalls are reserved you will have to pay to park.
We have a surface lot available to our guests at Lot "C" directly across from the dining room entrance on 118th Avenue. Parking is at a premium during the day, so we do advise an early arrival. Please inform your guests regarding parking permits.

We feature our Student Showcase Buffet on Friday's for lunch. These buffets book fast, please call to reserve. We do serve ala carte lunches during the week. Please note: for groups of 8 guests and larger, Ernest's does add an automatic service charge.
For all banquets, special function and buffet reservations, a service charge will be added automatically.

It is hard to believe the food was prepared by students on their second day in the program. It can challenge other fine restaurants in the city. It was nice to have a live performer on Friday night and to have an atmosphere where you can enjoy having a conversation without shouting.
Would return in a heartbeat.
Valentine's Day is a nice time to spend quiet moments with the person you've been married to for 36 years. Ernest"s was very classy plus the "chef experience" was special .... Would love to eat there more often! The blueberry Margarita was fabulous darling.
We normally visit this wonderful restaurant when we come to Edmonton.
Unfortunately, the food quality was below what we normally expected. The Arctic Char was over cooked and dry. The strip loin, although a thick piece, was very tough and we had to send it back. Dominique, our waiter was attentive and did not end up charging for our one meal. However, it was disappointing. Hopefully, our next visit will be better since we normally have a fantastic meal.
Very friendly hospitable service. Brent and Melony went over and above to make our special occasion memorable. Food was very good and we enjoyed speaking with one of the chefs after dinner. I would have like to see different vegetable sides on each of our plates. And I wasn't keen on the mango tarte. Overall a lovely meal and experience for our first visit to Ernest's.
Two visits were exceptional, this one was terrible.
January 23rd, we looked at the menu & decided on the carpaccio & pheasant. Food that you can’t get just anywhere. When we arrived the carpaccio & pheasant were no longer on the menu.
The bread basket was fabulous with very tasty butters (3).
Our server brought a cherry tomato with mint & something else in it. She placed my friend’s spoon with the tomato on the table beside her bread plate & placed mine on my bread plate. Incorrect. And then, the spoons remained on the table until after the appetizer arrived & was eaten & the appetizer plate removed. When our main course arrived, I asked for the spoons to be removed.
Friend had the scallops for $16. When she received them, there were only 2 large scallops. No one asked how they were until the plate was removed.
We then asked, if our Sea bass wasn’t being made yet if we could order the Caesar Salad made table side for two. We were told yes but we could order just one or two salads. I was told they were “too busy” to do table side salads but would be same cost.
Sea bass came shortly after, it was tasty but in a very watery sauce. Half way through our main course, our server brought us our sorbet that should have been brought to us before the meal! We ate the melted sorbet after we finished our sea bass.
Our server explained that they were busier than usual and it was new kitchen staff. I can understand that; however, they knew how many people had reservations and should staff the servers accordingly or not accept as many reservations. I had no issue with the food or timing as we expected and asked for a slow meal; however, the service was the worst I have had & not even close to what I have previously experienced at Ernest’s. Another example, our server pour the initial glass of wine then the rest of the bottle we poured ourselves and then at one point our server lifted the empty bottle and set it back down, but didn’t remove it & just walked away.
We had been meaning to get to Ernest's for some time and I regret not getting here sooner. The service was impeccable from the moment we arrived to when we were finished eating and left. Our meals were well prepared, lovingly presented and served. Not quite 5 stars on the food but close, if I could give 4.5 I would.
We are already planning our next visit.

From the linen tablecloth and napkins, complete place settings, attentive staff and visually appealing and deliciously prepared dishes, we were all in love!
Great place to take friends and carry on a conversation. Good selection of wines.

we were very disappointed with the hot buffet this year. Our seating was at 12:15 and by the time we got to the hot section most everything was cold and very dry. I could not cut my lambchop!
We were also disappointed that our favorite deserts were all gone.
The cold station was excellent.
Fabulous as always. Earnest's Friday Student Showcase Buffets continue to be by far the best lunches we've ever had. The range of food is amazing and so much care put into each and every item. And the icing on the cake is that often the creator of the dish is there proudly explaining its creation. The only disappointment is that there's too much selection to sample everything. We'll be back!
First time for us. Outstanding response from call-back to enquire if any food allergies, parking needs, and whether any other special considerations needed. Food was excellent, well-prepared, elegantly presented, and superb tasting. Service was outstanding! We will definitely return!
The drinks were adventurous, the food was exquisite from the scallops, to the duck, the steak was a perfect medium rare. All of the students courses were tasty, inventive and perfectly cooked, The black and blue burger was so juicy and with the blue cheese it was so balanced. The deserts finished the meal with just the right amount of sour and sweet. The service was impeccable as always. Definitely one of the best restaurants in town. The value is always exceptional.
We had been wanting to try Ernest’s for a long time and finally had the chance to go for my wife’s birthday. We specifically told our waiter that we don’t eat pork so if he could please let us know the menu items which contain pork or substitute with something else. We got our meals and our side dish had bacon in it- and lots!! After asking the server if it was bacon (because it looked like it), he said no- it’s red potatoes. I took one bite and it was definitely bacon and not potato. We were not too happy since the order took longer than it should have to begin with. Our server was very apologetic and ordered new meals for us. The chef came out and apologized which was really nice of him. The new meals were fantastic (rack of lamb). They did their best to compensate for the error which made us feel better. I would go back despite this experience as the food was amazing.
All aspects of service was commendable; from the greeting upon arrival, the visit from the chef and our server. The soup was wonderful, the char very good, the lamb tasty however not well trimmed and therefore not as pleasant to eat as it might have been. The custard desert was wonderful (suggested by our server) and enjoyed by all.
The guitar music was beautiful and provided a quiet atmosphere that we all appreciated.
We will return!
I have been to Ernest’s several times and have never been disappointed. This time was again outstanding. It was a 3 course lunch which 3 choices from each course. No one in our group was disappointed in any of their selections.
Recommend Ernest’s as one of the gems of the Edmonton area.
Wonderfully prepared food. Came with friends for the four course special Christmas dinner and it did not disappoint. Each course was delicious and perfectly prepared. Service was good but our server was still learning the nuances of fine dining service.
Will definitely try to visit this gem more often.
Pleasant servers, good food choices, food allergies addressed. Server tended to place and remove from either side of the people so it was hard to predict and move/lean out of the way, or drinks poured across in front of someone rather than going around to the other side. Seemed awkward for us and the server. Food was tasty, excellent seafood chowder, salad was fine - sort of a deconstructed style. Meatballs appies were very good. Chicken dish was flavorful, beef was melt in your mouth although it was only room temperature. Desserts were very good. I found the cinnamon bun had an over baked top crust but I liked the add in if the pear within the bun and the ice cream was delicious. We will be back.
