How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

An absolutely fantastic experience for our son's graduation and birthday. The steak suggestion from the waiter was perfect. Service and food were top notch and the ambiance was perfect. They have a small patio with beautiful views of the shopping area and all the pretty lights.

We frequent this place often, and it never disappoints. The food is always perfect, and they have literally the best burger I’ve ever had in my life. I tried the rib cap steak this trip and it was absolutely mouthwatering - so tender, juicy, but still hearty and filling. Service is superb and beyond top notch. This place is always a highly recommend, and we will be back soon!

The location and the ambience was very dim and romantic. The service was fantastic and the waiter was very kind though we did not see him very much during the dinner itself which would have been nice as we did have to wait a while to get additional requests completed. The appetizer of 1/2 pound of oysters and the bone marram carne asada was fast and delicious we ate all of it. The main entree themselves were also fantastic we got the shrimp and artichoke hearts as well as the filet mignon which was as soft as butter. However a huge disappointment were the sides accompanying the entree. We got a deconstructed bowl of Brussels sprout leaves that were bland in flavor and uncooked which made them very chewy and unpleasant. The second entree side was roasted broccoli which also was undercooked though did have a nice garlic and red pepper flake flavor. Overall would go again but I don’t not recommend the sides.

Great patio- lots of heaters , tables adequately spaced
Delicious food- steak is the best and lots of sauces , the sides are excellent from Mac and cheese to Brussel sprouts

This was our first time back to Echo & Rig since Covid and they did not disappoint!! The patio was delightful - tables well spaced and heaters nice and toasty. Hugo was our server and he was outstanding! Aside from providing excellent service, he was extremely knowledgeable and interesting. Normally we enjoy sharing lots of small plates, but because no one was comfortable sharing, we each had our own steak and side. Two of us ordered filets and the other two had bavettes, and among the sides were Brussels sprouts, Caesar salad, portobello fries and French fries. Everything was outstanding! We can’t wait to come back!

Martini portions were small and served in a snifter glass. We didn't see any martini glasses at the bar. Not sure why. Butcher section was closed due to quarantine.

Very limited wine list. Fried spinach is lightly fried with a nice vinaigrette and some pickled vegetables. Bread was cold, not fresh. We shared the steak by the ounce and it was nicely cooked. It would be nice to have a dry rub, not just sauces.

Service was efficient, but there were little things that needed improvement. For example, when the server poured the wine, he reached over, instead of walking around the guest.

It was a good experience, but Capital Grille or Morton's is better.

This place is the best value in all of vegas. We had a great waiter. They offer no corkage fee, so bring a great bottle of wine. We preordered the rib cap, and it’s the best steak I’ve had in all of vegas. Highly recommended!

This is one of my favorite restaurants to dine because the food is always delicious, the ambiance is amazing and the service is always spectacular! Shane is our server of choice; he is friendly, caring and extremely attentive. Highly recommend this restaurant for any celebration or just for a meal. You will not be disappointed.

My wife and I shared a birthday dinner. The bartender went through the effort of going upstairs to get hot water for my custom request cocktail. We arrived 30mins early and were able to be seated and wait at the bar. The host retrieved us when the table was ready. We ate the onion soup, lamb cigars, portobello mushroom fries (highly recommend), and filet mignon with a bearnaise sauce. Our waiter was kind and respectful, and treated my wife and I to a birthday sundae. We have saved up and eaten here many times over the past 5 years, and believe the exceptional food and service is always well worth price. My wife even dreamt about the dinner the following night.

This restaurant was suggested to us by a friend, and lived up to all of our expectations. The food was fabulous, and cooked to perfection, our waiter was attentive but not pushy, the ambience was very good- a little noisy, since there are no soft surfaces to absorb the sound. We celebrated our wedding anniversary and it did not break the bank to do it! We would recommend this restaurant to anyone, and will be returning!!

I would give this place 3 out of 5, the brunch menu wasn’t as good I though it would be. I had order the ribeye steak and eggs, I ask for a medium well and received rare. My server wasn’t around much and it seem like most of the time he was avoiding my table. The only thing I enjoy being at this restaurant was probably at the Mamosa.

Anniversary dinner was spectacular. There were no issues with our reservation as we were seated right on time. Social distancing was observed and masks and gloves were worn by all staff members. The cauliflower side was a great starter. The beer and wine selection was more than adequate. The steaks were seasoned and cooked perfectly. We will definitely return. Stay off the strip. Go here.

The only item that was hot was the steak. The tomato watermelon salad was mushy, the crab cake was made quite a bit before platting, the sauces were not even warm and neither was the bread - cold bread - really? Nothing was outstanding and all of it should have been!

We dined here after a strong recommendation from a Chef friend, even though it was a 30 minute drive from our Hotel. Overall, my husband and I were very pleased with our steaks (he had the Ribeye, I had the Spencer cut) and the desired cook on them was perfect, though we were less enthusiastic about the roasted broccolini side (additional cost) - slightly overcooked, too many stalks, and lacked flavor. Our server (Rae, the only female server) was excellent. She was attentive without being over the top, and friendly. The decor was modern, sparse and uncluttered, and the kitchen was open to the main dining area. We found the noise level to be distracting - very noisy, especially considering the COVID distancing of the tables. Should we return to Echo & Rig the next time we visit Las Vegas, we'll request a table on the balcony, weather permitting, to enjoy (at least for us) a better ambiance.
