How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, just opened at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

The food was outstanding and services was excellent. The surprise is the bill - this is literally half the price of a high end steak house on the strip and I would say as good if not better. Really outstanding!

Brought my husband here for his birthday. We both enjoyed it very much. Small plates were a little too exotic for our taste and they didn’t have just a normal salad mix. The mashed potatoes were fabulous. They brought out a desert with a candle and I expected just a small something for my husband. It was a dish that was plenty for the two of us. We will be back.

The service was good. The steak I ordered was unseasoned. I ordered it medium and the middle was raw. Still cold. My husbands was good and seasoned well. So it was 50/50 on the flavoring and cooking. The broccolini was great, mashed potatoes had a raw onion bitterness to them. The calamari was delicious.

Located well off The Strip by approximately 7 miles, but well worth the excursion. Great and attentive service, delicious food, and a beautiful venue. The butcher space is located on the first floor in an open kitchen kind of way, so you can watch the art of steak cutting/carving. There's also an oyster bar in case you're wondering how fresh the oysters are.

The steaks were awesome as was the pork chop. We really recommend the brussel sprouts. Our service was very helpful and attentive. We had a great experience.

Never been disappointed in the food or service at Echo & Rig. I’ll also drop in during the week to visit their butcher to pick up some fantastic meats to cook at home.

We come here for every holiday manager dinner and any reward dinner I receive from my work. Also been for brunch, but I definitely prefer the dinner menu, the rib cap is my favorite steak cut. Food is spot on delicious, service is impeccable, and I’m always made to feel like vip from the time I walk in the door until I finish my meal.

Everytime I go to Echo and Rig my experience continues to improve. Brunch was absolutely fabulous with great food and drinks. The manager was also very lovely during our brunch meal. I will definitely be back

Went to celebrate the birthday of a friend visiting from Ohio (as a local we avoid the strip especially wirh the parking situation). We had a reservation for 1:45 pm , were directed to be seated in bar area and had finished 2 drinks each before being escorted upstairs to our table! Once upstairs it was nearly 15 minutes before our order was taken and at least that long before it arrived. The place was packed! The Manager stopped to chat several times probably as a detraction. I finally made a comment to him about the slow service and I suppose we received the "complimentary" dessert as consolation? As a Summerlin resident we've been there several times and never experienced such slow service. The wait staff was nice but the management should be aware that Sunday afternoons just may require more personnel! The food was ok I had the salmon benedict and my friend had the brunch special which didn't look very appealing to me. However, she seemed to enjoy it. The place was extremely noisy and did seem to quiet down around 3:30. I will return but not for Sunday Brunch for sure!

I've been to Echo and Rig before and the service is always a hit or miss. What keeps me coming back it is the food. This time around the hostess didnt even bother walking us up to where they had sat our other half of our party. I didnt think that was appropriate because they wouldn't know if I knew my way around or not. They pointed upstairs and went back to talking to each other. If I were a new guest there, how would I know where they sat my group? The second very disappointing part about our experience was the customer service. Our waitress was very short and multiple times spoke to us as if we were inconveniencing her by ordering. She answered our questions in very sarcastic and condescending ways. When our food was being delivered to us, i asked the server to grab us extra plates so we can share; he then snickered and laughed while shaking his head and said "uh huh, sure". It felt very uncomfortable to be served by the wait staff there. It is hard to recommend this place fully without warning people first that they can get bad service. Food is good but dont expect the wait staff or host to treat you well.

Whenever I visit Las Vegas, Echo & Rig is a must stop. The level of service here should be what other restaurants strive for. From the moment you walk through the doors, you feel like a VIP. We are always greeted immediately after being seated. Our servers have always been the best in the business. They make great recommendations and never rush you. I recommend Echo & Rig to anyone, local or otherwise, for an amazing 5-star dining experience!

Service was absolutely outstanding, from the moment we walked in until we left. Dinner fare was a cut above the usual steakhouse, but prices are about what you'd expect. Atmosphere is casually elegant but a bit noisy if there are large parties (there were two when we dined). Our server was very professional as were all of his assistants. Fare selection of wines with the normal steakhouse prices. Would definitely recommend to friends.

We celebrated our 5th wedding anniversary at Echo and Rig.
The reservation process was extremely easy and accommodating, especially considering I changed the original time to be earlier and I showed up even earlier than that time.
The service was world class, everyone was joyful and excited. Our server, Rae was especially a delight. She was knowledgeable and down to earth, very relatable. Her beer recommendation was on point!

I love most the fact that we had a choice of which particular steak we wanted, and we were able to see the steak before it was cooked.

Delicious food, fantastic people, would definitely recommend for a good time!

Our dining experience has always been amazing, until this time. The red wine Demi had little flavor, the steak was over charred and undercooked. Not the best for spending $27 for a steak... tasted like Outback Steakhouse

My steak was great and done right. My wife's filet was tough, but they corrected it at once and gave her a new one which was perfect. They treat customers very well!

Echo & Rig is one of my top favorite restaurants here in Vegas. The service is always exceptional from the very beginning to the end. I've never had a single complaint and I'm always extremely satisfied. 10/10 every time!

This restaurant is a must when visiting the Las Vegas area. We've dined here on several occasions and have never been disappointed. Whenever company comes to town we especially enjoy going to the weekend brunch. The portabella fries are always a must. Our guest really enjoyed the smoked salmon benedict and being vegetarian I love the Farmer's Market breakfast. My partner chose the short rib hash and our friend had an egg plate and both were delicious. Joy and his team definitely made our morning memorable with personal service always anticipating our needs. We'll definitely ask for Joy to serve us when we return!

Brunch was fabulous as always. There was a little confusion regarding our server....I had requested Nan but no one let her know for a few minutes. They figured it out and all was well.
The short rib hash is my favorite and it was terrific as usual.
Stopped by the butcher shop on my way out to pick up some delicious steak burgers.
Love the experience every time!

I love this place. Dining on the patio is my favorite, especially if you want a quiet, intimate dinner with your dining companion(s). The service is excellent. Everyone who works there acknowledges and treats you like royalty. Oh and the food is INCREDIBLE.

My husband and I went to dinner here for our anniversary and it didn't disappoint! The service was outstanding and the food was absolutely delicious. We will definitely go back again for dinner and would love to try brunch or lunch sometime.
