Executive Chef Anthony Ferrando's expertise with Mediterranean influenced New American cuisine, started at home with the Italian recipes he absorbed from his mother and grandmother and his expertise in it, lead to his employment at the legendary Rao's in New York City.
Today, Ferrando's signature's is all over DISH's eclectic menu, from his Stout Braised Short Ribs and Maple Sweet Potato Mash and his Pan Roasted Salmon in Chili Lime Sauce.
Working alongside Ferrando is co-owner, Tony Roegiers. With Roegiers behind the scenes, Ferrando is able to focus on his culinary genius; creating adventurous and sublime daily specials that are keeping his customers on the cutting edge.

Food and service was terrific as usual. BYOB is a plus. A little pricey but worth it! The braised short ribs were delicious! Also tried the flash fried spinach appetizer which was very tasty!
Been here before and the food is always very good but the noise level is not pleasant. It's a small BYOB (a plus) and when it is packed on a Saturday night, conversations are very difficult to hold. Maybe a weekday is better.
disappointed in salad for $10.00 all you got is a handful of lettuce! for my main course I asked for EXTRA veggies and No potatoes and it was very skimpy did not look like EXTRA veggies. otherwise service was good.
We were seated right away. Our server greeted us and told us the specials. She was very friendly and our dinners were amazing. The atmosphere is cozy but very loud. I have noticed this as a trend in restaurants now. We will return in the future
Our party of 6 had an excellent experience at Dish. The food was delicious. We especially enjoyed the crispy spinach salad and the seafood risotto. Our waiter was friendly and prompt but did not rush us. My only suggestion is to dim the lighting a little bit. The restaurant was a bit too bright for a Saturday evening. We will be going back to Dish soon.
There was a delicious special of a pasta called peechy (I believe) that was so delicious! My friend and I both commented to each other next day that we both dreamed about it it was so good. It had a cream sauce on the bottom and an eggplant mixture on top that had a delicious flavor profile. The texture of the pasta was addictive. We also both had impeccable Caesar salads that was on point perfectly with all flavors. I never clean my plate but I did that night on all items ordered. We also shared the bread pudding with Carmel gelato and berries, which is always amazing regardless of the gelato flavor paired with it. A perfect evening with perfect company and perfect t food and amazing service.
The food is above-average for Monmouth County, however the service could use improvement. The other downside is the noise level was so high, that I could hardly converse with my date. Finally, the lighting is a little institutional, they may want to consider spending $10 for a dimmer switch.
We were disappointed with our dining experience this time. What a shame-it used to be so good. Salad was bland, mussels were too small and under-seasoned, pork chop was undercooked, and pasta bolognese was lukewarm. No need to ever go back.
Excellent food! Enjoyed the option of a pre fix menu. Very clean and easy parking. Would recommend to others!
Dish has always been my go-to either before or after a show at the Count Basie and we have been there at other times as well. This last time was just very okay. I was unimpressed with my dish which was on the specials. It was orecchiette pasta with veggies and it wasn't creative or particularly delicious and the veggies were overcooked. Two others at our table ordered the veal chop special and I am sure that it was quite pricey and it was very underwhelming. The chops looked pitiful, not like at other restaurants that serve nice thick juicy veal chops. My husband ordered pasta with short rib and he said it was tasteless/ The wait staff who has been there for a long time seemed particularly overwhelmed and the place was so noisy. I have had great meals at Dish in the past but this time was a disappointment
Third time we have been here and the food does not disappoint. Braised beef short ribs continue to be outstanding. Tried both the Pappardeli and the special of baby veal chops and each was superb! I will note that when the meals come out, it does not always look like there is a lot on the plate but everything was quite filling. Only complaint was the level of noise was deafening, made dinner conversation very difficult.

Dinner was just ok. Requested a special table, they put us in the corner & gave the requested table to the next couple that came in. Calamari was more batter, less calamari. BYOB great. Pasta dish way too saucy. Just an OK meal. 3 out of 5
4th time dining at Dish and definitely the Last! This is the LOUDEST place we have ever dined at. This place needs a remodel ASAP. Lighting is awful and outdated. Old dried food splashed on walls. Stressed out wait staff. Bread was cold and dried out. All the food needed an incredible amount of salt and pepper just to give an ounce of flavor. The salad was a bright spot. Did we complain...no because we didn’t want to add anymore stress to our dining experience. Really not sure how this place stays so popular...it’s only a matter of time. Very dissatisfying.
Waited for table 19 minutes despite reservation. Server Terry was very nice and apologetic but we never even got bread (until I had to ask) while waiting 15 minutes for appetizers and almost another hour for entrees! Kitchen was backed up but come on, haven’t they figured out how to manage a busy Saturday night by now? We literally had to yell to hear one another. Cramped seating and loud large groups made it worse. Food is great but not worth the unpleasantness of the overall dining experience. Sadly I won’t be back.
Food was very good, but they were out of several items pretty early in the evening. It took almost 2 hours to receive our entree, but we weren't in a rush so it wasn't a big deal except as a BYOB we pretty much finished our wine before it came. It's very loud (noisy) though so you find yourself shouting as it was very crowded. Overall though it was good and we will go back.
My husband and I had an absolutely fabulous dinner of grouper with couscous in an amazing lemon, wine sauce. And the vanilla cake with chocolate butter cream frosting is the best in town. The noise level is extremely high in this intimate restaurant. So, don't plan on having any serious conversations since you'll have to shout to be heard!
The food is always amazing and comes out fast and piping hot. The service is wonderful but the ambiance leaves a something to be desired.
This was our first visit to Dish. We were attending a show at Count Basie Theatre and wanted to visit Red Bank. I had heard about Dish, but I knew little about it. We thoroughly enjoyed the dining experience. It is a small place, but the seats were spaced so you were not sitting on top of other guests. It is a BYOB, and we enjoy those places because we make our own wine and bring it with us. The food was delicious. The Shrimp wrapped in bacon over cheesy grits appetizer was excellent. My wife ordered a special, shrimp and sausage over broccoli rabe and was not disappointed. I had the short rib over maple sweet potatoes dinner and it was delicious. We will go back there again in the future and definitely recommend the place. If you go, ask for the waitress named Terri, who was attentive and very pleasant,

The pork chop was excellent as was the strip steak.
The food is fabulous, I deviated from my usual Tuscan stew and was not disappointed. The hake with ink linguini and clams was delicious. The fennel salad was a perfect starter. You won't be disappointed with anything in the menu or extensive specials.
Love the food and service. I wish they would dampen the noise level. This is perhaps one of the loudest places where its very difficult to hear as the noise level here is extreme.
Great food, good service and good friends. Had the short ribs, they were excellent. Flash spinach delicious. Everyone enjoyed their meal.

We had read enthusiastic reviews of Dish and we're looking forward to an imaginative and well-prepared dinner. Our table was in the main service corridor (keep those elbows in); service was prompt, helpful and pleasant. Food was adequate but nothing special. Noise was excruciating from a table of 10 with several loud, (presumably) half-drunk diners, rendering conversation impossible. This totally ruined the evening for us. We will never be back.

Our meals were perfect. The service is friendly and easy going. The chef knew his/her food sources. The menu was creative yet grounded. All in all a terrific meal in a welcoming and warm atmosphere.
Valentines Day reservation - they placed us in a table immediately behind (2 feet) the hostess station and 2 inches from another table. There were several open tables which we asked to be moved and were told they were already "assigned". So we left and had a nice meal at another restaurant. We have been to Dish several times and know it is generally a tight fit. However it appeared they were trying to maximize a weekday event at the expense of the patrons. We will not be dining here again, too many other good options available.

I have to be honest. This was not good. I wish someone had written that before I made my reservation. The restaurant is small and you're squeezed in way too close to way too may people in such a small space. So it's very very loud. The wait staff was far too busy to offer any kind of hospitality. Our waiter was so nice (I can't say this enough) and he is the only reason the ratings are as high as they were. He was kind about our not liking the food and even sending back the very dry pork chop. But he and the other servers were just too busy to give any kind of true dining experience, which is what I would expect at $30 per plate. Our appetizer plates sat on the table for a long time when we were finished and our entree order had not even been taken. This restaurant would be well served with fewer tables and an additional bus person. All of this could be over looked if the food was AMAZING. But it was far from amazing, it was fine.
The bread and olive oil was disgusting. That should have been the first clue. I’ve never had gross bread. It was terrible.
The food took and hour to come out. The waiter should no remorse or concern. It was super crowded and noisy and had he searing was way too tight. When food finally came out the streak was way over cooked and charred. The fish entree was ok at best.
I had the special salad of greens, beets, cranberries, walnuts and blue cheese. The salad was very large and could have been split with my husband. It was tasty but I thought it was overloaded with cranberries and walnuts. Sometimes less is more. For my entree, I had seafood stew. The fish was cooked well. The calamari was a little on the chewy side but other than that, the dish had great flavor. I really enjoyed it. The ambiance is lacking and I think takes away from the experience. The restaurant is too bright and the only wall decorations are plates that lack a real theme. The walls are painted light blue. They look washed out. The restaurant lacks any charm. That being said, I would dine here again. I hope the owner reads my review and pots down the lights.
