Derek's, in Bradenton, is renowned for a modern take on Cajun and Creole cuisine, adding a Mediterranean twist to classic southern dishes in its welcoming restaurant. Tapas dishes, such as the PEI mussels with andouille sausage, chickpeas and sweet peppers and the smoked pulled pork flatbread with peach barbecue sauce and farmers cheese, make tasty and sharable starts. Some of Derek's' specialty entrée dishes include the voodoo crawfish linguini with creole tomato sauce, the Ashley Farms chicken with bacon braised collards and roasted tomato bread pudding and the cornmeal crusted red snapper with remoulade, dirty rice and watercress, all of which are crafted with local ingredients. Derek's' homemade desserts are just as comforting and outrageous as the entrées, including the bread pudding beignet stuffed with banana custard or the dark and stormy trifle with ginger curd, caramelized pineapple and coconut crumble.
