CUT is spectacular. The service was excellent. The staff was excellent, very friendly and attentive. The food was delicious. The steaks were cooked and seasoned perfectly. The side dishes are large enough for 2-3 people to share. We ordered the creamed spinach wit fried egg, very decadent. CUT is worth the price for the quality of service and food you receive.

Impeccable touches from being sat at the table to dessert. If you want the highest end food, search no more. We had wine, tuna cones, shrimp dinner with jasmine rice, American waygu filet, carrots and the cherry Black Forest dessert. Everything was amazing and enjoyable for our two hour leisure dinner and the dessert was in the top five desserts we’ve had in our life and we’re foodies. We had reservations elsewhere that night and I was reading the reviews and I knew to drop them and make Cut the dinner choice- always go with your gut feeling- glad we went the Cut.

We came here for our honeymoon and were treated fantastically. The steak was phenomenal along with all of the recommended pairings. The oysters with our champagne were fabulous and fresh. They were courteous enough to bring a peanut butter and chocolate dessert that was one of the best we ever had. Bravo!

Would highly recommend the Cut for great food and ambience. The staff were friendly and knowledgeable. The bar was beautiful to look at. The meal was exquisite.

The service was amazing, even during COVID-19. Everyone from the hostess to our waiters were friendly and never snooty. Our water glasses were never empty. Social distancing was clearly in place with the separated tables, all staff wearing face masks, and even wearing gloves when placing our silverware and dishes in front of us. The food was delicious and we especially loved the Japanese smoked brisket sandwich. The meat was especially tender and had its own unique flavor with the smokiness combined with the pickling flavors of a corned beef or pastrami. It's the best brisket we've had outside of Texas. We were celebrating a birthday and the staff wrote a birthday card and provided a complimentary dessert. The dessert was so yummy and interesting flavor-wise and texture-wise. We definitely plan to come back in the future.

I got to surprise my girlfriend with a wonderful birthday dinner that we never got to celebrate because of quarantine. The food was delicious, service was wonderful with great suggestions, and a little slice of delicious cheesecake to top it all off!

Extraordinarily overpriced. Underwhelming in every respect. As a solo diner I was ignored by wait staff. When they got around to seeing me the excuse was "covid." Sorry that doesn't "CUT" it. If you can't run a first class restaurant with these prices, you should have stayed shut down. Definitely not recommended.

We went to cut from a recommendation from a friend, and wow. Biggest letdown ever! Where do I start? Let’s see... we were sat in the bar area; literally the middle of the pretty loud bar area upon entering. No social distancing to be heard of, if you were wondering. Also, no romance. My wife and I were having dinner, clearly a date. So first, we had to ask for a new table. We were given a new table. The dining room was so bland and set up so you’re just staring directly at the people across from you. Made awkward eye contact way to make times to count.
But all of that aside, the food... was HORRIBLE. We both got the 9oz ribeye. $85. My wife, who never complains about steak being tough, literally had to spit a bite out- it was inedible- total gristle. Another bite of her steak had a big, bloody vein in it. It was one of the worst ribeyes she’s had in her life, an $11 ribeye from smiths is better. EVERYTHING is covered in salt. It’s “flavorful” because it’s straight salt. We ordered the mushrooms, also inedible- we didn’t touch them. Just straight soy sauce/salt. My steak was tough, but no pieces had to be spit out, and I didn’t get a bloody surprise so for that I am grateful. We ordered a salad with “avocado” and when I say there was ONE singular cube of avocado in the salad, that’s no exaggeration. The dressing was good, but not the salad we were expecting. We also ordered the Mac and cheese, and it was the only part of the experience either of us enjoyed.

Service was slow, and although the server cleared away a dish full of mushrooms and my wife’s plate with spit out steak and a piece of bloody vein steak on it, didn’t bother to ask how everything was. In fact, just disappeared and had us waiting for the check for WAY longer then necessary. So, in all- we spent $400 on literally the WORST steak ever, salty food, and sub par service. 10/10 would not recommend to anyone, EVER.

Walk 5 steps further and eat at Delmonico.

We celebrated our 35th wedding anniversary at CUT. Great experience. The one thing that stood out was the service. Very professional, friendly and courteous. The food was very good, a bit pricey, but that's Vegas, right? We loved the atmosphere even though it was slow because of the Covid pandemic. We will visit CUT again in the near future! Nice job, Wolfgang!!

The staff was great from start to finish. We frequent a lot of high end steakhouses on the West coast and Cut would be in my top 10. My only complaint is my wife’s filet cane out charred black. Now she likes her steak well done with no pink at all (which makes me cry btw ;) so getting it cooked right isn’t the easiest thing in the world but at $90 they should know charcoal black isn’t tasty. But they took it back and made her another which was perfect so it’s hard to complain. Seasoning and taste were spot on to our liking. We’ll definitely go back again!

Went to the Venetian for a birthday staycation and tried CUT for dinner. Overall food and service were good and to be expected from an upscale restaurant. I was not "wowed" but still enjoyed the dinner and evening.

If you want top notch steaks, this is the place for you. I had the 2nd cheapest cut on the menu and it was outstanding. If I was dining with someone, I would have certainly tried a special cut like one of the wagyu options, but I couldn't justify spending over $100 for just a steak for 1.
