From history to the table, from the sea to the kitchen. A family story, made of traditions and a love for fish. Eleven years ago, Stefano moved from his historic restaurant in Formia to Rome, first to Piazza Barberini, then to Porta Pia, with the aim of bringing the sea to the city. His knowledge of the daily catch, which comes from his family's fishmonger on the Pontine coast, has made Chinappi restaurant one of the capital's benchmarks for "good fish." The spirit of the place is manifested in the immediacy of rediscovered flavors, in pairings dictated by tradition, and in the difficult endeavor of making cuisine something simple and genuine.
