House of Raha in Fremont has figured out the trick most Indo-Chinese spots miss: crisp that survives the sauce. 🐉 The Dragon Paneer showed up glossy and deep red, each cube fried hard enough to hold a crackle even after it soaked in that sweet-spicy chili garlic glaze. The peppers still had snap, the paneer stayed soft in the middle, and the heat built slowly instead of hitting you on the first bite. It is the kind of dish you keep reaching for while telling yourself you'll stop after one more piece. The veggie noodles were the smart counterweight. 🍜 Wok-tossed, lightly smoky, and not drowning in oil the way these usually are, they gave the meal a calmer base to come back to between the spice hits. On their own they are comforting and clean. Next to the Dragon Paneer they turn into the perfect landing pad, catching the extra glaze and stretching every bite a little further. Put together, it is a genuinely well-built plate of food. 🌶️ The room is warm and unhurried, the presentation sits a notch above what the price tag suggests, and the kitchen clearly cares about texture, not just flavor. I came in for a quick bite and left already planning the next visit around these two.
