Se vi state chiedendo perché questo nome per un ristorante, provate a pensare a quando siete rimasti senza fiato di fronte a qualcosa di bello. Questa è l’"apnea" di cui parliamo e che scriviamo UPNEA, fiducioso incontro tra l’inglese "UP" e la radice latina "NEA" della Neapolis in cui viviamo e a cui auguriamo una continua ascesa. Salumeria invece è un ricordo romantico di quando eravamo molto giovani e, per noi, mangiare fuori, significava andarsi a fare un panino alla salumeria vicino casa, che diventava ai nostri occhi, il migliore tra i “ristoranti”
