Ceviche Project is a Los Angeles-based restaurant that Octavio Olivas designed, built, and opened in April of 2019. At the neighborhood ceviche bar, cevicheros (including Octavio himself) prepare bespoke ceviches, tiraditos, tostadas, and all manner of raw bar specialties, made-to-order and enjoyed alongside artisanal Mexican beer, a curated list of natural wine, and house-made sake cocktails.Prior to opening as a brick and mortar restaurant, Ceviche Project operated as a culinary and cultural pop-up restaurant in venues across the U.S. and Mexico since 2011. At Ceviche Project gatherings, guests eat, drink, converse, laugh, dance, learn, and engage as Octavio creates, hosts, serves, and shares stories about the origin and inspiration of his dishes: all against the backdrop of his own vintage Cumbia and Calypso soundtrack.
