The restaurant is a credit to the community and a great showcase of the culinary talent in the Rio Grande Valley. The ownership team is very engaged in the day to day operations of the business and it shows in the quality of the product and service levels. As Director of the new Hospitality and Tourism Management program at UTRGV this a great place for students to train and guests visiting the Valley. As someone who has been in the Hospitality Business for over 40 years and traveled extensively, I am very comfortable endorsing this restaurant. Our dinner date at the Republic of the Rio Grande Valley was a wonderful experience. I made a reservation for my girlfriend's birthday on Tuesday, March 19th. The ambience, meals and drinks were incredible. Our server Zack was also very attentive, offered suggestions and went out of his way to provide an excellent service.
