The Copper Grouse serves regionally-inspired, soulful dishes from the kitchen. Not to be missed, our beverage program of classic cocktails, artisanal spirits, Vermont craft beers and a wide selection of Wines from regions spanning the globe. Reservations are required for all dinning and all meal periods. Last dinner seating on Fridays and Saturdays is 9:00pm.
In accordance with our governor's Covid-19 mandates, all guests are required to be out of the restaurant at 10pm. We apologize for any inconvenience that this may cause, as we strictly adhere to the 10pm mandate. Thank you!

Had a great meal with great service, had apps and entree all food was prepared wonderfully with great flavor combinations. Service was fast and efficient. Specialty cocktails were also very delicious. Great experience, it is a bit pricey but definitely worth it.

The Copper grouse was a wonderful experience. Started with the cheese board as we were quite hungry from a day of skiing. Followed by a Winter Green salad and then the seafood rice bowl. My husband had the salmon. My husband and I shared the starters. Everything we were served was absolutely delicious. We enjoyed our meal with draught porters. We had the bread pudding for dessert, again a share, which was the perfect ending. Our server was very attentive. The ambiance is lovely. Although we did not stay in the Taconic hotel, where the restaurant is located, we like what we saw and definitely plan to stay there in the future. I would highly recommend this restaurant.

Love the atmosphere here and food overall is very good, cocktails are great. I got the Wagyu burger and probably wouldn't recommend this over the regular burger for the price, but that may just be a preference.

It makes sense that this restaurant has fallen from top ranked to #13. We come to Vermont frequently and used to love this restaurant. Not any more. I will never return. We went this evening and had terrible food. The poke bowl had unripe avocados. The scallops were off and their delicious skillet baked Mac and cheese had been reduced to the equivalent of boxed Annie’s. This is in the adult menu — not the kids menu! We sent back the $15 gross Mac and cheese because it was inedible. No one asked if we’d like anything else or if they could do anything for us. Instead they charged us for it and then the manager fought with us about taking the charge off the bill. Yes - actually fought with us. Not only is their food sub par but their customer service is terrible. There are many great restaurants in the area who are happy to serve. Apparently customer service and satisfaction doesn’t matter to the Copper Grouse. We will take our business elsewhere and suggest you do the same if you care about how you are treated.

Very streamlined process for a busy holiday weekend and felt very safe at hotel/resturant.
The menu is excellent; our server has been there for awhile and that is a marker for me. We sat down and things were in motion with drinks, appetizers and dinners served perfectly. Food was hot and delicious. Can't wait to return. High top table was great.

From the menu, website and reviews, and price points we thought this would be an excellent spot to enjoy valentines day dinner. We booked an 8:30 PM seating thinking we could take our time after the big rush from 6-7, we were wrong. VT law states you must be cleared out of the restaurant by 10 pm on the dot. We were incredibly rushed to the point it was not enjoyable, overall the service was fine. We also were met inside with screaming children which is fine but don't advertise yourself as swanky. The noise level was moderate because the room is wide open so everyone is looking at each other rather then dividing the room up with nooks or false walls. The food was very good. Quality was on point. The drink creations were nice as well. Food was ok but they should discount their prices by 10-15% until their ambiance can be brought up to par.

We apologize that we could not provided you the desired dining experience with numerous families present in the restaurant. They can’t figure out medium rare, medium and well done. My wife asked for a filet medium, it came out rare. I got a $28 Hamburger, ordered Medium rare- it was charred, well done. Food was meh. Beautiful spot though

As always, the quality of the food and great new creative cocktails were exceptional. The ambiance was so appropriately created, great designer. I wouldn't mind if the small menu was expanded (just add a couple more selections). This is my go to place when I have out of town visitors. Glad CG has come to town and upped the bar !!! THNX :)

No Happy Hour and wine per glass was expensive. Shared a fondue for dinner which came with a small amount of items for dipping. Everything was gone including the 4 slice small baguette. We still had a good amount of cheese we didn’t want to waste and asked for more bread. They provided that 4 slice baguette for an additional $2 and didn’t tell us of the upcharge. Really! That’s bad business

Food is delicious and staff was very freindly. 2 of the 3 times we went there was an entree forgotten or one of the entrees came out 10 minutes after the others. Possibly just two unlucky mix-ups. Would recommend.

waiter thought it helpful to loudly check in 10 times, interrupting our conversation frequently, very odd as well as annoying. our salads were great, my dinner was so bad i could not eat it, it was not at all as described. another waiter stopped by to say another customer thought it was awful as well. all they offered was to buy my salad. i've been a high-end restaurateur in manhattan, their concept of hospitality is appalling-- the $20 difference in not refunding the meal has never happened to me anywhere in any state any country in the world, tho I don't recall ever being unable to eat a meal. I eat out 150+ times/year. bad.news.

Dinner was disappointing and service, too. Steaks were fatty, Ceaser salad too pasty. Salmon portion was a cheap end cut. Mussels were raw and not eaten. Waiter didn’t even ask why. And, what really annoyed me, waiter talked me into a raspberry cocktail when I wanted a cosmo not Hawaiian Punch I didn’t drink it and he didn’t even notice or care. Eat at Marsh Tavern for a real meal worth the $. .
The restaurant was beautiful. We felt very safe, and the staff and restaurant itself felt very clean and comfortable. It was the first time we have eaten inside a restaurant since March.
Unfortunately we didn't bring our cell phones as we were celebrating a special occasion and wanted to be present, this meant we were not able to look at a cocktail list. I would have loved to be alerted and we would have brought at least one phone.
The apps were amazing. Fresh and delicious.
The venison was definitely over cooked, and my burger was charred. I do like it well done, but for that kind of class and price I really expected them to be able to pull off a well done burger without burning it.
In the end our very nice waitress had a problem with my card. We used another and checked when we got back to the room. My card had been charged twice, along with my partner's card. Totally hundreds of dollars now pending and on hold in my account, while there had been plenty to begin with. I am sure it was some kind of tech error but it certainly complicated things and 2 days later the money is still not yet back in my account.

My husband and I are staying at the Taconic Hotel for New Years and dined at the Copper Grouse. The food was great - we loved the Brussels sprouts and butternut squash soup appetizers and the salmon and wagyu burger for our dinners. Everything was cooked perfectly and service was great too!

The bathroom inside the hotel room was freezing there was no heat in it we were told to leave the door open so the heat could go in. the restaurant was filthy! we saw food on the floor and fingerprints all over the counter where we were sitting at our table eating breakfast. The male host who seemed to be the manager at the restaurant desk seemed to be very stressed, and not friendly or welcoming. This is a dog friendly hotel if you are not aware (we were not!)

We spend a significant amount of time cleaning the restaurant, however it seems we need to take a little more notice. Bummer about the heating issues, please direct those concerns to the hotel staff as restaurant staff does not have the training to fix mechanical issues in the rooms! We hope that it was resolved! Was prefix which we understand, however the choices were very poor, not a single chicken dish, we have a guest with severe sea food allergies and not a single concession was made. ,,,they just said you can order the steak and lobster dish and we will just serve you the small piece of steak. Just a terrible main course menu. We are very frequent guests 1-2 twice per week and it will be some time when we do if ever come back
We had such an amazing meal. Every single item was perfectly done. We were pleasantly surprised considering we hadn't had much of a positive experience with our trip thus far. Next time we visit we will be staying at the Taconic and eating at Copper Grouse. Kudos to the servers, host and manager for being friendly, attentive and interested in our experience.
