Cobalt Restaurant and Lounge - Vero Beach Hotel and Spa Ratings and Reviews
Four of us went to Cobalt last Saturday to celebrate our anniversaries. We were able to make a reservation, which is reassuring when you don't know how busy a restaurant might be. We were able to sit outside and enjoy a cocktail before heading inside to order. We each ordered something different and each entry was equally delicious. The waiter was very attentive, but not overly so. He paid attention to when we might be ready for more drinks, etc. The overall experience was great and I would definitely recommend Cobalt.
Went here for my boyfriend's birthday and they did an excellent job. The food was phenomenal and the staff was extremely knowledgeable.
Good Tip: If you stay at the Vero Beach & Spa hotel and join the Karma rewards system they offer you half off bottle of wine at the Cobalt restaurant (up to $100 value) once you log in to the WiFi.
Not living in the area we based our choice of Cobalt on diner reviews, so glad we went there! The location was lovely with beautiful views of ocean and as the sun set the interior of the restaurant was lit perfectly. Our meals were excellent; the calamari with lemon herb aioli, the short ribs and the broiled sea bass were perfection.
The only complaint was that our table was next to the wait station/kitchen and that was distracting and a bit noisy. Next time we will request a table near the window or a booth.

Our evening and dining experience were wonderful! We were greeted promptly and given a choice of two tables both of which were lovely. It was obvious that the hostess had read our request from OpenTable. Our server first greeted us by wishing us a happy anniversary and offering a choice of champagne or dessert . The champagne was great! We both ordered the sea bass which was prepared to perfection with a beautiful presentation! We will return and will recommend dining at Cobalt. We often lunch casually there outside by the ocean. That's always enjoyable but dining is a treat!
We went for my Mom"s 70th Birthday. My Mom did not want special attention so I did not set anything up when I made the reservation. However, when deserts were ordered I mentioned to our waitress and she was kind enough to put candle in my Moms desert and also gave to us on the house. Somethings small but was greatly appreciated!!
The restaurant is part of the hotel and quite enjoyable. A quick walk downstairs and into a wonderful dining experience with an ocean view. Our waiter was attentive but not over bearing and offered great suggestions. The food was incredible and not rushed. A relaxed, enjoyable evening.r
This was our second visit. We liked it so much the first time that we invited our friends to join us. Our dinners were superb. We shared a starter that was delicious. It was bacon wrapped dates. Then we had our dinners. My wife had the Artic Char, the friends both had the sea bass and I went with the Mahi. All were quite delicious. To top it off our waiter for both visits was Tom and he was excellent!
This was not our first time to the resort nor will it be our last. Excellent service. Knowledgeable waiter with Richard. Very professional. We did not feel rushed. The food was perfectly spaced. And the food was excellent! So many great things to choose from. Desert was perfect. The view was beautiful! Thanks.
We enjoyed returning to Cobalt for my wife's birthday. While everything was perfect, I think there could be a little more in the way of incredible selections that could set Cobalt apart from local competition. That being said, the outside tables that are directly on the ocean are very special indeed. So while I didn't give a 5 star rating because I always look to be blown away for 5 stars, rest assured that you will have a great time at Cobalt.
The staff is young, friendly and extremely knowledgeable. The restaurant's
manager Sean goes out of his way to add a personal touch and make you feel comfortable.
The scallops are moist, soft and flavorful cooked exactly as I like them. Sitting outside on a cool night is heaven. The crowd is low-key and you can actually talk to your guests at the table and they can hear you. Later in the evening a band comes and the sound may pick up a bit. Young and old alike on the dance floor having fun. Music was good! Made for a very nice night!!!
We went to Colbalt to celebrate my grandparents 50th wedding anniversary. Our server was very helpful and nice. He also kept our glasses filled and always made sure we were doing ok.
The food was REALLY good! The portion sizes were big, so we came home with a lot of leftovers. Everyone in our party really enjoyed their meal, and would definitely come back.
The views were spectacular! We really enjoyed eating and seeing the Atlantic Ocean at the same time. We really liked the fact that they had big windows and outdoor seating. The chairs were very deep and a bit hard to get in and out of. They really gave little but noticeable touches, and we would definitely comeback!
I had requested in the OpenTable special comments for a table being in a area that my wife and I could have a memorable experience. This was our Wedding Anniversary and we were staying at the Vero Beach Hotel and Spa. We checked in with the Cobalt Hostess at the time of our reservations and she walked us over to small 2x3 table with two chairs about 10'-0 away for the Hostess stand at the restaurant main entrance. I said to her, is this is our memorable experience table? She said that this was the best she could do. I then told her that we would rather wait for a better seating area. She said OK, I will let you know when I have another table and turned and walked away. After 20min or so, We did get a table by the door leading to the outside dinning area. At least it had a view of the Ocean and the table was larger. The server and food was good. Cobalt should think about hiring better trained customer friendly personnel greeting the guest and not over book so much. Forgot to mention. We went into the Bar area and set at a high top table to order a cocktail while waiting on the dinning table. We never got waited on before we the dinning table was ready.
My wife & I were planning dinner out with some out of town guests who had never visited Vero Beach.
I made a reservation at Cobalt which, based on past experience, promised to be an enjoyable experience. The ambiance and view were great as always, but the menu options were rather limited. After some discussion, everyone found something to order. The quality of thwas pedestrian at best and we were embarrassed at the rave reviews we had given the restaurant. I won't be in a hurry to return.
Great location for in door or outside dining (providing the wind is not blowing a stink off the ocean). Our waitress was also the bartender this visit so the service was sub par as the dining room filled up unexpectedly. The seats are very low so short people will have difficulty touching the floor once the booster seat is installer to be able to reach the table. Menu is limited and hasn't changed much in the past year so it not some where I as a local would frequent. The bar is nice and it is in a hotel so the clientele is very transient.
While the restaurant setting is beautiful and the food was good, our service while pleasant was very slow. Waitress appeared uninterested and had to be located twice. Other waiters would not step in but went to find her. She was patience with an elderly customer. We would try Cobalt again though I felt the overall experience was not as nice as our previous visits.
