The St. Regis Aspen Resort has partnered with FOOD & WINE Magazine to debut Chefs Club, an innovative new restaurant concept that will bring the FOOD & WINE pages to life through their signature Best New Chefs Awards, which honors the country’s most promising up-and-coming chefs. Chefs Club will select a group of FOOD & WINE's Best New Chefs to curate a unique menu of seasonally-inspired, American Regional cuisine for The St. Regis Aspen Resort. George Mendes (2011) of Aldea, New York, NY, James Lewis (2011) of Bettola, Birmingham, Alabama, Alex Seidel (2010) of Fruition, Denver, Colorado and Sue Zemanick (2008) of Gautreau's, New Orleans, Louisiana, were chosen to inaugurate the menu for the summer of 2012. Our current lineup consists of Bryant Ng from the Spice Table in Los Angeles, Viet Pham from Forage in Salt Lake City, Missy Robbins from New York City, and Jason Franey from Canlis in Seattle.

We started our evening with The Aspen Old Fashion at the bar and would highly recommend it the maple syrup adds a nice flavor without making this too sweet. Also the bar tender was fun and interactive. For our 1st course we had the Sweet Potatoes they were probably the best sweet potatoes I have ever had and closely resembled a meat dish with their full deep flavors. We shared the Chefs Club Salad that they split in back for us, always a nice touch. It was a nice salad, but not the headliner nor should it have been. For my main course I had the Maple Brined Heritage Pork Chop prepared medium per our waiters suggestion -I was a little nervous it wouldn’t be done enough for me, however it was cooked perfectly! The Seared Foie on top of it took it to a 10 out of 10 but even without it it as still a 9 out of 10. My husband had the Ras El Hanout Crusted Rack of Lamb it was incredibly lean also cooked to perfection and filled with flavors. For sides we just had the Charred Broccolini- simple but good. Finally for desert we had the Ox HAzelnut Brown butter Torte. It is flowerless and the house made honeycomb that comes along with it is very good. In all we left with nothing to complain about our service was great and our food was even better. The place is pretty expensive, but well worth it.

Amazing service and great scene. Loved the char and mushroom side. Mushroom soup and fried chicken were solidly good. Pork was tough and my dessert was subpar. For a supposedly top notch restaurant, I definitely expected more and spent enough to get more. Humph. Still had a great time and you can certainly be impressed on selective dishes. Definitely select.

Beautiful dining room - great service - food was below average at best. With all the choices in Aspen you can do better. Typical hotel restaurant experience. Over priced - nice presentation but the fried chicken was dark meat only and the gnocchi was glorified mac n cheese.

My boyfriend and I can't say enough about this experience! It was absolutely fantastic!!! The food was A-MAZING; try the Singapore King crab, just delicious!! The wine was utterly superb; and the Master Sommeiler, Jonathan, went above and beyond to make our evening perfection. We had a blast and definitely cannot wait to come back!! Thank you so much!!

I wanted to like this place. Honestly, i have had much better at much more reasonable prices. The apps and entrees were COLD. Flavorful, but cold. Service was exceptional, but I don't think this place will make it if they don't step it up and I mean by leaps and bounds. I have eaten at high-end restaurants and this one just falls short on the food quality measure. Sorry, but I was not impressed for the price paid. Would not and could not recommend to anyone.
