About Chefs Club Aspen - St. Regis Aspen
The St. Regis Aspen Resort has partnered with FOOD & WINE Magazine to debut Chefs Club, an innovative new restaurant concept that will bring the FOOD & WINE pages to life through their signature Best New Chefs Awards, which honors the country’s most promising up-and-coming chefs. Chefs Club will select a group of FOOD & WINE's Best New Chefs to curate a unique menu of seasonally-inspired, American Regional cuisine for The St. Regis Aspen Resort. George Mendes (2011) of Aldea, New York, NY, James Lewis (2011) of Bettola, Birmingham, Alabama, Alex Seidel (2010) of Fruition, Denver, Colorado and Sue Zemanick (2008) of Gautreau's, New Orleans, Louisiana, were chosen to inaugurate the menu for the summer of 2012. Our current lineup consists of Bryant Ng from the Spice Table in Los Angeles, Viet Pham from Forage in Salt Lake City, Missy Robbins from New York City, and Jason Franey from Canlis in Seattle.

Took my parents as a treat during their visit from out east. Best meal we've had in years. Chef Slossberg is a genius, and kept us in awe of his creations. The halibut! Wow! My mom was overwhelmed by the quality of the whole experience, and even my dad was thoroughly impressed with the food. That never happens! It was a very special experience that we won't soon forget.
Two had fish which was good.....other party member had Sirloin Steak which was so very chewy, it was borderline not edible and not worth the $70 price......you do not expect "chewy" and not digestible at that price as he kept having to remove from mouth and set aside.
Despite the fact that the St. Regis had booked the dining room for a private party for part of the night, the staff found a way to accommodate us at a slightly later time, the food arrived quickly and the dinner was superb. I highly recommend it.
We made our Theater destination on time afterwards.
My wife and I are definite foodies and we enjoy dining out often. We are most often very pleased with our restaurant selection, but Chef's Club Aspen is definitely more than a cut above; it is an outstanding dining experience in every way, and I didn't particularly like the fried chicken (a specialty, but something that I rarely order because I prefer greasy KFC - sorry🙄). We also sat at the bar counter facing the kitchen and had running conversations with the sous chef and other kitchen employees, which was great fun! And, oh yes . . . The food was outstanding! Highly recommended!!!
the portugese tasting menu was underwhelming, in consideration of the 2 featured chefs - dishes were not explained, casing on two of my rabbit sausage was nor removed, and flavors were missing; though the chef counter service was very pleasant, and the atmosphere was comfortably casual. the new york restaurant is far better - never misses a beat.
Requested a vegetarian meal for our party of 3 ahead of time when I made my reservations. There were a some vegetarian appetizers but no effort was made on their part to make any new vegetarian entrees but they call themselves Chefs Club!! I don't think I would go again. I visited some other great restaurants in Aspen for vegetarian meals where they did take time and made special effort to cook us a great meal at places like Bosq and Elements 47.
Fantastic as usual, this is our favorite restaurant in Aspen. Great bartenders making craft cocktails to start. Then into a elegant but comfortable dining room, the wine sommelier's are great and always suggest perfect wines. Wait staff attentive and nice, the food is outstanding and very creative. I think the experience is the best in Aspen! We will be back!
loved the decor -panda portraits were so cool - very hong kong street art style . chairs were comfy , tables were not on top of each other , wait staff were very nice and professional, knowledgeable about foods. meals were awesome - we had butternut squash soup with king crab (special app) , grilled octopus app, Artic Char entree , korean style pork entree and porkchop (special) all were cooked perfectly and flavorful. prices are on par with NYC portions were generous . this was our first taste of aspen and it did not disappoint!
High-end dining experience in every sense. Had a full 3-course meal and all 3 were fabulous. The roasted squash salad was incredible as was the caramel corn & chocolate mousse desert. My wife called the desert the best she has ever had in her life. Certainly not a "value" but it is Aspen so you are going to pay wherever you go, particularly for a restaurant in the St. Regis hotel.
Absolutely recommend sitting at the counter-top that overlooks the kitchen. Very comfortable and you get a front-row view of the kitchen. You can tell it is a well-run kitchen and you get to see how the chef organizes and runs things. A neat feature for a restaurant set-up to have rotating guest chefs that come in from all over the world.
