CHARCUT is an Italian Roast House run by co-chefs John Jackson and Connie DeSousa, who you might recognize from her appearances on Top Chef Canada, Top Chef All Stars and most recently, as the judge for the Food Network’s Fire Masters. Together, they are two of Canada’s most celebrated chefs. CHARCUT is celebrating its 12th year as the best destination restaurant in Calgary. It is a meat-centric and fresh pasta paradise with a custom-built rotisserie, smoker and char-broiler, featuring amazing cuts of Alberta beef, whole rotisserie chickens and house made bronze-die-cut pastas. The server did not clearly explain the content of the plates we chose. We had way too much to eat when more than enough was already present without having to get extras. A more expensive bill equals a bigger 20% gratuity. He worked for his pocket not for the customer. The filet mignon we had was over cooked. The Picanha was not tender at all. It is hard to figure how a restaurant that pretends to be a Steak House would serve something like that. Will not go back. Our Saltick experience just next door was outstanding.

Charcut used to be one of our all time favorites for lunch. However, this last visit was subpar. The chicken was quite dry, and there was far less of it on the sandwich. In addition, we found the fries were good but missing the umph they used to have. Like many restaurants downtown it seems they may have decided to start cutting corners on quality vs increasing prices.

This is the second time we’ve been in and tried the “fresh made” gluten free pasta. The pasta was very oily, oil pooling at the bottom of the dish, and the pasta on both occasions was so over cooked it was mush. The service was terrible with no care for many of the tables in our section as the staff (server and chef) were more interested in serving and entertaining one of the chefs sisters that had come in for her birthday.

I went for my birthday and was very warmly welcomed! I ordered the prime rib and it was FANTASTIC! My girlfriend ordered steak and it was good, but a bit bland. The service was amazing! There was only one washroom working which was a bit inconvenient but overall I would say 4.5/5. I love how many gluten free options there were. I’d have liked to see a bit more dairy free options but that’s a me problem haha. It was really good. We will definitely be going back!!

Great date night. Food was exceptional. We had the filet and prime rib and they were of high quality and cooked perfectly. I especially liked the herbed butter on the filet. It added so much flavour! We shared a cheesecake desert after - a bit sweet for me but I enjoyed what I had and my hubby didn’t leave a crumb and thoroughly enjoyed it.

Waiter was great Food was less than stellar. I ordered “slow cooked lamb shank”It was a piece of grey meat that was boiled in water. It came in a bowl with “broth” which was warm water with a two cherry tomatoes in it. overall Bland and disgusting. We, as a family were looking forward to coming to Calgary and enjoy a nice dinner at CharCut. Unfortunately, we were not pleased at all. And by the way, this is the first time I ever write a review. My daughter ordered a roasted chicken and she had to wait an unbelievable 90 minutes for it. You would expect, that these would be done by the time the restaurant opens or shortly after, so you can serve them to your guests in a timely manner. We like going out for dinner trying different restaurants and do that fairly frequently, but I do not remember that we ever waited for any food this long. It seemed that our waitress Nikki, who was very nice throughout, was quite embarrassed apologizing about the wait time at least 3-4 times, which was not her fault. Also, my son's spaghetti were so over-peppered, that he couldn't even finish them. My wife's steak and my fish were good though. In general, we just expected way more from a restaurant of your caliber considering you are supposed to be one of the best in Calgary, but that must have changed from 10 years ago. Please take this review as constructive criticism and put a little bit more effort into your business, especially for what you charge! We definitely won't be back.

The food was bland; the pasta had zero taste. It was nothing like expected of this caliber restaurant. The server was sweet, but had no clue of the menu. Service sub/par. This was not worth the price. We ended up with a horrible free dessert. Slab of brownie on peanut butter. As did the table beside us, also unhappy with their food. Go elsewhere!

When we arrived, in spite of having a 6:00pm reservation, they didn't have a table for us. They seated us in the hotel lounge on uncomfortable stools and told us we could have dinner there. After asking the hostesses twice to please find us a table in the restaurant (and them not being able to explain what happened to our reserved table), the manager came and apologized and took us to a table. From there the experience was great, but had we not put up a bit of a stink and gotten to the manager, we'd have been out in the lounge with aching backs :-). Food was great. Not the best ever, but very good.

Food is always fresh and great. My husband had the burger which was absolutely AMAZING😋 My Caesar salad with chicken was delicious. Maybe just a bit more dressing??? But a favourite for sure. This is our first stop when we’re in Calgary. We love it here!!!

Great service, but the lunch menu is looking more like a sandwich shop, rather than a high end restaurant. We had the butcher's steak for $31. Their fryer died and there were NO other suitable sides offered as a pairing with the meat. On top of that, the lunch steak was undercooked, tough and full of connective tissue. So eating raw, chewy meat without a side was not ideal to say the least. On top of that the person who delivered the news about the broker fryer was condescending and unapologetic "Our fryer broker, deal with it!" in a net shell. I would avoid this restaurant for a while!
