I was surprised that at such a high end hotel, the restaurant would be so poor. Our server was lovely and helpful. However the food was sub par. The salad lacked flavor, the appetizers were poorly prepared and tasteless. They ran out of the special fish of the day so I tried the seafood pasta which tasted like paste and was inedible. The Osso bucco was also bland and over cooked. We skipped dessert as we were anxious to leave. Overall, not worth trying.
We were well served by the host and the waiter. His knowledge of the wine list and menu was impressive and the timing of everything was spot on. An excellent evening.
The waitress was amazing. I cannot say enough about how sweet she was. :-)
The pasta wasn’t fresh handmade and the Alfredo dish wasn’t very presentable nor was it great. I could have gotten a better plate of pasta from Boston pizza for half the price and twice the portion. Drink service was very slow for what seemed like an average night wasn’t overly busy

Amazing food with exceptional, attentive service as always! Paula and Jody are personable, fun-loving and professional . The arancini and zuppa di pesce with halibut, clams and mussels made a perfect dinner. Tiramisu like no other. Remarkable dinner and our guests also loved it. Great wine list and menu to suit any palate. A pleasure to be back and will return often! Compliments to the chef and staff :)

We visit Banff annually for skiing. The trip coincides with my partner's birthday.
We have eaten in Castellos for the majority of our 15 years of visits to Banff.
Four years ago the food was unimaginative and very average.
We ate in the the Bow Valley grill for two visits and it was very good. We tried the
Chop house and found the service "laboured" but the food was fine.
Going back to the Castello last year we had such poor service, ticket for the main course
presumably lost in the kitchen, that we complained and left and to the credit of the staff, were not charged for the food and wine consumed although we offered to pay for what we had eaten and drunk.
This year, Castellos was fine. We are intending to try your new restaurant next year.
To put some context in our visits.
We always visit Banff, as the resorts and facilities of the town are first rate. It is a "proper town", as opposed to other resorts in Europe and the USA that are "ski / bar resorts".
The highlight of the visit for my partner, is a turn round your premises, a little shopping, cocktails in the Rundle lounge and dinner.
Nice restaurant with friendly staff/manager. Beginning and end of meal were great...the bread with roasted garlic is fresh and tasty, the tiramisu cake for dessert was delicious! In between...the Caesar salad was a little dry (not well tossed) and the seafood pasta was just ok --lacking in flavour other than too much hot peppers. None-the-less, still a good time.
We have been to this restaurant many years and each year it appears to go downhill. It was like attending a cafeteria now with the new lighting. When it first opened many many moons ago it was romantic and high end.
The waitress seemed to have a bit of an attitude that one of our guests was a sommelier and asked why some wines were marked up 580% and others were 120%. He made some suggestions on wine from the glass and said choices were poor at best. She just scoffed and said shes not a sommelier and therefore didn't care. No one ordered wine. We just shook our head at the disappearing waitress. There was 4 tables and we knew why. We had to have people modify meals due to allergies and she said there was absolutely no button mushrooms in the hotel and it had to be oyster or a mix of them. I know that Fairmont takes pride in this and there other restaurants are more than happy to accomodate. The meat in the pasta was like cut up sandwich meat. No one liked their meals. One guest said the pasta was mushy and the waitress said we don't make our own it comes out of a box. yes it tasted kraft dinner like, thanks for confirming. She then said do you guys want any dessert, our new chef is willing to make you mushy macaroni. She thought that was incredibly funny. We just looked at her. For the price and what we used to have, this place is a great place to take kids for mushy spaghetti, not a high end meal. Find anywhere else to go in the Springs. Eating here is a disappointment.
I had the Lamb Shank and can say with complete honesty that it was one of the best meals I've had in years. The bean purée brought a remarkable creaminess to the perfectly medium rare lamb, alongside wonderfully seasoned, crunchy artichokes. The California wine that our server Jody recommended brought a whole other amazing dimension to the flavour. Just spectacular. Highly, highly recommended if you want a FINE dining experience, you know?

The food was very good food but, very expensive. The entree special was $49.00. Even simple pasta dishes were close to $40.00.

the most disgusting meal we ever had in Banff. Disgusting. Terrible service and freezing cold. They actually hand out blankets. What a pathetic excuse for a restaurant in the Banff Springs Hotel. Never again.
Convenient if staying at Fairmont. Salad was delicious. Dinner was okay.
It was very cold outside and the old building got a little cold inside.
Coats and jackets were required. Thank goodness it is not that cold very often.
Very disappointed with this restaurant. Looked like I was in my granny’s conservatory and it was freezing cold. People were sitting with their coats on and going back to the room to get jumpers. The waiter was nice enough but the food was just ok not amazing. I definitely wouldn’t return.

Overall everything was very good other than the pasta. The bread with garlic was excellent. The service was great. We ordered two pasta dishes and we expected much better. The pasta wasn't terrible but sorry, I wouldn't go back again.
Food is good tasting but not very original. Portion is just right. Price is high even for Banff.
Castello's has been a very good Italian restaurant for many years. Before this trip we visited in 2015. Improvements have made since our last visit and everyone can be assured of a great meal in a 1st class resort restaurant.

It was affordably priced for the Banff Springs hotel. I ordered the ricotta lasagna. It was very good at first, and then I got used to it because there wasn't much variety on my plate . The side was some green leafy vegetable that was bitter. My aunt got the same dish and she liked it. My aunt liked the greens better when she added the balsamic vinaigrette on it. She thought it was plain without this. I tasted the squid appetizer. It was good, but tasted salty, so I probably couldn't endure a whole plate of it although a junk food fan I came with could . It is a sharing size.
Pasta not made on-site and nothing special. Steak was good.
The evening was delightful and Jody provided exceptional service!
From the moment we walked in until the very end, the service and food was impeccable. You will not be disappointed.
Our dinner at Castello was amazing. I told our server that my meal of Pasta with clams was as good if not better than in Italy and I have been trying to duplicate my Italy meals! Our server told the chef who kindly gave me written directions for the dish! That's what I call above and beyond!!!
