Service was on an entire new level, our two wait staff were out of this world!! Oh, and the food — there was not one thing that was not enjoyed by all. We ordered family style per course and left with full bellies. Stands up to the original in NYC without a doubt! Couldn’t recommend this place more for any Italian food lover.
Generally considered by many the best restaurant in Las Vegas, CARBONE is never a disappointment even when the slot machines are tight and the dice roll the wrong way. Always ask for Sal, long-time established server who will add greatly to your evening's experience. It doesn't get much better than that.
Absolutely excellent all the way
Service was terrible. Food is not 'Italian'. We were there an hour and still did not have our appetizers, I should mention it wasnt very busy. Will not be returning.
Outstanding menu and service! However... the background music level was loud and the temperature inside the restaurant was cooler than was expecting. My guest and I were glad we wore blazers to mask the thermostat temp.
We had an incredible birthday dinner. Our "captain", Troy, was one of the very best waiters I've ever had at any restaurant. The food, service, and ambiance made for a perfect evening.
Great staff, great food, and great decor. Absolutely loved it again. Came here before and wanted to try new things. Definitely save your appetite for desserts!

I need to breakdown my experience by food, atmosphere and finally service. First, the food was outstanding. Family style is the way to go, but be careful how much you order. We had a party of 6 and ordered an appetizer (which we never got – I’ll cover that in service) 2 salads, 3 pasta dishes and 3 entrees. This was way too much food but the left overs were great the next day. Second, atmosphere, was really lacking kind of felt like we were in a big room with the table and booths just thrown about haphazardly. It didn’t really add any thing to the overall dining experience. Finally service – all I can say is obnoxious, overbearing and inattentive – forgot to place the appetizer order. Ordered several glasses of wine and couple of cocktails. Got the wine immediately and my guests had to wait ~ 5min until the cocktails were delivered, so everyone just look at each other waiting. Overall not going back, better options.
Always a favorite for us. Never disappointing. Service is amazing and the food outstanding.

Having just returned from a one-month stay in Italy, the food at Carbone was just as good, if not better than many of the places we stayed.
Our table shared the Veal Marsala, the Rigatoni alla Vodka, Veal Parmigiana and Chicken Cacciatore. Every single dish was to-die for. The chicken was so moist and tender and flavorful. The rigatoni was handmade and perfectly cooked, with a tangy, delicious sauce. The veal parmigiana came with the bone (detached) and begged to be picked up and eaten—the whole dish was perfection. The veal Marsala also came with the bone and was unlike any Marsala that I’ve ever tried. It was simply amazing.
Prices are quite expensive, but the food (and service) is so good that it’s well worth it.

We ate at the Blueribbon @ the Cosmopolitan 11/6, Carbone @ Aria 11/7 and Rivea @ MGM Delano. At all 3 restaurants at all 3 restaurants dinner was about $85 per person. At Carbone we split a salad, pasta and veal. It was very good. The wine selections were disappointing at $25-28 per glass. Always check your bill - I had to instruct our waiter at Carbone to revise our bill as the Visa charge was registered $140 more than the itemized bill. The was little sign of remote for the error. Though I enjoyed Carbone the value was much lower than at the spectacular Rivea @ Delano.
Carbone had always been my go to when I am in Vegas. Sadly, this time was a total disappointment. We were a party of 6 celebrating a big birthday and our reservation was made months in advance. Even though the restaurant was completely empty because we arrived at 5:30, they sat us in their noisy bar instead of their beautiful dining room. They said that the main restaurant was totally booked and I needed to request that room when making the reservation. That is absolutely ridiculous! The manager Robert was very rude and the service was lousy. The food is delicious, but I won't be going back anytime soon.

Server was very "take it or leave it" casual. Food was good, but i guess it was extremely hyped by my friends who had visited recently?
I did enjoy the experience quite a bit, but I was slightly disappointed.

The place was fantastic. Service always there but never rushed. Menu suggestions were right on the money. Music soundtrack was perfect, almost didn’t want to leave. Would go back right now.

Fantastic dining experience from the moment you walk through the doors. The ambiance, the staff and the food!!! Of course some of my favorites are the ceasar salad made table side with the most irresistible croutons you have ever had and Veal Parmesan !! You owe it to yourself to experience Carbone!!..

Fantastic experience. Every dish was amazing (prosciutto & mozzarella, gemelli pasta, spicy rigatoni vodka, and veal Parm). Drinks were great as well. Second time I’ve been here.

The finest dining my husband and I have ever experienced. Everything we ate was the absolute best- starting from the tableside made Caesar salad with the most delicious croutons. Next we shared veal parmigiana and spicy rigatoni vodka- exquisite. For dessert we had bananas foster again made tableside. The service matched the food. The noise level was a bit loud but nothing could ruin a perfect evening. Although the prices may seem high,you are getting terrific value for money.
Well lets talk about our forth visit to this restaurant these past two years. Service was slow with no cheese delivered, no bread and no lemon asked with the water. Every couple or group should be paid attention to. The food is excellent but that is only half of the equation.
This is possibly the best Italian restaurant in Las Vegas. Perfectly prepared authentic home-cooked style cuisine. Inviting old-school ambiance featuring comfortable, intimate high backed leather booths, beautiful lighting. Nice music playing in the background - Frank Sinatra etc. Very friendly, attentive wait staff who are knowledgeable and happy to describe any menu item in detail. We started off with perfectly executed classic martinis and an array of breads & complimentary antipasti veggies. We had the chopped salad (fantastic dressing!), lobster ravioli (house made, to die for), and the AMAZING veal parm. Just perfection! This was our 2nd time there and we definitely will be back... that's amore!
