Would not schedule a business dinner here again... the server might have been on there first night.... we were left with hungry guests and the last people in the place.... I was embarrassed in front of out of the country guests... the bar has always been good ... but the dining experience was nothing to write home about
This steakhouse is mediocre at best. It feels like a chain restaurant. The server wasn't able to answer our questions and immediately sent over the GM. He was wonderful and very attentive. The server was nice enough, just not trained regarding the menu. The fried calamari was supposed to have a glaze, but it was doused in a sauce. We had to get another order without the glaze. Order it on the side, if you order it. The BLT salad with blue cheese had a dressing that seemed watered down and had very little flavor. Definitely not what you would expect from a steakhouse . The cowboy ribeyes were a sorry sight. I was expecting a thick, juicy cut of beef with a nice bone. They were 18 oz ribeyes that were barely an inch thick. There was not a good char on them either. A ribeye needs a good char. They were cooked to temperature at medium rare. The french fries had a seasoned coating on them and still were mediocre. My daughter and I split the steak and had skinny fries and steak fries-neither were up to snuff. The wild mushrooms side, however was very good. We had concerns when we arrived and the prices were relatively inexpensive for Park City. Save your money and eat somewhere else. Or spend more money and get a quality steak at a real steak house. Being foodies, we would rather spend more and have a delicious dining experience. Waste of calories and money.
Mediocre steak house in desperate need of refurbishing. Good for large, loud families.

Better off finding a burger somewhere than a steak here. Both by buddies' NYStrips were overcooked and had to go back for a do over since medium rare came out med-well. Steaks lacked in flavor and they tried to make up for it by an exorbitant amount of butter. Steaks must have come from the local grocer. Outback has a better steak and i hate Outback.
My filet could have been better. I expected a better grade of meat.
The prime was amazing! Everything about our dinner was perfect from the service to the food.
Busy steakhouse with the appearance of being a nice place but just a bustling tourist spot with poorly trained staff and poorly cooked food. OK if you are starving - good luck getting the steak cooked the way you want it.

Great food and great service. Prime rib (16 oz) was perfect after skiing. We had a blast. Highly recommend reservations.
Very nice restaurant and popular on weekends. Saturday night was very crowded and people were being turned away. Service was very professional and friendly. Happy to see that everything wasn’t alacarte and sides were served with your choice of steak, etc. All steaks were cooked to our specifications. NY Strip, Filet Oscar and lamb chops weren’t the best we’ve ever eaten but were good. Some desserts come from a local bakery. Carrot cake was delicious and shouldn’t be missed.
Disappointing is all I can say. I scheduled this as a birthday celebration dinner through Open Table. That wasn't even acknowledged upon our arrival or by our waiter. It went downhill from there. I ordered a filet mignon prepared medium. When it came out I cut into it to find it was rare at best. I looked all over for our waiter while my friends ate their dinner. I couldn't find him. Finally I had to get another waiter to take it back to be cooked to the temperature I ordered. My friends nearly finished their meals before our waiter came by to ask about our meals. After my explanation he went to check and while he was away my steak was delivered. I cut into it again to find it was a little less rare, but still no where near medium. I ate a couple of bites around the edges and some of the baked potato. Finally our waiter came by and after I showed him it was still rare he said he would get someone. The manager came by and thankfully said he would comp the entrée and asked if he could prepare another. He even comped one of my friends meals which was totally unnecessary and not requested but appreciated. I told him no thanks to preparing a replacement steak. My friends were already done their meals and I wasn't going to make them wait now while the restaurant attempted to get it right for a third time. Instead I had them take away the dish. I struggle with a high end steakhouse not being able to cook a steak to the temperature that was ordered not once, but twice. We go to Park City for a ski trip every year. Needless to say we have no plans on visiting Butcher's again.
We really enjoyed our dinner here and thought the experience was great. The food is very good. The value for what we got was excellent and the service even better. We will be back. We got the Prime Rib, shrimp coctail, blue cheese stuffed dates wrapped in maple bacon, and the creme brule. The steak comes with sides and was delicious. I would have liked it a thousand times more if it had the traditional crusty salty/peppery outer layer, yet it was juicy and melt in your mouth tender. We really liked it and found a less expensive steak house to frequent. The restaurant is roomy inside and comfortable.
Steaks were served and we could not get the waiters attention to bring out steak knives. The service was very slow most of the night, and the waiters seemed like they had better things to be doing besides serving and no time for us, even though the restaurant was not incredibly busy. We were initially seated at a table that was rocking back and forth and not level, and had to be moved to another table.
The food was good, but the service was poor.
Not for vegetarians. They could be a bit more accommodating...
We come to PC every winter to ski and Butchers is a fave. I’ve always ordered the filet oscar and have never been disappointed. I’m sure we will be back in 2019
Was glad to get a reservation during the second week of Sundance and after a day of skiing this was just right. Service was great and knowledgable and the food was excellent. Only down mark was the lack of baked potatoes o n the menu which is somewhat surprising for a steakhouse. Only thing offered was mashed.
Otherwise, hightly recommend after a day of skiing.
My wife and I ate here on a whim for the first time while on a Park City “staycation” for Sundance since they were one of the only places with reservations left, and were pleasantly surprised. Our meals were delicious (both ordered filets with two sides each, after the tuna poke as an app), and we will definitely return!

Unfortunately I won't be going back again. The Manager did not seem to know how to appropriately handle a bad situation. The prime rib was actually tough and slightly cold. So disappointing when that is what you want. They replaced it with a rib eye steak. That would have been acceptable but, then they advised that there was an extra charge to get this replacement. ? Seriously you should not charge the difference in price when the first option was messed up. This also messed up the timing at the table with my guests meal and mine. To top this off we were celebrating my birthday. The finale' was that my last glass of wine was not the wine I ordered but, something substandard. Upon bringing this to the attention of the manager he argued with me and said that Utal law would not allow him to correct the problem and that I should have brought the problem up sooner. I would have, had he ever returned to the table. We had to go up the the front to get and pay our check. Never again.
Just flew in for the Sundance Festival and had a wonderful dinner. This is our fourth year here and every year we eat at least once or twice at Butcher's Chophouse.
I've had better steaks at buffet restaurants. The rib eye as very tough, wasn't cooked to the medium rare as ordered, and was very overpriced for this poor tasting chunk of meat. I also advised them in advance this was a birthday dinner, but there was no mention or observance of this by the wait staff.
I also had the most minuscule martini in my life. I realize the Utah rules are arcane but they could at lease serve the martini in a tiny glass instead of a large martini glass which magnified the meager amount of vodka in the martini. 1.5 ounces of vodka is all they can serve at a time.
Even during the crazy crowds of Sundance they were accommodating and attentive. We were 10 mins late due to traffic and they had our table in another 5 mins. All 3 of us had filet and we were pleased. Service was a bit stretched due to the crowds.... but, it was all fine as we were not in a hurry.... we simply wanted a quality meal then walk up to the action from the restaurant... will go again!
Located inside The Caledonian this is a decent establishment with good service. Nothing stood out about it. We booked it during Sundance Film Festival and it was one of the few venues available. I enjoyed the Tempura Green Beans. The preparation of the Prime Rib and Filet Minon was very good. The sides are included with meal vs. a la carte. That said, the sides needed more work, although the mashed potatoes were well prepared according to my wife. Nice location next to Park City's Town Lift. A good spot if you are by the window for people watching. Not a bad place to eat but also not a first choice. In downtown Park City this is a good place to unwind after a walk up and down Main Street.
For being a "chophouse", those were the worst two pieces of meat you could have served. The pork chop was way over done. I grew up not knowing what good pork chops were because my father over cooked them every time. I have since learned how to properly cook a chop and appreciate restaurants that can do the same. Butchers is not one of these places. There is not enough BBQ sauce, ketchup or poor taste cover up of your choice to hide how bad it is.
Then there was the New York Strip. We ate there 3 days ago and I am still chewing on that damn thing. The worst cut of meat I have ever been served in a restaurant that wasn't named Applebee's. Again, you are a chophouse. The one thing you should be doing well is producing fine cuts of meat, prepared to the customers preference. Although it did seem like they could at least cook a medium rare steak, I wouldn't have been able to tell them that because I was too busy chewing through the thick gristle that laced my $35 steak.
Your side salad was ok. The ranch that was served with it was great. Other than that, this place sucks. To anyone still reading, do yourself a favor, buy a $5 foot long from Subway everyday for the next 3 weeks straight and you will be more satisfied. Do this rather than spending the same amount of coin for an hour of torture in this place.
Our server was awesome, however the pastrami Rueben was horrible!!! If you're looking for a good pastrami rueben, this isn't it.
Excellent food & service. I was concerned that there would be a lack of service & quality due to how busy every restaurant is during Sundance! Great job Butcher’s!
