The colour of this Cognac is beautiful golden, the nose dominated with pastry notes - the palate a good structure, with a rather long final, some oak notes come through.
The first nose of black pepper and vanilla gives way to spicy, floral notes. On the palate: bittersweet, toasty, creamy flavor followed by hints of dark toffee and almond.
Oak and resin aroma with notes of vanilla, toasted almonds, citrus and bittersweet nougat. Full-bodied bouquet with overtones of caramel, then black tea, honey and ancient oak come to the fore.
It has a rich and complex aromatic palette: green pepper and fresh apple, spices, tobacco, roasted coffee beans, cocoa, and rancio combine to give a sumptuous bouquet.
An exceptional aromatic richness: at first old oak, roasted pear, with overtones of almond paste and then nougat and rancio come to the fore.
Tingly, fruity, burnt caramel and nut nose. A soft entry leads to sweetish light to medium-bodied palate with candied fruit notes.
Using grapes grown in the Petite Champagne and Fins Bois regions of France, Ansac VSOP is a premier Cognac that offers up an aromatic nose, balanced palate, and lengthily finish.
The VSOP is a balanced blend of eaux-de-vie from Petite Champagne and Fins Bois that has been aged in French Limousin casks between 5 and 7 years. It offers soft floral aromas and a light, fruit-forward palate with spicy vanilla notes appearing on the long, lively finish.
With a dark, golden color, it has an elegantly composed bouquet of spices dried fruit, flowers and a touch of citrus. Distinctive and strong, but not heavy with a fine concentration of tastes.
On the nose: Some rich aromas develop, nutty. On the palate: Smooth and a long final.
It presents a floral nose, with some noticeable sweet notes, such as vanilla and almond. The palate is fruity, mellow wood aromas, the finish is slightly sharp.

Similar on attack to the VSOP, but there's a slight increase in richness and the beginnings of some nutty qualities, and the latter half of it gets more complex, broadening out on the finish, leaving quite a complex grape fruity trail.

Notes of predominantely vanilla with a hint of liquorice and roundness of summer fruits especially ripe apricots and peaches. Finish is silky with a perfect balanced blend of ripeness.

Aroma with a lot of spice, we can definitely detect cinnamon, vanilla, fig and orange peel and traces of coffee. In the mouth it's intense, with a deceptively long finish. Without any doubt a single vintage masterpiece.
Bouquet of blue cheese-like racio, truffles, roasted chestnuts and prunes. The aroma stays firm and concentrated through 10 minutes of nosing. Satiny, smooth at palate entry, then at mid-palate the flavor profile turns semisweet, profound and pruny. Finishes gracefully.
Palate entry is light, sweet and grapy ripe. The midpalate is chewier in texture more honeyed in taste and fruit like. Finish is satiny smooth, sugary, piney, sweet and medium-long.
Bouquet and notes of crystallized fruit and nuts which appear in the stratified taste after first chords of mocha coffee and transfers to a prolonged fruit after-taste.
Palate entry is elegant and moderately sweet in an oaky way. Midpalate stage flavor is ripe pear, white grape, Oloroso sherry, dark honey and the finish is sugary sweet, satiny textured and long in the throat.

While the waiter was efficient, the restaurant was extremely short- staffed, with what looked like one waiter attending to all the tables; assisting him were busboys who had to refer all inquiries and requests to the waiter and only did the serving.
My wife and I were in NYC for a recital at Carnegie Hall. We had never eaten at Brasserie Cognac before, but we know it was close by and that it had a good reputation. We're glad we gave it a try, and we'll be back. We especially appreciate how our waiter managed to provide very good service, despite being seriously overworked (you need a second waiter in the southeast section when it's busy).
The restaurant should re do it’s billing system. Ok to tell us what the tip would be at 15 20 25% but the same amount showed up once we split the bill. If I hadn’t been paying attention we both would have given 20% or 40%!
The waiter showed me on the bottom of the bill that the amount was based on the total check and to split it. Put that language on the TOP of the split bill. So there would be no mistakes.
Food and service was excellent! Offered us cheese puffs on the house, accommodated substitutions, overall an amazing experience. Menu was great and would definitely come back to try some other items.
We dined at Brasserie Cognac post matinee and on the recommendation of friends. It serves basic but very well prepared dishes such that one might find in a Bistro or Brasserie in France. Each course was better than expected. I will go back.
Food was great, service absent. The waitress was literally absent. We had to flag down the waitress, or a busboy, for every single want or need. We were initially disappointed because very early, 7:30, on a cold winter Saturday evening they were out of beef bourguignon, the reason we chose this restaurant. Attempted to explain our disappointment with the service to the “manager” after the dinner, we were summarily dismissed. Will NEVER dine there again.
The appetizer of snails was excellent. The main dish paella had a lot of fish with a little rice. The spices were excellent. The wine was good.
I was very disappointed by the service. The staff looked a bit overwhelmed and not very attentive. It’s supposed to be a high scale restaurant and we didnt receive high quality service.
The food is very good, except for the blue cheese sauce hidden in the burger and not announced as part of the description. It kinda ruin your food if you don’t like blue cheese.
We went to Brasserie Cognac prior to the theater.
We very much enjoyed our dinner
The only comment concerning the food is that the paillard while generous was somewhat dry - a difficult dish I know to keep moist.
