The restaurant was very loud and the food was mediocre at best, I do not want to hear about the pandemic, you opened and it was not good.
Went with friends to celebrate three birthdays. My filet mignon was delicious and cooked to perfection. The only negative was the noise.

The service and food was excellent. One party was extremely loud. )They may have had too much to drink before dining.) We had to ask for the manager twice to see if he could quiet them down. When you spend over $1,000 for dinner, there is a certain expected ambience and, unfortunately, the noise level is a real issue here. The only other issue is that the tables are too small to accommodate side dishes that are separate from the main course meat/fish course. The waiter knew the menu and wine selection well. His service was excellent. The food was served warm and specifically as requested. The wine selection is small but well rounded with some excellent vintage choices.
Tables for two need more privacy. Too close together.

Each year we have a tradition to go to a very nice steakhouse for birthdays. We were a party of 4 and we were all disappointed in our steaks. They were not flavorful or seasoned well. I asked for a medium steak and mine was closer to a well done steak. Really dry and not a flavor profile I would expect for an 8oz $55 a piece fillet. The menus said that the steaks are basted in butter and then finished on a mesquite grill, mine was obviously over grilled. We recently had gone to Steak 44 and were blown away so we were expecting even more here since the prices are higher. The crispy Brussels Sprouts were wonderful and so was the baked potatoe side. The Mac and cheese had no flavor.

Service slow considering they were not busy. Food extremely expensive for the quality. Server was friendly but inattentive, she was serving too many tables.
Underwhelming from the beginning. From sitting under bright lights in a corner booth to rushed service and everything being way over sauced and salted. I couldn’t even eat the beat salad, it was more like a sauce soup with frise lettuce and bears in it. It was the fastest $270 meal in and out in one hour. Won’t return.

I ordered my steak to be medium and it came out rare. The place was very busy so I didn't return the steak to have it cooked.
Waitress really knowledgeable on menu and pairings. Steaks were all cooked perfectly on our table. Cuisine was delish. Great choices on desserts and fast service. Dark ambience so if you don’t like that, stay away. Highly recommend.
Lovely environment. I asked for, in the chef accommodated me, a foie gras appetizer which was not on the menu. Delicious. Interesting bar with perfectly made cocktails.

The food was average at best. At $125/head before we even had drinks, you would think that the food would be some of the best you ever had. In all honesty I've had better steaks at low end chains.

It is a beautiful restaurant and the service was excellent. The wine list was a little pretentious. Knew very few wines and decided to skip a bottle because of the high prices. My husband and I ordered glasses and were pleased.
Checking in for reservation was unfriendly and unprofessional. Had to wait for about 20 minutes past reservation time, no explantion was given just wait over there. When asking for clarification, they could not remember talking to us, 5 minutes prior. When finally seated it was in a corner of what appeared to be a secondary room, unimpressive furnishings for such a nice resort. Wait staff was attentive, although dinner service was very slow. Food was not of the quality expected for the reputation of the place.
This place has the potential to be great but just isn’t quite cutting it. I have to begin with the fact that we came here on Valentine’s Day so it was very busy, and very loud, to add they had the music turned up. They were quick to greet us at the table and grab a drink order but I could tell he was spread over a high volume of tables and wasn’t able to check in that often. For the occasion they offered a $105 valentines menu that came with 3 courses. If you wanted to start with anything other than a salad there were “supplemental” charges as well as supplemental charges for Waygu beef. Shared sides were set so you didn’t have choice on those. I started with the oysters which were good. We like waygu so we both ordered it (different cuts) and we’re told it would be medium and it came very rare. They were happy to forgo my $25 supplement but I have to admit I ate half of my wife’s $60 3oz cut in one bite so I didn’t even ask them to pull hers. The sides were good except the mashed potatoes and brown gravy tasted like they came straight from a can. I know this place is not a stand alone restaurant being connected to the Fairmont but we did feel a little out of place somewhat dressed up amongst people walking in in Tee shirts some shorts. I think this restaurant has its good points but for the price I could have dined at any high end steak house in town and had a much more positive experience in all aspects.

Had a wonderful experience for our 3 year anniversary at Bourbon Steak! Our waiter Logan was very knowledgeable of the menu, attentive and provided impeccable service. We started out with the seafood platter, absolutely divine with oysters, lobster and shrimp. The filet was cooked to perfection and the scallops melted in the mouth. The crab fried rice was the best side to pair with our entrees. Overall, beautiful ambiance and amazing food.
The service and food was outstanding, the atmosphere gets a bit loud around happy hour as expected. High quality on the food and everything was perfectly prepared. I ordered soup, hanger steak and a glass of wine and my bill with the tip was $93. I went expecting the bill to be about $50 a person since this is listed on Open Table as $30-$50 per person, was a bit sticker shocked that the lowest cost steak was $43 and all of the sides were alla carte. If you are financially prepared to pay closer to $90-$100/person, you will have a delicious meal.
Our food took over an hour to get, very expensive for quality of food.
We waited more than a half hour for our server to take our order. She came and took the orders for two tables near us who arrived after we did. They got their food and we were still waiting. No one ever came so we left. Terrible service!
Food was absolutely amazing! Granted it was a Friday night and the golf tournament was going on, however, the service was very slow....much slower than in my previous visits. Waiter was great, but just very slow. Tried to get a drink at the bar while we waited for out table...it took 20 minutes to have a bartender even to come over take the order, and then she forgot two of the three drinks ordered.
Aside from the slow service, the food was amazing and I'd return.
My wife and I had a night out. Enjoyed a glass of Pappy and steak. It was fabulous!
Both of our entrees were exceptional and the cheesecake dessert was amazing! Thank you to the chefs! We will definitely dine there in the future. We would love to try the patio next time.

The food was absolutely fantastic and the servers were very attentive. It was a bit on the expensive side — even when you consider the high quality food and experience.

Everything about my dinner experience here was amazing. The ambiance was perfect, the server was knowledgeable, and of course the food was delicious. Dessert was even better than the starters and mains! But Maki, head sommelier, was absolutely stellar. She was so engaging and warm and genuine. She made great drink recommendations and even surprised me with treats for my birthday. Thank you, Maki!
