The Boulder Cork Restaurant has provided quality food and excellent service since 1969. The restaurant is now one of Colorado’s most renowned dining experiences. The casual, yet attentive atmosphere is the perfect place to spend a special evening, be it to relax with friends or entertain business associates. Our banquet facilities can accommodate large groups with the quiet proficiency and superior quality that has become the hallmark of The Boulder Cork. The food is an impressive display of creativity and variety, masterminded by the chef, Jim Smailer. Chef Smailer has created an enticing offering of steaks, prime rib, chicken, pasta, and fresh fish selections; all on the cutting edge of culinary delight. The food is as fresh as the market allows. Authentic restaurant with lots of character. Menu offered good variety and the wine list had good depth and good pricing. Service was very attentive and the atmosphere was perfect for a good dinner conversation. A great restaurant that would stand out in any city.
My only "complaint" relates to the teriyaki sirloin. For years (yes, years)—going back to when the menu was on a cleaver—this has been my favorite Cork entre. On this particular dinner, it was cooked just as ordered (medium rare), but was surprisingly tough.I would have preferred a smaller cut with more teeriyaki infusion, and bit more char. I appreciate that this is the sirloin cut, but given that, this was particularly a challange to cut and chew. I would have liked to have had more of the teriyaki flavor. That said, this is a first class Boulder steak house with a varied menu, great service, and friendly wine list. Thanks Cork, please appreciate that this review is only because of your surperior restaurant and my fondness for the teriyaki steak.
We celebrated our anniversary at the Cork and were as pleased as possible with the experience. Perfect service and food that was perfectly prepared with unique flavors. The chef and wait staff have long tenure at the Cork. The Cork has been in business for 40 years. Long after the latest trendy restaurant has come and gone from Pearl Street, the Cork will still be here.
Lovely dinner - early bird prime rib was excellent and right portion size. Niman Ranch pork green chile dish was also excellent. The bourbon pecan pie should be a regular on the menu. It was fantastic. Lionel, as always, was a wonderful server - professional, great sense of humor, and prompt despite the busy night.
My girlfriend and I both ordered a filet mignon cooked Medium. Her steak came out a little past medium (no pink), which was fine. However, my steak came out very bloody and dark red, and with a lot of fat. I could have picked up a much higher quality cut at my neighborhood grocery store at a fraction of the price, which I will be doing next time.
Everything about this restaurant is fine tuned from the entryway to the service and the food was cooked perfectly. The wine list was very interesting and not overpriced. This is a real old school experience where attention to detail is obvious. A great bet when you want comfort food and you want to be perfectly at ease.
The food and service were good, the noise level horrific, the prices sky-high. We won't come again because of the expense and the noise. But the food, though sparse (and every single thing was a la carte) was delicious. Asparagus could have used more seasoning.
WE went for Christmas Eve dinner , just my self and my husband. What a perfect spot for a romantic dinner. We shared a bottle of Prisoner, our favorite wine. We shared the Almond crusted Brie for an appetizer , yum!!! I got the lobster Macaroni. It was delicious. We spit a caesar salad, it wasn't a different take with a mixture of lettuces, not my favorite. Jeff got the filet and baked potato, he said was awesome. Can't wait to come for another great meal!!
We had a friend and family Christmas Eve dinner and everyone enjoyed it. We haven’t been to the Cork in a while (that will change) and it hasn’t skipped a beat. You can tell it is well-managed. The food prep and presentation was great, proportions are good...it’s a very fine steak and seafood establishment.
We were freezing at our table sat right beneath the cool air blower and next to thermostat. So we Told the hostess, or whomever she was, middle aged shortish dishwater blond hair......she really couldn’t have cared less. She should have pretended to care at least. We all felt very dismissed. That’s ok we eat out often we have lots of other great choices.
I had lived in Boulder many years ago and recall TheCork as a great 'special' place with excellent food.
Visiting family and celebrating our get together , this was to be the perfect place.
The bread was good. I had the rib eye steak special and the quality of the meat was inferior--one would believe for the cost of the meal that it would be Prime, the potatoes tasteless and cold ( they did bring a hotter side when requested) and the chocolate mousse dessert did not have the rich flavor expected from that dessert.
Service was great, food was great as always. Staff was VERY accommodating when we ordered "off menu" appetizers for our office party. One tiny complaint - one of our people had a birthday that we had told the staff about (and verified when we first arrived) but the birthday mud pie was never served. Maybe we had to leave before they had a chance?
We had dinner here after a movie. Normally we think of the Cork for a full dinner, but the 4 of uswere just not that hungry, and our table had 2 burgers, which were very good. One of us had the prime rib sandwich (half) which was good, but the gluten free bun was not toasted, which detracted from the meal. Note to Cork, GF bread is really not good unless toasted quite a bit! Crab cakes were delicious!
The Thanksgiving menu this year was awesome! I had the polenta and my wife had the beaf. Our waiter was very attentive given how busy the restaurant was. Thank goodness we had a reservation or we would not have been able to get a table. I was very pleased with the experience this year.
This was our first time at the Cork after living here for over 20 years. Unfortunately, we picked Thanksgiving Day. They were really not prepared for the business even though my wife and I and everyone else stacked up waiting had a reservation. We waited for about 40 minutes for a table and the wait was chaotic with a lot of frustrated patrons. Eventually, we got seated and after that, the experience was better. The wait staff seemed surprisingly unflustered and our waiter was quite friendly. The food was good but I wouldn't say great. We may try it again on a non-holiday day.
The Cork Thanksgiving Day dinner is a tradition for us. The various menus items were just the ticket.
All our dishes were prepared just to order.
The server was very attentive and knowledgeable
This made for a great dinning experience for the holiday.

We were there for Thanksgiving dinner and it couldn't have been better. The plate of turkey and sides was huge and delicious. I took some home so I would have room for dessert. Pumpkin pie - yum. It's going to become a yearly tradition. Why go thru all of the work to make that dinner when I can relax and be treated as a guest.
