Blackbelly works exceptionally close with local ranchers, going steps further than simply receiving and butchering whole animals. The team contributes to research and development, feeding programs, and other conditions that ensure the final product maintains the highest standards of quality, with low quantity production. Further, the two primary suppliers of Blackbelly’s meats – family-run, Carter Country Meats and Boulder Lamb & Meats - have always applied organic standards to their practices, but they have taken recent steps to deepen their commitment by investing in official organic certification from the USDA. For its produce, Blackbelly primarily sources within a few miles of the restaurant. A few examples are Oxford Farm, Red Wagon Farm, Isabelle Farms, Cure Farms, and Two Hound Farm. These farmers provide an amazing example of Colorado’s bounty. This in turn affects the menu decisions Chef Hosea makes on a regular basis.

Started the meal with some cocktails that were tasty. Food is always delicious and unique. The flank steak was perfectly cooked and the Demi glace was amazing. Probably the best piece of beer we’ve had in a long time. Service was great. I would always make reservations- it’s a small place and definitely gets busy any day of the week.

Last year, the tasting menu on Valentine's day was superb. Every dish was perfectly conceived and prepared. This year, it was quite another matter. The beef was the only course that was excellent. The starter foie gras was just OK, but a fried meat patty is really more of a bar-food item than a first course for a romantic date. The fish was on the dry side, in spite of all the bling it was dressed with, and the pasta dish should never have made the cut at all. It was served lukewarm at best, for starters, and was far too sweet to be anything but dessert. The beet flavor was so cloying that it was inedible for me. The dessert was visually pleasing if you're seven years old, but had little connection to actual food, like a real fruit cobbler might have. On top of all that, the wine pairing servings were so stingy that it felt like a money maker rather than a delicious and thoughtful treat to the customer. Dropping $300 for such a meal was supremely disappointing, and sours me on going back at all.

Another perfect 5 course tasting menu. The wine parings were exceptional! If you have read the new Stone Barrington novel “Treason”, well not as good as those wines. But one can dream!

The food was wonderful as always! My favorite course was the first. Seared Foie gras and sweetbreads terrine. But see the pics and you decide!

We enjoyed the 5 course tasting menu on Valentine's Day. It was superb. Our server was amazing! She guided us through each course and helped us choose some truly delicious cocktails to accompany our food. The courses were very creative and we enjoyed every one of them. The Wagyu beef entree was a definite highlight!! We'll be back as soon as possible.

I have visited Blackbelly several times. I always recommend you two friends, who are coming to town. One of if not my favorite restaurants in the area. I was disappointed in the quality of meat I was served with the Denver steak on Thursday night.

Went w/ my 11-year old daughter for her birthday on a Tuesday night. It was lively and delicious. Everything from the staff to food was impeccable. We sat at the kitchen bar which was fun. Really enjoyed our experience! Highly recommend for any occasion!

We always start with the beef tartare and typically order an entree from the specials menu. We’ve never had a single item we didn’t gush over, be it a small plate or the Blackbelly burger. The service is also excellent, the servers are so knowledgeable about helping chose a beverage to pair with your food as well as all menu items. Every trip to Blackbelly is a special occasion whether it’s an anniversary, birthday or just a night out.

Another perfect evening at Blackbelly! I started with the oysters and they had big deep bellies and were delicious! Then a small salad and a sticky yummy butcher’s skewer - char sis. Delicious!

For dinner I tried the Ono and it was cooked perfectly. Thanks Casey!

The people in the Blackbelly Kitchen are experts at putting winning flavor combinations together! Each bite was as delicious as the first. We had the deep fried short rib as a starter Delightful the steak tar tar had great flavor. The filet of shoulder was very tender. Our waitress was a delight. Her description of the menu made us want to order it all. We had a lovely evening. Great service great food.

Excellent as per usual. We love everyone here and the food is fresh, bright and perfect. Service is better than most Colorado restaurants. If you are a couple out on date night, I highly recommend sitting at the counter and interacting with the chefs. You will have the best time! And don’t forget to tip the kitchen chefs!! 🥰

Best restaurant in Boulder. New menu is great! Highly recommend the grits with crabmeat (add an egg, you won't be sorry!), the ono and of course the meats, the meats, the meats! LOVE the new banquettes. I would think we could do without music -- out in the middle of the dining room, the din is significant so anything that can be done to make it less noisy. I would say BB is also offering one of the best wine lists in Boulder/Denver and the cocktails are fab. Finally, desserts, previously a sad soft spot on the menu, are a MUST. There is a dedicated pastry chef now and she is rocking it! Ice creams, a hummingbird cake, delicious chocolate things...save room for dessert and let's make sure they keep the dessert program around.

Blackbelly is always fantastic. The staff are attentive and really know the dishes. While pricey, the food always delivers the best dining experience. And the location off Pearl Street makes for easy transport to and from.

Cocktail was excellent. The heirloom carrots appetizer was superb. I ordered the rotisserie chicken as my main course, along with a side of roasted broccoli - everything was beautifully presented. The broccoli was delicious, as were the accompaniements on the chicken entree plate - especially the mushroom bread pudding. Unfortunately, the chicken itself was a real disappointment - pretty salty (was it brined?), and other than that, not very flavorful. In addition, the skin was still soft, fatty and fleshy - not at all like the crispy skins you expect with rotisserie chicken. I will certainly try the restaurant again; I will certainly not order the chicken again.

Another wonderful dinner at Blackbelly. The sound quality is so much better since the remodel - now my husband will be willing to visit more often. Service and care by the team was first class. We sat at the kitchen counter and the chefs were super friendly. Thank you!!!

As always a great selection of meats and interesting sides. We had a celery appetizer that sounded like a stretch but was amazing. I always feel good about experimenting a little here know the main dish will be excellent. Our dessert from the new pastry chef was also a home run. Will be back

Went for New Year’s Eve Dinner; amazing food and service. Restaurant is a bit on the noisy side, they would benefit from some sound dampening panels on the ceiling since it’s a concrete floor and industrial ceiling. Despite this, I still highly recommend.

Had a ball! What a night. 5 amazing courses and a delicious wine paring to go with. All was beautifully presented and throughly delicious! This was the second time I’ve been to a 5 course price fix meal and I really hope they will keep doing them. It’s so nice to just sit back and not have to make and decisions! I love it!
