Blackbelly works exceptionally close with local ranchers, going steps further than simply receiving and butchering whole animals. The team contributes to research and development, feeding programs, and other conditions that ensure the final product maintains the highest standards of quality, with low quantity production. Further, the two primary suppliers of Blackbelly’s meats – family-run, Carter Country Meats and Boulder Lamb & Meats - have always applied organic standards to their practices, but they have taken recent steps to deepen their commitment by investing in official organic certification from the USDA. For its produce, Blackbelly primarily sources within a few miles of the restaurant. A few examples are Oxford Farm, Red Wagon Farm, Isabelle Farms, Cure Farms, and Two Hound Farm. These farmers provide an amazing example of Colorado’s bounty. This in turn affects the menu decisions Chef Hosea makes on a regular basis.

The food at Blackbelly lives up to its promise of farm to table and whole animal utilization. We are the pigs ears and the burrata as our small plates and they were perfectly prepared and balanced. For larger courses we enjoyed the burger and roasted chicken. The roasted chicken breast was a tad dry but still very flavorful and the skin was perfectly browned. The burger was perfectly seasoned and prepared with thick cut bacon and cheddar. I highly recommend and will be returning.

My wife and I went to Blackbelly Market before going to a movie at the Boe, so it was an early dinner. We told our waitress that and she made sure we got out of there in time to make the movie. Because of time restraints we skipped appetizers and desert, thought the rest of the meal was delicious. My wife had the half roasted chicken and I had the pork loin. The chicken was moist and tasty and nicely presented. The pork loin was simply delicious, beautifully done and with excellent sides. (I have to say I wasn't crazy about the bits of hard rice that were in the sauce, but that may just be me. I'd definitely order the dish again in a second!) My wife had a mixed drink (The New Pollution?) which she liked a lot, and I had a couple glasses of a very nice Rose, which went well with the pork. The service, as always, was excellent. It's fairly noisy at Blackbelly, but it's a happy noise - just a lot of happy people enjoying their meals.

Charcuterie plate was highly disappointing. About 1/4 of my NY strip was sinew I would cut off before cooking. Waiter was extremely awkward (long pauses where he would stare at us), bus staff was very nice. Way too $$ for what we experienced.

Just moved to Boulder. This was the first restaurant I visited... I don't think that I will be able to top this experience. Blackbelly set the bar really high. Awesome food, attentive staff, A+.

“Little Lenny” (from the receipt) was our waiter and was AMAZING. Very attentive and had great suggestions. Made our anniversary feel very special! The food was fantastic and so unique. Will definitely be coming back!

This was our first experience at Blackbelly having just moved to Boulder. Our dining companions had suggested this as a "foodie" destination. The service was attentive and professional. The appetizers were outstanding - steak tartar, oysters and a pork compole. The entrees were equally good. It is primarily a steak house, but the other items, such as salmon were spot on. The restaurant also serves breakfast and lunch, gives butcher classes in the area next to restaurant. They also provide upscale catering service.

We will certainly make a return visit soon!

The restaurant was not busy when I got there, and the wait staff was also not busy, but I still had to wait for 10 minutes until someone brought water and asked if I wanted a drink while waiting for my dining companions. Later, when we asked about one of the daily specials, the waiter told us that, but to find out about the other daily specials, we had to ask about each one. Usually all specials are detailed without having to ask.

The food, as usual, was wonderful.

Staff was friendly, personable and accommodating. I had their beef filet and it was amazing. Absolutely mouth-watering. Can’t wait to visit again!

Blackbelly is my favorite restaurant in town. They've got a daring cocktail menu that changes monthly. Their small plate offerings are very interesting and satisfying. The meats are superb but unlike many meat restaurants, the vegetarian entrees are not after-thoughts. So long as being near meat doesn't irk you, a vegetarian diner can be equally happy with this restaurant. The atmosphere is excellent -- the slight ding is because too many diners are sloppily dressed relative to the decor and the price point. Come on, people - step it up!

Great service. The cheese plate and beef tartar were excellent. Burger was tasty but not as good as I was expecting. The bacon was the real star on the burger. Fillet was cooked well. Dessert was tasty too.

Appetizers were all quite good. The $32 pork chop was dry, dry, dry. The buRger was terribly ordinary. Flap steak was almost tartare. Service started out great but as soon as the restaurant got busy we were largely ignored & had to wait forever for the check. Kind of lame for a dinner that was about $60/person, really. I see room for improvement here.

We enjoyed our evening at Blackbelly 2 nights ago, but not to the extent we traditionally do. The corn bisque was unexpected and unique, not really too my liking. It tasted nice but the texture was so strange - almost like corn-flavored cool whip. The description on the menu did not provide any hint this was a whipped, cold dish. I'd suggest a better description to ensure the customer knows what to expect. (I'd love a traditional corn bisque soup, too!). The fettucine was sorely lacking in mushrooms - only one on top, and no flowers in the dish either. I was very disappointed in my choices that night because I've always been very pleased with my meals at Blackbelly.

We enjoyed a number of small plates. The Sweet Corn Bisque was unbelievable with fantastic flavor and texture. The pigs ears and the octopus were very good. The peach dessert was a great finish. We had the goat special which fell short with good flavors but tough muscle and connective tissue it was removed from the bill. We had no regrets.
It was a great culinary start to our vacation.

I did not find the quality of the Waygu beef to be good quality. I actually had to send it back because it was so tough. The manager took care of it and the service was very good.

From the first bite, the beautiful Amuse, to the final bite of my Tomato Tartan everything was perfect!

Starting with the Chef’s Choice charcuterie was a great way to begin. My Blue Cheese was the best I think I ever had. Then I had the rack of lamb with half orders of broccoli and potatoes. The lamb was so delicious. It was pure delight and went really well with the glass of Sangiovese I ordered. Capped the night off with the Tomato Tartan with vanilla ice cream on top. What else can I say? Other than Best Restaurant anywhere, I can’t think of a thing! See you all soon!

Had another amazing meal at Black Belly.!
The food was incredible, our wait staff, Brooke was both knowledgeable and friendly.
Geoff, the GM came by to check on us and share in conversation.
The deck was perfect as the sun was setting.
Nothing could have made it any better!

We sat outside on the patio — always our preference because the noise inside becomes unbearable for conversation. The food was outstanding, especially the tartare — wow! the only problem was the incessant wasps from the pretty flowers kept wanting to share our dinner. Perhaps flowers that don’t attract wasps would be possible? the charcuterie tray was very good — the prosciutto and pate especially. The bresceola was a little dry.

We’ll be back ...

The menu choices we made were very tasty. We were there in time to do a small salad and drinks on the happy hour and the dressing on the salad was superb. Our entrees were generous in size and again very tasty, particularily the wanking onion pasta.

Good was good. I had the chicken and my friend had the skirt steak. He said it was very tasty, but a bit chewy? I think skirt steak is like that. Had a peach dessert. Really good.
Our waiter was Keanu. This is the 2nd time I’ve had him and he’s great. He has never forgotten anything; great service; and very friendly and knowledgeable. I’ll ask for him next time.

I have been a frequent patron of Blackbelly since it opened and have had wonderful experiences there, but my last visit was very disappointing. We were celebrating a friend's birthday and the night started off on the wrong foot when the server ignored us for the first 25 min we were there. He was happily chatting away to his other customers but failed to come to us. We tried tracking him down, I spoke with the hostess and nothing...finally went to the manager and complained. When the server came over he had a really bad attitude and basically took our orders and left with not a word of apology. The food took FOREVER to come and once it did he never came over to ask how it was. I had to track down the busser to tell her my salad was too salty and then the manager came over to replace it, which I appreciated. The server walked by our table numerous times once we were done eating but failed to take away the empty and dirty plates. He finally came over and asked if we wanted dessert - he later delivered our order and again never came to check back with us. Next time he saw us was to give us the check. Interestingly enough when we were writing out the tip and I was filling out the comment card did he decide to come over and try to apologize for his behavior. Little too late at that point...the other disappointing thing about this experience is that the manager never came over to check in with us again. He knew we were not happy from the beginning - all he had to do was come over, maybe offer some bread and butter for the long wait. Just something. Won't be returning anytime soon.
