Bistro C.V. is located in downtown Steamboat Springs at the corner of 4th and Lincoln. Along with a menu with small plates, cheese and charcuterie, middle courses and main courses, Bistro C.V. also offers a tasting menu that includes three courses plus dessert. The menu is very imaginative with options such as chicken liver pate, yellowtail ceviche tacos, peekytoe crab salad and more, and that is just the small plates.

The middle course menu at Bistro C.V. includes a house specialty, grilled white asparagus with duck prosciutto. For the main course, the house made capellini, wagyu sirloin and bacon-wrapped Colorado lamb loin are favorites. With so many Rocky Mountain contemporary cuisine options it is easy to find a favorite.

We went to Bistro CV last week because they announced they would be closing. As it was one of our favorite restaurants, we were disappointed by the news. So we felt compelled to go one last time. It had been about a year since we had last eaten there, we don't eat out much. We were astoundingly disappointed by the experience. Apparently a lot can change in a year. Bistro CV has a reputation as one of the few fine dining restaurants in Steamboat. It also can cost upward of 100 dollars per person. So the expectation is for memorable food and service, outstanding, remarkable, even.

The restaurant was over-sat and over paced, crowded and noisy. The service, on the rare occasion we saw our server, was decent but he was unavailable most of the night. The food was decent, but it took forever. We paid with cash and a credit card and then found out the next day the card had been grossly overcharged. Which has resulted in a difficult banking situation.

And since we reported the mistake, Bistro CV has been unhelpful at best in rectifying the problem they caused.

It was also loudly announced that during their last week of operation they would be giving all patrons a 25 dollar gift card to their sister restaurant, LOW. We never received any gift cards. Which would have been forgivable, but the experience was subpar and their mistake when they ran our card has turned our bank account upside down. So it feels like adding insult to injury. Even if they weren't closing, I wouldn't return after this experience.

I won't eat at LOW either.

Great as usual on fourth visit there from out-of-state in 2 years - really sorry to hear the owners have decided to close in order to give more attention to another location in Denver.

The food here is always fantastic. What we really like is that the menu changes and evolves with time. The grilled romaine is always very good. Just the right amount of char and dressing. The cheese and meat selections for appetizers were excellent and the bolognese was very good as well. The attention to detail and flavor combinations were amazing.

We enjoyed the delicious cuisine and would return to Bistro C.V. The service was competent; however, our server was not engaging or particularly friendly, and not particularly accessible which was disappointing. That said, this could have been that specific server only as the hostess was friendly.

Always loved BCV, and always had great meals. We will miss it. It was the best in Steamboat, and there are other very good places, but we are very sad to hear that it's closing.

Bistro CV continues to be one of the two best restaurants in Steamboat Springs (along with the Laundry). Good food and professional service; a few more choices would be helpful but still a very enjoyable dining experience that could hold its own in a much larger venue than SS.

Quite a surprise. We didn't expect a restaurant of this quality in a small ski town. The food was of NYC, San Francisco etc quality with interesting combinations and taste without being overly fussy. The wine list was nice with fair prices. Service superb. Even worth a detour.

Found this place highly rated on OpenTable and once we saw they had a happy hour, we decided to try it out. Out of the couple items on the happy hour menu, our favorite were the tacos. Of course we didn't realize how incredibly small they were. $4 is great but it was two bites of food. What was most memorable was the cocktail I had which had absinthe, I forget the name. We were very impressed with the cocktails and creativity of even classic cocktails. Wine was also great.
