Bistro C.V. is located in downtown Steamboat Springs at the corner of 4th and Lincoln. Along with a menu with small plates, cheese and charcuterie, middle courses and main courses, Bistro C.V. also offers a tasting menu that includes three courses plus dessert. The menu is very imaginative with options such as chicken liver pate, yellowtail ceviche tacos, peekytoe crab salad and more, and that is just the small plates.
The middle course menu at Bistro C.V. includes a house specialty, grilled white asparagus with duck prosciutto. For the main course, the house made capellini, wagyu sirloin and bacon-wrapped Colorado lamb loin are favorites. With so many Rocky Mountain contemporary cuisine options it is easy to find a favorite.

We went to Bistro CV last week because they announced they would be closing. As it was one of our favorite restaurants, we were disappointed by the news. So we felt compelled to go one last time. It had been about a year since we had last eaten there, we don't eat out much. We were astoundingly disappointed by the experience. Apparently a lot can change in a year. Bistro CV has a reputation as one of the few fine dining restaurants in Steamboat. It also can cost upward of 100 dollars per person. So the expectation is for memorable food and service, outstanding, remarkable, even.
The restaurant was over-sat and over paced, crowded and noisy. The service, on the rare occasion we saw our server, was decent but he was unavailable most of the night. The food was decent, but it took forever. We paid with cash and a credit card and then found out the next day the card had been grossly overcharged. Which has resulted in a difficult banking situation.
And since we reported the mistake, Bistro CV has been unhelpful at best in rectifying the problem they caused.
It was also loudly announced that during their last week of operation they would be giving all patrons a 25 dollar gift card to their sister restaurant, LOW. We never received any gift cards. Which would have been forgivable, but the experience was subpar and their mistake when they ran our card has turned our bank account upside down. So it feels like adding insult to injury. Even if they weren't closing, I wouldn't return after this experience.
I won't eat at LOW either.
Great as usual on fourth visit there from out-of-state in 2 years - really sorry to hear the owners have decided to close in order to give more attention to another location in Denver.
Bistro is closing. The chef was fantastic and their small plates were wonderful. We will miss this restaurant dearly.
The food here is always fantastic. What we really like is that the menu changes and evolves with time. The grilled romaine is always very good. Just the right amount of char and dressing. The cheese and meat selections for appetizers were excellent and the bolognese was very good as well. The attention to detail and flavor combinations were amazing.
We enjoyed the delicious cuisine and would return to Bistro C.V. The service was competent; however, our server was not engaging or particularly friendly, and not particularly accessible which was disappointing. That said, this could have been that specific server only as the hostess was friendly.
Always loved BCV, and always had great meals. We will miss it. It was the best in Steamboat, and there are other very good places, but we are very sad to hear that it's closing.

Bistro CV continues to be one of the two best restaurants in Steamboat Springs (along with the Laundry). Good food and professional service; a few more choices would be helpful but still a very enjoyable dining experience that could hold its own in a much larger venue than SS.

Quite a surprise. We didn't expect a restaurant of this quality in a small ski town. The food was of NYC, San Francisco etc quality with interesting combinations and taste without being overly fussy. The wine list was nice with fair prices. Service superb. Even worth a detour.
Pastas were particularly delicious. Liked use of local seasonal ingredients. Clean flavors. Very good food and service to a group of 7.
We had the prix fixe menu with the wine pairing. Thoroughly enjoyed every course and the overall experience. Just a wonderful establishment.

Found this place highly rated on OpenTable and once we saw they had a happy hour, we decided to try it out. Out of the couple items on the happy hour menu, our favorite were the tacos. Of course we didn't realize how incredibly small they were. $4 is great but it was two bites of food. What was most memorable was the cocktail I had which had absinthe, I forget the name. We were very impressed with the cocktails and creativity of even classic cocktails. Wine was also great.

The atmosphere is charming and friendly. The food and wine are wonderful and especially like the kitchen being open for observation.
Best food in Steamboat for sure, and stacks up against any of the best in big towns too. The tasting and pairing were world class.

Amazing prix fix menu! The food was so good. My only complaint is they kind of rush through the courses and I would have preferred they slow things down a bit for a $200 dinner for 3 (only had 1 glass of wine each). The food is very unique and SO GOOD.

We went for the family style dinner. The food is great, the service is always excellent. This is just a consistently very good restaurant. Prices of regular menu items are getting a bit crazy.
While the food tasted great and looked amazing, I have to say that I will never return or recommend this place as a result of the extremely poor service that was delivered by the server and supposed "bar tender." It took 35 minutes to get 1 round of drinks for our table of 8 people. It was early in the evening and the only other people in the place were a couple sitting at the bar. We continued to look around as the server would disappear and the "bartender" was otherwise occupied by chatting with a friend who clearly was not dining, but was hanging out near the bar. The server eventually sensed our frustration, so came to our table to say "I'm so sorry, our bartender is feeling overwhelmed right now because he isn't really a bartender, more so a server, so please bare with me. It was then that we finally received our drinks all carried over one by one with large pauses in between. The server acted very nervous and wasn't able to answer any questions regarding the menu items. When asked about something that she recommended, she grabbed the menu out of the hands of someone at my table, proceeded to read the item and then went on to mention that "I haven't actually tried it because this menu was just put together and the kitchen hasn't let us try anything yet." Its a shame that the front of house delivery of service trumped the food, because it was actually very tasty. Thank you for the opportunity to provide my feedback. I truly hope that this will assist in validating the need to take a good luck at who is representing in the front of the house!
Bistro C.V., is a local favorite. Modern, tasteful, comfortable atmosphere with creative bistro-style cuisine. Wonderful owners, chef and staff. A truly great wine list. A Steamboat MUST for foodies and wine lovers.
We choose the tasting menu with the wine pairing. We have eaten here many times but have never tried the tasting menu. Their food has always been outstanding. The tasting menu was also excellent. In my party were three teenagers that tried everything and enjoyed the food experience The pork ravioli and duck was amazing. I really enjoyed the beef tartare and the scallops. A great deal of effort was placed into every dish and it absolutely shows. For foodies this will not disappoint. I highly recommend this restaurant.

I have been going to BCV since fairly soon after they opened and they never cease to deliver. They continue to evolve old favorites without messing them up and always have great new choices. They deliver great flavors and creative combinations that keep us coming back.

I dine at Bistro C.V. every time I go to Steamboat. It is the best restaurant in Steamboat. The food is fantastic and the added bonus is the staff; from the person who seats you to your server and best of all are the chefs! I always eat at the chef's counter and I love it! It's added entertainment at no extra charge to just watch them cook and present the food. It's always so much fun to chat and joke with them. They're great! Bistro C.V. has interesting craft drinks of which we've tried a few, along with their wine list and great food. Did I say the food is great? I can't recommend this restaurant enough and I can't wait to return to Steamboat and to Bistro C.V.

As locals, we have several choices for high end dining including The Laundry and Cafe Diva. Our recent visit to Bistro CV suggests that it should also be on the list. Our appetizer Steak Tartare with raw egg and crostinis was exquisite, and reasonably price. A bit too small to share but delicious. We did share the grilled Romaine which was wise since two large stalks were served. The chicken pot pie with cornmeal was also shareable, albeit pretty spicy if that isn't your cup of tea. Check out there bar special apps and lower happy hour apps prices (until 6:30 we were told.) Decor here is lovely with lots of windows overlooking Lincoln Avenue
The quail, burger and salads were fantastic! The Malbec was excellent too.
We spent a week at Steamboat and this dinner was the highlight of our culinary experience. We took our 2 kids, ages 9 & 13 (both budding foodies), and it was a hit with everyone. Our server, Jeff, was excellent as he gave us actual opinions about drinks/food rather than telling us that everything was great on the menu. Love that! Between the 4 of us, we had the Wagyu Beef Sirloin, Diver Scallops, Chicken & Chorizo PotPie and the Gnocchi. Everything was fabulous! It was on the pricey side, but definitely worth it for a special night out while on vacation.

My high expectations were not met on my only visit to Bistro CV for dinner. The service was and environment was great, but the food was lacking. The food was not creative, nor was it delicious. I am not a difficult critic, but I eat at enough fine dining restaurants to know when the expected value is not being met. I would recommend several other fine dining restaurants in Steamboat.
