The best taste, presentation, proper portion size, and style in the greater Evergreen and Conifer area. Beats most of Denver, too.
Definitely underwhelming- my husband's fillet was good but bland, my duck was definitely not crispy. The service was really slow too and the ambiance was just not as nice as I was expecting for $32 per plate.
We had a reservation and although several tables lining the walls and more tucked away were empty, we were told we couldn’t sit at them. The only menu for the night was a Restaurant Week menu so that wasn’t the reason. The food and service are those of a fine dining restaurant but the seating, lighting, and overall ambience was unimpressive.
The only thing good was the wine and appetizers. All the other courses fell short.
Went here for the first time for Denver Restaurant week. Nice place with good food and nice ambiance.
We enjoy Bistro Colorado. I did miss the poached egg with duck confit, but the Benedict was good. Will need to check out dinner!
The Bistro Colorado is always an experience to love. The food is always unique and vary flavorful. The chef has the Midas touch with food.

This restaurant is overpriced and the owner, Travis thinks a lot of himself. A table near us complained about the quality of an appetizer they ordered Travis said, I made it myself no one else complained about it. We had a salad that was wilted, the dessert was not good main dishes lamb andswordfish were good. Butternut squash soup was not good at all.

We went to this restaurant for Valentine's Day. The food was excellent and the service was perfect. It was a little pricey, but overall I would definitely return.
The food was good and the service was ok considering that they appeared to be short staffed.

Bistro Colorado is truly a hidden gem! Hosted by Travis, the owner/chef, the whole experience is very high quality beginning with the comfortable, yet elegant, ambience and culminating with superior food and service. Our entrees for this visit were a delicious elk burger with wonderful accompaniments and a tenderloin sandwich that my dining partner aptly described simply as "Fantastic" from top to bottom. The home made cake we shared for dessert was one of the best we have ever had at a restaurant; tasty, moist and not too sweet! Finally, the wine options were delicious and reasonably priced as well. As usual, we will be returning soon to sample other parts of the menu. Highly recommend for both Evergreen locals like us, and for discriminating diners from elsewhere as well........
We came for brunch on a holiday weekend. It was a buffet and not a normal brunch. Most items were cold to warm. I was super disappointed in the biscuits and gravy and the eggs Benedict. Eggs Benedict was cold and the unappetizing poached eggs swimming in water were overcooked. The omelet station and waffle station were passable. The bacon was good. Otherwise, the rest of the food was not good. I felt at $25 per person and $10 for a drink, the quality should be better. The music was nice but kind of loud. This was our second bad experience at Bistro Colorado. We probably will not go there again.
Over the holidays we dined at a number of prominent, high end restaurants. The quality of the food and the service at Bistro was at the very top of our list.
Great Christmas Eve menu - although a limited menu, great choices whether you want seafood, beef or vegetarian.
I dined here with my family for a special Christmas Eve meal. Upon arriving I was disappointed in the entrance and overall ambience was not decorated for the season. They offered a small menu which offered the same potato, veggies but with a different protein. Our waiter, who also apparently cooks there , was uninterested in serving that day.

Delicious and fresh cuisine.
A most curious place. The layout looks like some catering establishment, with buffet serving counters in the foyer (and a ham slicer, weirdly) then a large open, sparsely decorated dining room with tile floor and a bar and nothing to dampen the noise. It was loud, even with few people there when we arrived. The “greeter” has few airs and graces. You’re not made to feel welcome by her unsmiling aspect. Service throughout was terrible — incredibly slow and curt. It’s a struggle to get even a glass of water, while a small, undercooked baguette and butter cost $6. While the menu offers small and regular-sized portions for each dish, the waiter didn’t ask which you preferred. Food was ok at best — the only difference between the mains is the protein, all the sides are the same. It’s nowhere near the standard I’d expect for a restaurant that charges such prices. Won’t rush back.
I have to note that Evergreen has only a smattering of commendable dining and I what I love most about BC is the quiet artsy and upscale atmosphere. The value is unbeatable with exceptional service time after time. We have come for drinks, or drinks then dessert :), for weekday dinner and for special occasions. We always enjoy the expertly prepared Flatliners, the steaks, sea bass and the freshly crafted soups and artisanal ravioli. That takes a lot of love :) We will return, often, to this local purveyor of fine dining because if they thrive we find that we thrive in return!
Travis Smith is a wonderful chef and always meets our expectations, be it breakfast, lunch or a special dinner. I strongly recommend this fine restaurant.
The food and service were first rate. As always, the food does not disappoint - it was deliciously prepared and attractively presented. The attention to our needs was excellent and we had a relaxing and enjoyable meal.
Had a Sunday brunch - unique and delicious! Crispy waffles, create your own omelet, create your own Eggs Benedict, delicious beet salad, and all the trimmings! Also ordered bruschetta - highly recommend!
This is like an up scale farm to market restaurant!

The food was outstanding. We ordered a variety of appetizers and split an entrée.
The restaurant acoustics are bad. There are a lot of hard wall/floor/ceiling surfaces, and the sound bounces around a lot. The addition of some sound-absorbing fabrics or panels would go a long ways toward giving the space a warmer, quieter, more intimate feel.
The food was exquisite. Every bite was special and delicious. This restaurant offers full or half plates if you wish to try more than one selection. A good place for a special occasion.

Was very noisy even though only about 4-5 tables occupied. Too many hard surfaces. Need to do some sound proofing. We were celebrating our anniversary and wanted to have quiet conversation but a raucous table of 6-8 had booming voices and shrill laughs. Distracting
Bistro Colorado remains by far the best restaurant in the foothills and possibly in Denver metro area!
It starts with personal customer service along with delicious preparations and a broad menu of options for most anything you may crave.
And now the menu includes lower prices and half-serving options as well.

The food at Colorado Bistro was very good. I had the steak oscar and the steak was cooked perfectly. The ambiance is simple but nice. The service was just ok. The food took a while to prepare but that was not a big issue for us. The waiter seemed ready for us to leave and did not ask if we wanted dessert. We had to specifically ask to see the dessert menu.
The best restuarant in five years I have been. Very creative top of the line menu and delicious food!!

We felt like we walked into a warehouse. There was no ambiance. We were expecting a cozy, somewhat quiet, romantic ambiance but it seemed cold and impersonal. It was noisy and had almost a fast food atmosphere.
Far too expensive
Very nice surprise. The salads were fresh, and beautifully presented. My wife's butternut squash ravioli was excellent, as was the halibut. Wine was great and reasonably priced.
food was awful. Wait person should explain how entree is prepared. restaurant was empty on a Saturday night. should have been our first clue.
Amazing food...fresh fish was fantastic. Quiet enough for conversations. Also have 2 food trucks for events.
We had a good experience. We just thought it was overpriced. Farm to table can and should be cheaper.
