Aureole - Las Vegas
Aureole at Mandalay Bay will begin a restaurant transformation beginning Nov. 27, re-opening late December with an updated dining concept by renowned chef Charlie Palmer.
Palmer has tapped standout Las Vegas chef John Church to lead the kitchen as Executive Chef along with renowned wine and fine dining service authority Timothy Staehling to oversee restaurant operations as General Manager.

$600 meal for 4 should be phenomenal, and it wasn't. Everything - the service, the food, the wine - was just OK. Ketchup on my filet?!? Server forgets about us?!? Server does not pack my wife's truffle sauce (I got her wrath on this one)?!? Wine was great, though.
I went to explore this Michelin Starred Restaurant while I was in Las Vegas for a business trip, and I was somewhat underwhelmed. The amuse bouche was delicious and the combination of flavors and textures was amazing. The seared foie gras was okay, but I am not a huge fan, although the dates that came with it were delicious. The crostini needed a bit more substance to balance the melt-in-your-mouth richness of the meat, in my personal opinion. The halibut, however, was perfection. It was probably the best piece of fish I have eaten in the past ten years... it was flavorful, delicately prepared, over some deliciously balanced green vegetables. If I were to go back, I would skip the tasting menu and just get the halibut. The wine pairings seemed a bit off at times, sometimes to sweet and cloying for the dish they accompanied, but other times spot on.
So overall, was it a good meal? Yes, absolutely. Would I pay that amount again for the same experience? No- once was enough.
To reiterate: skip the tasting menu and go straight for the halibut.
The food on tasting menu was good, but not exciting. Some of the wine pairings we not complimentary to the dishes, so that experience was very disappointing.
Presentation of all courses outstanding and food quality melted in your mouth! Tremendous wine selection and just make a reservation at least a week in advance!
Excellent food and wine, great service on a busy conference night. Definitely recommend using the sommelier Angel.
Had reservation. Arrived on time and was seated immediately. Had to walk downstairs due to the hostess stating that the elevator was not working. NOT GOOD BUSINESS FOR ELDERLY OR HANDICAPPED INDIVIDUALS.
Had a wine pairing coupon and thought it was for a bottle of wine (from what we were told at the MLfe desk). Turned out to be for 1 glass of wine valued at $16. The wine menu has very few selections for $16 or less.
The service was good considering how busy it was but we were able to make our show in plenty of time. The food was very good as well.
I would consider returning in the future.
A beautiful room dominated by the wine and the flights of the wine angel (you have to visit to understand), the total experience is memorable. The tasting menu is truly special, particularly when combined with the wine pairing. Every aspect of the meal, from service, to the variety of the tasting menu, to the wine pairings are truly memorable. This is a wonderful overall fine dining experience.
Excellent food and especially the outstanding service. Did not get to see a wine angel in action but hopefully we will see one next time we stay at the Mandalay Bay and eat at this restaurant
Beautiful restaurant with an extensive wine list
You will pay for the ambiance and the extensive wine list - like most Vegas restaurants, the mark up on wine is very high
The food was good - but nothing special. The cod was a bit dry, the filet mignon was good but not worth a price tag of nearly $60. Brussel sprouts were bad - under cooked and flavorless.
My prior experiences at this restaurant were better.
Always are go to Restaurant in Vegas.

I read a lot of reviews about poor service but I ignored it. Wish I wouldnt have. The restaurant was practically empty at 8pm on a Friday night. Now I know why. The service was slow and boring. Food was ok. Very expensive. Not sure why with all the bad service reviews that the owners and managers don’t fix that! We will not be going back. Vegas is full of good restaurants. Don’t waste your time or money here.
Great time there. I found all the staff to be very dutiful. I felt valued as a customer. I was happy they were able to accommodate my vegetarian tasting. I would love to see more vegan options! The wines that were paired with the different courses, especially the sparkling red for desert. It was so delightful (and sadly I forgot to get the name of it!!)
It was modern yet the decor did not take away from the quiet understated elegance. I will definitely visit on my next visit to Vegas!

Very slow service. We had to wait a long time to order, took to long for food to arrive.

Food and service was excellent.....however there was way too much noisy music coming from Mandalay Bay - ( d j dance party outside the restaurant) The manager explained the music would end by 730 so it wasn’t so bad - but it was so bad because we were here to only 630!
Mandalay should not play loud dance music right outside a 5 star dining venue
We had our wedding rehearsal happy hour here with about 12 people. We would have preferred several high top tables rather than 2 long dinner tables. The long tables made it more difficult to mingle and talk with each other as you do at a happy hour.
However, the appetizers and drinks plus the wine and Prosecco were quite good.
We arrived at Aureole as one of the first tables of the night. Most of the food was bland except for the lobster risotto which was over seasoned. The service was not very attentive.
The atmosphere was elegant and the service was impressive. The food was delicious but a little pricey.
Had an early showtime and the waiter was incredibly accomodating...great service and food was fabulous! Highly recommend.

As a first time visitor, I was looking forward to the reputation meeting results. With two exceptions I was very pleased. The staff was friendly, the restaurant classy, the food delicious and the experience memorable. The two exceptions were the service delivery. Our main course was delivered even before we were done our appetizers, but then after the main course, we had to wait 15 minutes for the desert. This could be planned better. Also, there were just two of us out for an enjoyable evening and we were seated between two 8 tops which were very loud. There were so many open tables in areas of the restaurant where other couples were enjoying a peaceful atmosphere I don't have a clue why the restaurant would seat us there. Besides the loud conversations, the wait staff was overly busy serving the big groups. When the manager came by, I mentioned this issue along with how good the food was but she didn't seem to care about the seating issue. "Food, service, atmosphere"
Mr. L. Nguyen was exceptional in providing personalized and quality service for my wife and me on our 20th anniversary. The whole staff went above and beyond! And...food was excellent! Thank you Aureole!!
We had dinner at Aureole as part of Restaurant Week, and we chose the special RW menu. The food was delicious, our server was friendly, knowledgeable, and gave us the right amount of attention. We, and everyone else it seemed, enjoyed watching the sommelier work and perform in the wine tower. It was a unique and enjoyable dining experience.
Vegetarian starters have gelatin products in them so if you’re vegetarian or don’t eat pork ask for a substitution. Also be aware that the menu items don’t show all the main ingredients, only selective ones. Great wine list.
Service was outstanding! Waiter helped create a wine pairing for our dinner and was especially accommodating! Great food, lovely wines and a memorable evening.
Look forward to a return visit.

Our dinner at Aureole was World Class! In every respect this was truly a 5 Star experience - start to finish. From our reception person to our head waiter and sommelier- every member of the Aureole team pampered us. All were attentive and none rushed. The chefs picks which were paired with the Soms selections were exceptional. The food was served hot and everything was fresh - fresh -FRESH!! This will be in our top 3 dinning experiences for all time! In fact it’s hard to imagine any two future experiences which might eclipse this one ... but I’m leaving room for couple more Charlie Palmer Over The Top possibilities.
Great food and service. We all ordered from the pre fixe menu which came with an appetizer, entree, and dessert. What a deal for the quality and quantity of food. We were all pleased with the selections. By the time the dessert came we were stuffed but couldn't stop eating because everything was so delicious. The staff was beyond friendly and helpful. I will definitely be going back on my next trip to Vegas.
I was not impressed. Some of the meal was as fabulous. The appetizers and desert soufflé.
The “rare” filet was not good at all and when I told the waiter the steak was not good it was cooked medium at best. He just asked what I wanted him to do putting me on the spot. He also said if I looked in the very center of the Steak that part would be rare!!! SERIOUSLY!!! What about the other 7 ounces of the 8 ounce filet!!!
We will not be back.
We chose this restaurant because it was convenient, we were doing a trade show at Mandalay Convention center. They hit us with $495.- for 3 bottles of wine which was way over priced.
I can buy these wines for $20-$25.- a bottle anywhere. The food was O.K. nothing special, but over priced again. I will not eat there again unless I have to.
The food and service was great. We had the filet and ribeye!! Both were cooked to perfection!
Wine selection was fantastic,the Wine Angels were awesome to watch and the service was outstanding but the food was disappointing.
Would go back to enjoy the wine but with the many dining choices in Vegas I don’t believe we will be dining here again.
Loud patrons, quick in and out😡
I had one of the top ten meals ever here a few years back. It’s faded now. The table wasn’t ready. The service was decent. Some of the meal was good but never sublime. The last time I came, every course was inspirational. Even the repeller in the wine cellar cube (which is so cirque, in a good way) seemed a little pedestrian.
Dessert was very good, but it was too late.
Our waiter seemed very aloof & like he wanted to be somewhere else. He rarely gave us eye contact & wasn’t very warm or welcoming. Not what I would expect from such a fine establishment. I’ve dined here before & had impeccable service. Our server didn’t act like he he was in the service business at all. Quite disappointing.
Our reservation was at 745. We ordered our entrées at 845, and left the restaurant at 11. Food was good but took FOREVER.
Universal disappointment, total ripoff and an aggravating hour of our lives we will never get back. I made the mistake of recommending this place to my colleagues after having enjoyed two excellent experiences in past years- but they were apparently too long ago because something terrible happened to this place. Frutti di Mare was the equivalent of canned seafood atop uncle Ben’s rice with goopy cheese for over $60 - the dish appeared to be microwaved - and the Ossobuco was the size of a TV dinner for around $70. The wait staff was inattentive and unsophisticated - I can get service like this at Olive Garden with a friendlier staff. We asked to split the caesar salad so they gave us the salad on one plate and an extra plate with no serving utensils to do the work of splitting it ourselves. On top of it all they were playing a loud pop soundtrack on the overhead. Bill for two was well over $300 incl a bottle of wine. We couldn’t wait to get out of this place.
I’ve been to Las Vegas dozens of times for business and pleasure and be advised that you can do better for the same money almost anywhere else in Las Vegas. Blecch
Amazing time. Loved vast wine menu and range of locally and internationally souced ingredients. Wine angel added bonus ! Nice vibe and fun.
