Aureole - Las Vegas
Aureole at Mandalay Bay will begin a restaurant transformation beginning Nov. 27, re-opening late December with an updated dining concept by renowned chef Charlie Palmer.
Palmer has tapped standout Las Vegas chef John Church to lead the kitchen as Executive Chef along with renowned wine and fine dining service authority Timothy Staehling to oversee restaurant operations as General Manager.

I have been going to Aureole ever since it opened and I have never been disappointed. Great food. Excellent service. Wonderful ambience.
They were very accommodating for our large group. It's one of the few places on the strip that didn't have a huge wait, mostly because their identity is non-existent to the average person unless you scroll through locations on Google to find options. Unfortunately, we needed guidance to find it inside of the casino as the entrance is ambiguous to it's surroundings. The bartender was knowledgeable, wait staff courteous and versed in their menu, and food was well prepared. It was a fine experience for us, and quiet and comfortable for our large group.

Everything was perfect in our visit to Aureole. The service, food and wine list all came together for an amazing experience.
Our experience was very good, from the moment we walked in. We felt completely welcomed! Sal was awesome at the bar and his drink recommendations were spot on! The Charcuterie board was delicious and i highly recommend it.
As for dinner, all i can say is WOW, the food was unparalleled. We ordered the Duck breast and also the Filet and both were cooked to perfection. Last but not least, I want to recognize Andrea, Lead Sommelier. She made us feel so very welcomed and she went over and above to educate us on different wines, regions, facts etc. I would rate our experience A++ and we will surely be back!
This was our second visit to Aureole. The angels were off that night. The food was amazing but there was a noisy group of business people meeting there. There were very annoying. Other than their rambunctious laughter, my husband and I enjoyed ourselves.
Extremely disappointed!! Restaurant empty and for a Saturday that was a big surprise!!
Menu very boring. Not exciting. Restaurant needs an overhaul and need to update the menu.
Would not recommend not return. Too many GREAT restaurants nearby

Our male waiter was slow and inattentive. He even opened up a door to the out side right in front of our table to let a man out to smoke! It was approx 37 degrees and windy, MY DATE REALLY GOT CHILLED.
Absolutely Incredible!!! Something for Everyone!! Vegetarian, Pescatarian and Carnivore. All rejoice!! From the mushroom fettuccine to the Foie Gras... all perfectly delectable and well balanced. Delish!! The new chef, worked for 9 years under Alain Du Casse, and it is readily apparent. A revelation!!! Highly recommend!!!

Our dinner was delicious! We especially enjoyed the octopus which was outstanding and the halibut. Meeting the chef was the icing on the cake!
This restaurant was amazing it wasn’t to loud and noisy the atmosphere was great. The food was very exquisite and very tasty. We really enjoyed the service we got the waiter was very helpful and prompt. The only thing i would suggest is getting more than one bathroom per person.
The tasting menu with the wine pairing was outstanding. Going to cost you $500. for a couple With tax & tip. Wouldn’t do it every Friday, but once a year definitely worth it. Service was excellent & Chef Alex came out to meet us and ask about the meal. Highly recommend for a special occasion meal in Vegas
Great food and great service. My only suggestion would be that the tasting menu portions be a bit smaller because as we got further into the tasting we were getting very full and it was hard to enjoy the last two courses. The wine pairings were great.
For my birthday gift, we had the tasting menu. Each course was expertly paired with a great wine, which the sommelier discussed with us at the beginning and end of the course. The food was amazing and the experience incredible. It was really the perfect gift!
Really enjoyed the experience. The food, wine and service were great. We loved the focaccia bread they served. We were a little disappointed to not see the wine tower from our table but overall thought it was great.

Aureole is a go to for me every year. I've had many business dinners here. Besides the food and outstanding service, I can actually hear conversations from across the table.
A few minutes after seating us, the hostess came back and told us a table of 16 would be next to us within an hour. She moved us to a much quieter booth and the evening was wonderful. It’s that kind of thoughtfulness that makes the experience exceptional. The new menu and new decor are really terrific. My husband had the halibut and I had the scallops and both were perfectly cooked and extremely fresh.
Congratulations on a great relaunch to both the chef and the very attentive waitstaff.

The bar area was a pleasant surprise. Well endowed selection, especially with the American bourbons and micro-distilleries. I will frequent again for cocktails and appetizers.
The food of the main restaurant, both met and in some cases exceeded my already high expectations. Appetizers were complex and moderately portioned, yet extremely tasty (I had Ravioli, Crab Salad and Carpaccio). Main courses of my group were all well received. Portions of the main course were surprisingly sizeable. The lamb chops were adored by my guests. I had the Halibut and it was a work of culinary art and a myriad of tastes. Our sides of the mashed potatoes, brussel sprouts and risotto were equally up to the task.
The wine list is, of course, intimidating in size and I am not a wine novice. Therefore, it is a must to involve the sommelier. He knows all aspects on the list including tastes and budget. I stated that we were only in the $90-$130 range and he recommended several options for me to consider, and didn't make me feel cheap in the process. We had a Hanzel Chardonnay and a Robert Craig Cabernet and everyone was thrilled with the selections. Compared most other top-level Las Vegas restaurants the wine list is incredibly reasonable.
The service we received from the maitre d' was first class. Our waiter, didn't seem as interested in making our experience special...I had to do most of the asking and he did not do the 'selling' that you'd expect from a restaurant with the intricacies of the cuisine. Perhaps the result of serving too many unaware diners living off company expense accounts. Overall, this restaurant was a pleasant surprise in it's down-to-earthiness and calming atmosphere.
Amazing service, attentive and genuinely friendly, our server really took care of us. We ordered Mac and cheese and short rib raviolis... split the seafood platter: oysters, crab, lobster, it was excellent.
We visit Aureole every year while in Las Vegas, since 2013! They helped my husband plan a proposal outside in front of the fountain and made it such a memorable and special day for both of us! We will never visit any other restaurant to celebrate our anniversary or special occasion!
Executive Chef Gregoire is incredible and is now bringing his talents to Aureole. The wine selection is the biggest west of the Mississippi
Food taste was very unique and delicious, a very fancy restaurant with a very wide wine selection from around the world.
It was New Years Eve, so keep things in perspective. The food was excellent. The issues were poor service. The waiter seemed untrained. He may have been a busboy who had to cover someone. Tables were added to dining area. So it was overcrowded. I could not wait to get out of there. For the price, service should be better. The ambiance should be better. I might go back, but only during off hours.
Awesome food and service
Our waiter was terrific. The Caesar salad was very good. My date had halibut which she loved. I had scallops which were pan seared - but not sufficiently cooked to allow caramelization which would have made the dish tastier. It was bland, and not piping hot - must have been sitting in the kitchen. The Brussels Sprouts were very good. The roasted mushrooms were tasteless and disappointing. I dine at Aureole in New York from time to time - the Las Vegas Aureole does not come close to meeting expectations. And, to cap it off, although I told the receptionist my name and the time of the reservations, and she looked down at what appeared to be a terminal as she appeared to check us in, when I got home I received a note from Opentable saying I had never checked in. I should have know - she looked like she was spaced out
I have been to Aureole several times and have enjoyed it every time. My most recent visit was disappointing and will likely be my last. The service was excellent, as usual. The staff are very friendly, attentive and responsive. The decor is unassuming, which can be calming. The cocktails were great, and we really enjoyed our wine. The issue was the food. I am not sure if Aureole still has its Michelin star - but the food would suggest "no". Multiple dishes were dry and lukewarm. This was definitely not the Aureole I know. Unfortunately, with so many great dining options in Vegas, I won't be returning.
Had the Prime Rib special. Was very tender and had great flavor my family member definitely enjoyed the entire experience.

The restaurant looks dated. It was also almost completely empty when we were there, which seem weird for 8pm. We didn't even get to see the wine angels so their thing since we were seated away from the wine tower. The menu seems sparse but the food was very good.
Very disappointed in all aspects of the experience. From sand in the scallops to a poorly trained server. We will not be coming back or recommending this to anyone.
My favorite part of this restaurant is the glass tower in the center of the room where they store the wine. Quite regularly someone suspended from wires would fly up inside the tower to get wine.
Service was exemplary. Seared foie gras was best I have had thus far compared to other restaurants of the same class in Las Vegas and other towns. Pairing with the chutney and fig as an appetizer was an excellent choice. Lamb rack was also cooked to perfection; medium rare and lightly but appropriately seasoned. Dessert menu did not entice me this time around however. Waiter was extremely courteous.
Disappointed this time after previous visits that were better. This is really now best for business parties with huge expense accounts. Was too brightly lit and service was below expectations (in 2018, a waiter in Vegas at a top end restaurant that DOES NOT understand gluten free?? and confuses it with dairy free?? Just not acceptable at the price point. At least the wine fairy fake-picking bottles from the tower on the hour is still there. After all it's Vegas! Much better options elsewhere in immediate area....
