One drink served Slid off the table because the bottom of the glass was wet. Staff did clean up the mess quickly and drink was remade and delivered quickly. Too much time we had to wait between appetizer and main course served. One entrée served which was elk chat was lukewarm steak fillets were excellent and served perfectly at medium rare
Very poor for Beaver Creek. The Hyatt has not been updated in years and the restaurant reflects this. We booked a table for 3 and were seated at a table for 6. There was an empty booth and we asked if we could move to a more suitable table but were told no and that all tables were booked “you must have gotten a last minute cancellation “ even though we booked a week ahead. Food was passable but we had 3 different servers. Ordered an entree to go which took 30 minutes after we finished out meal and paid the bill. Not a busy time, Sunday night so really no excuse for 2nd rate experience at Beaver Creek. I understand the hotel has been sold. Hopefully new owners will bring it up to the standard consistent with a first class resort. At present this is a 3 Star hotel at best.
Food sucked, fish was dry, way overpriced, service was pretentious, cheap overpriced wine list. Tasted like generic Hotel food. I have ate at Michelin Rated restaraunts, and seedy diners, not generally to picky, you get what you pay for. But here was the worst. And in Beaver Creek, in a hotel that 1000.00 dollars a night, it was an embarrassment. The positive was, it was kid friendly.
Our reservation was for 12:15, we made it there at 12:05 and our reservation was given to some one else. After waiting to be seated, our waiter was no where to be found and we waited 25-30 minutes sitting at our table before we met him. Don’t tried the green chile Mac and cheese, it is bad and with out flavor, we let our waiter know and he Supposedly let the manager know but he never showed up to our table. Terrible service, food was just ordinary.
The service was horrable. The food for all 4 peopke (two fish two pork) was BLACK and and over cooked on the outside raw on the inside. The place was not busy so no excuse. Bees attacked our tsble when 1/4 of the way thru the meal and when we moved inside the server took all of our food and disposed of it. Its ok becaused its stop everone fron eating the over cooked meal. With a business dinner you dont always have the chance to return food. DO NOT go to this location. With so many good high priced options to choose from in the area donot choose this one. To top things off the table rocked and the server would do nothing about it. I had to fix it my self.
We ate there 3 times in a week. Twice we all had the halibut and the amazing risotto side. Our last night, we wanted something light and the French onion soup fit the bill. Friends loved it and I enjoyed the caprese salad. Each night was topped off with a fabulous Irish Coffee. Patio and interior seating were nice.
UPDATED REVIEW. THE HYATT SOLD THIS SUMMER TO A PRIVATE EQUITY GROUP. THIS GROUP BROUGHT IN NEW MANAGEMENT WHO DOES NOT BOTHER TO RETURN PHONE CALLS FROM A LONG TERM CUSTOMER FOR A DINING COMPLAINT. THUS, WE WILL NO LONGER PATRONIZE 8100 OR THE HYATT.
INCONSISTENT IN QUALITY. 8100 service and food quality varies. Last time we were there the waiter didn't bother to come by our table for water refills or additional drink orders. The restaurant was not crowded and we have had better service. Food also suffers from the same inconsistently in quality. Finally, we love the patio and it was cleaner than previously where there was the same trash 4 days later. However, there is still food spills and debris on the patio. Management needs to use a shop vac and power washer to thoroughly clean the patio. For a 5 star hotel there is no excuse for these oversights.
I always loved dining here, especially last year during restaurant week. Unfortunately, this visit started with wait staff pouching tables. We were not sure who our server was. The soup was good, but no one came to see how we were doing or to pour wine. The entrée arrived 15 minutes after we finished the soup and was cold. You can't reheat fish that was over salted. The wrong side dish was given. No one came to pick the bill and when we got up to leave, everyone left the floor and never acknowledged us. I will be rethinking this fall's restaurant week. Very saddened.
We had lunch at 8100. Often restaurants at hotels are not notable, but not the case here. The mountain view is gorgeous, and the food is elevated and tasty. We had a grilled cheese (gruyere) with pears and the lobster roll. Both very good, as well as the sweet potato fries. They also have a nice selection of local beers on tap.
Great outdoor patio. 2 star rating only for the views. We had made reservations for 8 but our table had not been set up. Place was not too busy but service was slow. We all felt the same. 3 of us ordered the Elk Ribeye at $40 a pop! I couldn't eat mine it was so salty, other two were too hungry to not finish it. When we all commented on the salt level, servers didn't even seem to care. We even asked if he could have the chef taste that (along with many of the sauces) and he said the chef said everything was fine. We were a party of 8 with lots of food, wine and cocktails and no one seemed to care about our concerns. Place was practically empty at the end of our long and it was easy to find servers since they were all hanging out inside. We have had similar experiences both at breakfast and lunches on other occasions and have decided that the view and patio doesn't make up for the average food (relative to price) and lackadaisical service!

We are a frequent customer of 8100 and enjoy their patio. We ate at 8100 two times in three days. We enjoy the patio which is great. HOWEVER, the biggest complaint is that patio has trash and food debris on it and it is never cleaned up. 8100 needs to invest in a shop vac and a power washer to get ride of the filth and garbage. When we had our first meal there was sugar packets, other trash, and food debris under our table. When we were in two days later, this trash and debris was still under the table we had our meal at two days before. I know this is we sat one table away and I noted these unacceptable conditions the first time.
My wife and I arrived at 6.30 for a 7pm reservation. They were able to seat us right away, which was great. The restaurant was empty, but they sat us right beside a family with four small, loud children. We politely asked to move to a different table. The hostess gave us a bit of a 'tude about it, although she did move us.
It took our server 15 minutes to come over and ask if we'd like drinks. When the bus person brought the bread and olives, we had to ask for plates and silverware. All this was when the service was fine. It was after we ordered our meals that the service really took a dive. Remember, the restaurant is still pretty empty (all of Beaver Creek was pretty deserted on this second to last night of the season).
The appetizers came out relatively quickly - mine the scallops and my wife the spinach chop. They were both very tasty. Another 20 minutes and our mains were brought to the table; my wife had the 5 oz filet and I had the pork chop. However, no sides were brought out (brussel sprouts, steamed veggies and fingerling potatoes). My wife asked for her steak prepared medium rare...it was very rare. We waited about 7 minutes for the server to return and tell us that the sides would be out shortly. In the meantime, we sent back the filet and asked for it to be recooked until medium rare.
To make a long story short, another 10 minutes went by until the filet was returned...still no sides. Five minutes later the server said they were almost ready...just waiting for the sprouts. What? Why not bring out the veggies and potatoes if they were ready? I canceled the order of the sides. No real apology offered. The right thing to do would have been to bring out the sides and comp us. But no, just a flippant "I'm sorry." The server wouldn't even look us in the eye. And the manager, who was conversing with the server the whole time, didn't even bother to come over.
I'd hate to see how bad the service is when the restaurant actually has some diners in it...
Food was very good. Service was a little slow which was ok for us. Waiter forgot 2 things we asked for but promptly got them when reminded. We had a great time but were a little shocked at the bill and the price charged for a 20.00 bottle of wine. Other than that everything was delicious
The service seemed stretched for the night relative to the other night that we ate at 8100. Delays in receptionist (waited 5 minutes), bread (30 minutes after we were seated), taking order and refilling drinks. Food was outstanding - the sea bass special and rocky road mousse were the best!
The restaurant was not as good as last year as the year b4 etc. Once seated, it took awhile to be acknowledged. We ordered our cocktails and should have waited to get the cocktails b4 ordering the appetizer as our appetizer arrived first. The steak was rare and not medium rare. It took forever to flag someone down to take care of it. No apology was offered. It was like the personnel of 8100 didn't care. Not a good experience.
This is one of the few place at the base of Beaver Creek that accepts Open Table reservations for lunch. with a group it not likely you can get a seat in some of my favorite. But I was surprised by the food quality and service and although it's in a very upscale hotel, the price were very reasonable for Beaver Creek.
