Made reservation on Open Table since we had been there once been and it was great. We were going here for a birthday celebration with 7 people and it was hard to find a reservation anywhere in Vail Valley. We got dressed up, got the kids ready, and showed up on time. Guess what? “Oh I’m sorry, we aren’t serving dinner this time of year. I’ve told the manager that it says says we are on Open Table. I guess he hasn’t fixed that yet.”
Okay, that’s the poorest excuse I’ve ever heard. Terrible. Park Hyatt is a large hotel. This is inexcusable.

Kids buffet prices on an was excellent while still offering a fine menu for adults. Barrel aged Manhattan was memorable!

I have eaten each year at the restaurant, but I was disappointed this year. They had only one fish entree (salmon) and they discontinued the white fish option (server did not know why but did others had asked about it as well). The salmon was bland tasting — nothing special.
We had a great dinner with a very fabulous waiter. Too bad the manager that I talk to before dinner was pretty rude about whether we could use a gift certificate. Otherwise everything else was great.

The menu is very limited, fancy food but tasty??... the place is nice, very polished and fancy but if you are hungry and just wanting to have a good nice meal this is not the place you’d want to go. Nice for a romantic, kind of snack type of meal ...
My salmon was burnt on the bottom and when I pointed it out it was addressed immediately.
Service was terrible but food was AMAZING! The server made myself and my guest feel as though we were a bother.
Terrible experience. We were told bread would be brought out however we never received it at all. Another party came in and was catered to while we had our entire dinner without drinks because our server never returned. When we complained to the manager, the response was not appropriate. I will not return!

Dined there for my husbands birthday, we have lived in valley for years and wanted to finally give 8100 a shot. Being a restaurant manager and my husband being a chef we are always looking to try new restaurants! Our server was absolutely incredible, super sweet and very attentive unfortunately we can’t remember her name. As well as the support staff they were extremely attentive and always made sure our waters were topped off. We had great appetizers, we enjoyed the Colorado platter and potato leak soup. But when it came to our entrees we we’re extremely disappointed. My husband got the filet which was cooked to medium rare as he asked but was extremely burnt on the outside which ruined the entire flavor, the grill cook tried to cover it up. I had the smoked whiskey chicken which was over smoked and dry. We would come back again but only for the appetizers, drinks and good service. The grill cook seems like he/she needs proper training or needs to take more pride in his/her food.

We celebrated Thanksgiving here with the buffet. It had a nice array of seafood and meat. They did not carve a whole turkey which I was slightly disappointed by but the king crab and the large shrimp made up for it. There weren’t a ton of vegetables. I would have liked to have seen more but all in all there was something to satisfy every palate.

This was a good value during Vail/Beaver Creek restaurant week, and the service and the ambiance were great. Food was very good, but not completely to die for--thought the salmon entree was a little small and not very flavorful, but it was perfectly cooked. Brisket was very good, although a little less seasoning salt would have been nice. Mussels and corn chowder were excellent starters.
Unfortunately they seemed to be out of everything we ordered, and the price of our drinks on the menu didn’t match the price on our bill. We come every year for restaurant week, but this year was disappointing. The $20.19 prix fixe wasn’t as good of a value as the past two years.
Wonderful dinner at 8100! They have a smoker on the back patio and they were cooking the "brisket" all day outside and we couldn't wait to try it for dinner. There were 3 of us and we all ordered something different and shared!
We were not guests at the Park Hyatt in Beaver Creek, however we enjoyed eating breakfast, lunch and dinner while in Beaver Creek.
Outstanding could not be happier with everything
Dismal fall from its past excellence. Summer menu is protein heavy and very one note. Soup was a starchy mess (so said our guest who is a food scientist for a major food company).
Waiter addressed us and 1 hour later gave us the bill. Why? Despite having a reservation, he had a really big table of drinkers to care for and knew where his tip was coming. His expeditors did the heavy lifting and they were awesome. Otherwise, zero service. Literally.
More concerning is what's going on at the Park Hyatt and 8100. The hotel has lost its soul (and identity) with a makeover that screams 1980s disco bar. This vulgar display of FOMO is literally the focal point of their hotel lobby. So, if you're a swinger ready to drink, hop on over. If you're a family who is used to the days-past of their gorgeous mountain-luxe spaces that welcomed, just keep moving.
On to 8100: The chef (and I use the term loosely) is asleep at the wheel -- nothing is on pointe which is sad because 8100 used to be a sure thing in past years. Even their burger which was always a safe go-to is AWFUL. I remember days of from-scratch pasta and inventive cuisine. Nope. Just tired re-treads of whatever was on a hot menu last year, minus the carbs.
Terrible! Most dishes on buffet were cold(mac n cheese, salmon, vegetables...). Salad limp, ran out of dressing, appetizers- empty platters, ran out of wine that we had selected,. We will never go back. What a shame for such a beautiful spot.
You get what you pay for - overpriced mediocre hotel food. We sat outside which was fine, but had a few comments to make about that experience: Colorado is a state that has around 300 sunny days a year, and yet the outdoor furniture that sits in the direct sun is either plastic or metal. Because of their materials the tables, chairs, and silverware were so incredibly hot that the experience was ruined before our mediocre food had even arrived. 10/10 would not recommend to a friend, and honestly am confused why this place is associated with the Hyatt when the quality of food is so low. I could've made a better, less expensive, meal using ingredients from City Market.

Food is fantastic!! Halibut, Beet salad, loved it all. Great options for vegetarians too. Setting is lovely in the summer. It’s one of my favorite restaurants in the valley especially in the summer!!
We went on July 4th. Loved the outside table, music and fireworks. The food was buffet style and was mediocre. The staff seemed to be overwhelmed with the amount of people there. Outside these special circumstances, 8100 is always wonderful.

Bass for the band playing was too loud and pointed toward the patio. Music level was good except for that.
I loved my meal and the price of the meal and wine was very reasonable. My friend had brisket which was not listed as smoked, in which case she would have ordered something else.
Cauliflower steak was truly incredible. A vegan’s dream dinner!
Everything, from the 5 minute wait for the hostess to stop chatting with the cooks, to the horrendous raw steak covered in what appeared to be Heinz gravy was awful. I can honestly say I’ve never had such a bad experience dining out. But at least the waiter completely blew us off, leaving his co-worker to have to cover our table.
Seriously horrid and expensive birthday dinner.
