This was a good value during Vail/Beaver Creek restaurant week, and the service and the ambiance were great. Food was very good, but not completely to die for--thought the salmon entree was a little small and not very flavorful, but it was perfectly cooked. Brisket was very good, although a little less seasoning salt would have been nice. Mussels and corn chowder were excellent starters.
Unfortunately they seemed to be out of everything we ordered, and the price of our drinks on the menu didn’t match the price on our bill. We come every year for restaurant week, but this year was disappointing. The $20.19 prix fixe wasn’t as good of a value as the past two years.
Wonderful dinner at 8100! They have a smoker on the back patio and they were cooking the "brisket" all day outside and we couldn't wait to try it for dinner. There were 3 of us and we all ordered something different and shared!
We were not guests at the Park Hyatt in Beaver Creek, however we enjoyed eating breakfast, lunch and dinner while in Beaver Creek.
Outstanding could not be happier with everything
Dismal fall from its past excellence. Summer menu is protein heavy and very one note. Soup was a starchy mess (so said our guest who is a food scientist for a major food company).
Waiter addressed us and 1 hour later gave us the bill. Why? Despite having a reservation, he had a really big table of drinkers to care for and knew where his tip was coming. His expeditors did the heavy lifting and they were awesome. Otherwise, zero service. Literally.
More concerning is what's going on at the Park Hyatt and 8100. The hotel has lost its soul (and identity) with a makeover that screams 1980s disco bar. This vulgar display of FOMO is literally the focal point of their hotel lobby. So, if you're a swinger ready to drink, hop on over. If you're a family who is used to the days-past of their gorgeous mountain-luxe spaces that welcomed, just keep moving.
On to 8100: The chef (and I use the term loosely) is asleep at the wheel -- nothing is on pointe which is sad because 8100 used to be a sure thing in past years. Even their burger which was always a safe go-to is AWFUL. I remember days of from-scratch pasta and inventive cuisine. Nope. Just tired re-treads of whatever was on a hot menu last year, minus the carbs.
Terrible! Most dishes on buffet were cold(mac n cheese, salmon, vegetables...). Salad limp, ran out of dressing, appetizers- empty platters, ran out of wine that we had selected,. We will never go back. What a shame for such a beautiful spot.
You get what you pay for - overpriced mediocre hotel food. We sat outside which was fine, but had a few comments to make about that experience: Colorado is a state that has around 300 sunny days a year, and yet the outdoor furniture that sits in the direct sun is either plastic or metal. Because of their materials the tables, chairs, and silverware were so incredibly hot that the experience was ruined before our mediocre food had even arrived. 10/10 would not recommend to a friend, and honestly am confused why this place is associated with the Hyatt when the quality of food is so low. I could've made a better, less expensive, meal using ingredients from City Market.
They had a buffet that day, so the menu was limited.
Food is fantastic!! Halibut, Beet salad, loved it all. Great options for vegetarians too. Setting is lovely in the summer. It’s one of my favorite restaurants in the valley especially in the summer!!
We went on July 4th. Loved the outside table, music and fireworks. The food was buffet style and was mediocre. The staff seemed to be overwhelmed with the amount of people there. Outside these special circumstances, 8100 is always wonderful.

Bass for the band playing was too loud and pointed toward the patio. Music level was good except for that.
I loved my meal and the price of the meal and wine was very reasonable. My friend had brisket which was not listed as smoked, in which case she would have ordered something else.
Cauliflower steak was truly incredible. A vegan’s dream dinner!
Everything, from the 5 minute wait for the hostess to stop chatting with the cooks, to the horrendous raw steak covered in what appeared to be Heinz gravy was awful. I can honestly say I’ve never had such a bad experience dining out. But at least the waiter completely blew us off, leaving his co-worker to have to cover our table.

Terrible service. Understaffed. We waited 30 minutes to order. Wait staff was hardly present. Had to ask for everything. Food was only average.
Terrible food in terrible service absolutely the most disgusting meal we have ever had in Beavercreek the shrimp cocktail to start with was not clean properly the salads were mushy the steak was cold and rare and the trout was absolutely disgusting . Such poor service I brought it up to the waitress attention that the shrimp cocktail was not good and her response was oh I’m sorry your dinner should be arriving soon three people $300 I would’ve paid $600 if the food was decent but it was absolutely terrible I’ve been coming to Beaver Creek for years and tried so many restaurants and they’re all great But whoever reads this please don’t go to the Hyatt restaurant it’s absolutely subpar don’t waste your money

Lamb was extremely under-cooked and almost had the flavor of lighter fluid.
No one touched our table for at least 25 minutes. It then took another 15 to get our first drinks. The food arrived cold, twice. The chef was throwing a fit in the kitchen and it was visible to everyone. Food runners were just standing around the window twiddling their thumbs and chatting. The only decent employees in the restaurant were the bussers, who did an excellent job and were very polite. The manager was inept and unable to handle a half empty restaurant. Terrible.
What a wonderful dining experience!!! Service was excellent, the food was amazing. Loved the mountain side atmosphere. My steak was cooked absolutely perfectly! Would highly recommend.
Waiter Was fantastic... cauliflower steak was out of this world!!! Wine perfect. The expensive snow crab was tasteless and seemed frozen. ThAt being said it was the only disappointment.
Great service however low value given price and food quality. Steak was exceptional however trout and salmon dishes were fair.
Recognizing this is Beaver Creek, this establishment is quite pricey for what you get. Appetizer plates, associated silverware, and empty glasses were left on the table for the entire meal. Food was ok but not great. Over $200 for two adults and two kids (who split a kids meal) with one cocktail and one glass of wine. Will not return unless it’s the lunch menu. Disappointed.

Great outdoor seating by the slope at the base! We came in for lunch on a beautiful day after our morning runs on the mountain.
Friendly service and food is decent. I ordered tomato soup and lobster tail salad, my husband had the Smoked Brisket Chili and Black Diamond (Kobe) burger. We enjoyed it.
It’s a nice place to chill, have a glass of wine and people watching (coming down the slope) while enjoying a meal here.

We had a good family dinner at 8100 Mountainside. The kids buffet is a great touch and also a great value. Adult prices are a bit steep, but what you would expect in Beaver Creek. We would definitely go back and the trout is amazing!
Well unfortunately we didn’t make it to the drinks and appetizers we ordered as we waited for more than 30 minutes and nothing came. We never saw our server again to check and no one else checked in. The toughest part was that there were SO many staff members around chatting with each other and we were one of two tables in the dining room. Sat down at 5:45, left at 6:25 and only served water and bread.
The ribeye skillet with Brussels sprouts mushrooms rice and mash potatoes was outstanding! Two fed 6 adults. Service was superb! Loved the ambience!
Excellent meal, great wait staff. I order the elk and it amazing, a portion large enough to share. The desserts looked great but we were too full to enjoy.

Great spot to get off the slopes and away from craziness of Powder 8 or Mid mountain restaurant. Kids meal price was 1/2 the price of kids meal prices mid mountain. Lobster salad was fantastic. Wood burning fire place added a nice touch and smell. Good views of the slopes.

Food was tasteless, service was very slow, options from set menu very limited. A poor overpriced event. Should stick to a la Carte menu. Not a repeat for New Year’s Eve!
