1888 Chop House - Fairmont Banff Springs Ratings and Reviews
This is the second meal I've had at 1888 in the past 18 months (Summer/Winter visits to Banff). We had the same excellent server both visits; staff are knowledgeable and extremely competent. The meal was overall better the first time. While the majority of our meal was very good, my wife and I split a Caesar salad, which turned out to be like four bites each. In other words, had they added both halves together I think it would have been a half order. This felt cheap when considered against the cost of the meal and wine and champagne our table of four ordered. Not a huge deal, but it was definitely out of character compared to the first visit and bothered me enough to write about it.
This restaurant came highly recommended but fell a bit flat. Our server was not up to what I woukd expect in a high end steak restaurant such as this. She was not very flexible (trying to work around a picky child eater) and was hard to find when you needed something. And my filet steak was terrible. It was dry and had a very strange flavor - i should have sent it back but was too tired to wait for another one. Our server never asked if everything was ok with it either - i only ate one bite. My husbands steak (the ribeye) was very good though. Sides were just eh nothing special. There must be better places in Banff for a steak. The only plus to this restaurant was convenience as it was in our hotel.
Our first time eating here and first time staying at banff fairmont. I would recommend this place to anyone. Our server Christopher was great, extremely knowledgeable about the menu and especially the drink menu. The food was amazing and the drinks were too. We went for our anniversary and it was perfect.
We started with champagne perfectly selected by our server, then had an excellent crab cake and average Caesar salad. Then came the Wagyu beef tenderloin and bison tenderloin served with a duck fat butter on top. Both were unbelievably good and cooked to perfection. Some of the best meat we've ever had. Our sides were golden beets, wilted greens, and baked potato, all were good. Finished with an apple pie that was remarkably large but tasted average. We also had perfectly blended cocktails throughout our meal. Overall the whole meal was outstanding; the service and quality of meat is what blew us away the most. Highly recommend!
Although the restaurant is beautiful we were really disappointed by our first and only visit. The service was fine but we waited a long time for our meal ... over an hour between salad and main course. When our steak and baked potato finally came they were both lukewarm....the potato could not melt the little bit of butter I placed on it! I have rarely ever returned anything but I did return my baked potato. I kept my steak because it had taken so long to receive. It was cooked perfectly but barely warm. My second baked potato was slightly warmer but not by much. In the end my meal was courtesied but I didn't come for a free meal , I came for a superb meal which I would have been more than happy to pay for. We will not return.
WOW!! What a fantastic restaurant, the service, the food/ wine everything is beyond what you hope it to be.
The wine list was incredible covering all the bases and then the port and the whiskey and the scotch, heaven on earth for a foody like me.

They were informed it was a milestone birthday, 50th to be exact, no acknowledgement about that, the Caesar salad was runny and tasteless, the wilted greens was bland, even the shrimps that I added on my salad was bland and no taste on it, for the amount they charge for food, it’s ridiculous, the worst was we have to wait for more than an hour for our food to artive.
We were not staying at the Fairmont, but in the town of Banff. We had a large group that required two taxis. We ate a large meal and had wine as well. The food was good, but the restaurant was not super busy and felt the waitress could have been more attentive to our table. We had received a voucher for a ride in the taxi back to town when we had visited another restaurant at the resort and actually didn't spend as much money so I assumed with the cost of our bill they would be happy to provide transportation back to town....a whooping $15 American. They refused and sent us on a goose chase to try to get someone to approve the voucher. Hello.....we came up from the town and spent a LOT of money at the facility. They wouldn't even have the shuttle service run us back to town because we were not staying at the hotel. I think it was shameful that they were not able to show their appreciation for leaving the town ( with tons of options just as good ) to solicit their hotel. I would NEVER do it again and if you are not staying at the Fairmont don't bother making the trip....
Great restaurant in a stunning hotel. Food and service top quality as you'd expect from a hotel of this calibre. Nice way to enjoy a bit of the hotel if you are not staying there. The champagne trolley is a nice touch. It is not cheap though especially with wine.
I wasn't feeling well on the night that we had reservations, so my tasting was limited. My husband's experience makes up the bulk of the review. It probably took our waitress 20 minutes to bring out the bread, and once received, it wasn't very memorable. I started with the iceberg wedge salad. It was very hard to eat. The blue cheese was in chunks, not crumbles, and it was just too big to try to eat. I also got the mashed potatoes, which were very good. We have heard rave reviews about Alberta beef. I was so upset that my stomach couldn't handle a steak, but my husband said that I didn't miss out. He said the steak was nothing special. He also got the macaroni and cheese. We both agreed that it wasn't up to par either. We got the cheesecake for dessert, and it was very good. My husband got the French press coffee, and he said it was phenomenal. The restaurant was not very busy, but the waitress was pretty much non-existent, and service was extremely slow. Will try another steakhouse next time we visit the area.
This was by far the best restaurant I have been too! We shared the tomahawk steak and it was cooked perfectly and was the best steak I have ever had! A must try for an appetizer is the pork scallops! Our server Nicolas H was spot on and was by far showed us the best time we have ever had at a restaurant!
We had an excellent birthday dinner here. Everything was delicious. The ribeye steak was cooked perfectly. The steak tartar was delightful, the best my Mom had ever had. They have gluten free bread options. The cocktails are wonderful- especially the cucumber-hisbiscus vodka collins.
1888 Chophouse was a great overall dining experience. My husband and I went there for his birthday and he really enjoyed the dining event.
I requested for a table by the fireplace and I really appreciate that they granted this. A little irk is that I felt like the table across from us was too close. There is a good distance but the table location just felt a little intrusive when you want an intimate dinner.
The food was amazing! One could tell that the ingredients were fresh and of very good quality. The dishes were top-notch; they've fallen just a tad below our expectations but I think this is because we just recently dined at another place that set the bar pretty high. 1888 Chophouse wins the "best-sourced ingredients" category in our book though. I don't think I've had very good ingredients in my meal for a long time.
The staff were all very knowledgeable and personable. They definitely add to the dining experience.
All in all, it was a great evening and I would definitely recommend 1888 Chophouse to friends and family. We will be back to peruse the whiskey flights selection.
Second time dinning here, all tough the service is excellent and the side dishes were wonderful we had to send both our steaks back. I actually had to send mine back twice. For a steakhouse that’s expertise should be steak, to not know how to cook a steak to a persons preffered liking is bad. Especially a $50 dollar steak. I do have to say though the manger apologized profusely and we weren’t chaEyes for them.
Adam was our waiter and he was incredible. From the second we got their and the hostess greeted us to the moment we left we were treated outstanding. Tonight we actually went to another restaurant downtown (chucks). It was so busy and loud and the waiters were so busy. We were looking for a bottle of wine to order and finally got a chance to meet our waiter and ask him. He barely looked at us and said “that one is not available” and just walked away while we were trying to decide on another one and actually in the midst of asking another question. Maybe he had a bad day, maybe he just needed a break...either way we decided to come back to the hotel we were staying at and try the steak. It was an unforgettable experience from start to finish. Adam was amazing and the food was outstanding. The best part was the ambience. It was calm, relaxing, and we had a comfortable seat by The fireplace where we could talk and hear each other unlike chucks.
Thank you to the Banff Springs for always making the experience so memorable.
Soooooo good. My husband and I shared the 40oz tomahawk steak and it was amazing. We had the golden beets, Mac and cheese and tallow mashed potatoes.. everything was sooooo good. We have eaten at a lot of places and are quite picky about our food.. this was the best meal I’ve ever had. Expensive but so worth it. Amazing
Excellent dinner - my wagu tenderloin was to die for. Loved the champagne cart to greet you but bring your wallet as a glass of bubbly is very pricy here! Extensive wine list with some good half bottles so take a peek and you may wish to try two different wines with your meal via half bottles. Excellent professional service.
