Adam was our waiter and he was incredible. From the second we got their and the hostess greeted us to the moment we left we were treated outstanding. Tonight we actually went to another restaurant downtown (chucks). It was so busy and loud and the waiters were so busy. We were looking for a bottle of wine to order and finally got a chance to meet our waiter and ask him. He barely looked at us and said “that one is not available” and just walked away while we were trying to decide on another one and actually in the midst of asking another question. Maybe he had a bad day, maybe he just needed a break...either way we decided to come back to the hotel we were staying at and try the steak. It was an unforgettable experience from start to finish. Adam was amazing and the food was outstanding. The best part was the ambience. It was calm, relaxing, and we had a comfortable seat by The fireplace where we could talk and hear each other unlike chucks.
Thank you to the Banff Springs for always making the experience so memorable.
Soooooo good. My husband and I shared the 40oz tomahawk steak and it was amazing. We had the golden beets, Mac and cheese and tallow mashed potatoes.. everything was sooooo good. We have eaten at a lot of places and are quite picky about our food.. this was the best meal I’ve ever had. Expensive but so worth it. Amazing
Excellent dinner - my wagu tenderloin was to die for. Loved the champagne cart to greet you but bring your wallet as a glass of bubbly is very pricy here! Extensive wine list with some good half bottles so take a peek and you may wish to try two different wines with your meal via half bottles. Excellent professional service.
Great place for a romantic dinner, fairly quiet, great atmosphere and service. Steak was good although not the best I’ve had in Banff. Had lobster with the steak and it was served cool and was pretty small. One of the most expensive meals I’ve had, but for a special occasion, I would go again
Went in with my dad and got served by Alissa (if I remember her name correctly... tall and blonde). One of the best servers I’ve ever had, beyond polite and always smiling, very knowledgeable and was more of a suggestive seller not a pushy one which was great. Amazing experience!!
Really neat location in the Fairmont Banff Hotel. Server was nice but she spoke really fast and was very difficult to understand. Both wife and I had the filets which were ok but appeared less than the stayed 6oz size. Sides of mac & cheese and baked potatoes were ok. Overall a nice meal but probably wouldn't do it again for the price. If you are not staying at hotel be ready for a $35 valet charge if you don't park your own car.
1888 is by far one of the best restaurants in the Banff area! We always make it a habit of eating there when visiting. You will not be disappointed ... the food is exceptional, the wait staff is exceptional and attentive and the atmosphere/view is exquisite.
At the Fairmont Banff Springs Hotel, a steak house with good atmosphere and attentive, pleasant service. Our meals were good. Fine beef and grilled fish, and great sides.
On the other hand, no table salt and pepper, an affectation in my opinion. Asked for salt and was supplied with a small bowl of large crystals...

Went here while on vacation, staying at the Fairmont Banff Springs. Pricy meal but WOW, worth it. Would highly recommend any potato sides, the foie gras, and the ribeye (massive, perfectly cooked and the best sharing dish ever). Our server was amazing and so sweet, very attentive, and made excellent recommendations - love her nearly as much as the food! The cocktails are delish, although the classic martini, no vermouth, blue cheese stuffed olives was my go-to. If you're in need of a special occasion spot, this is it! It's cozy but elegant and the food, ugh amazing!!!!
This is our second experience dining at 1888 and fully met the high expectations that were set during our first visit! Food was excellent and since they were out of the wine we originally ordered, the server got us an even nicer bottle for the same price. Excellent! Will be returning! (Pictures is the mixed seafood grill... superb!)
We were celebrating a new job so we wanted somewhere special, we were not disappointed. The atmosphere, ambience and service far exceeded our expectations. Our server Alyssa was very knowledgeable and helpful with our selections. We had the Porterhouse steak for two and it was one of the top five steaks that we have ever had. A very enjoyable evening out!
I like this restaurant but my issue with it is that it was my husband's birthday and I notified them in advance to get a nice table (ie by window or fireplace) and that didn't happen. In addition, almost any restaurant I've been too gives a complimentary glass of champagne or dessert for birthdays, but not here. I've been there right after I got engaged and receive lovely free chocolates, but this time nothing. We ordered two glasses of champagne, wine, mains and a dessert. The creme brûlée was reheated as it was partially cold in the middle. Sides and main were quite good.
The entire experience was wonderful. The food was superb, the service impeccable. It's definitely not you average dinner. If you plan on buying a bottle of wine and dinner for two people, plan on spending at least $300. But it was worth it for a special occasion (in our case, we were on our honeymoon). And perhaps also just to say you have eaten there.
1888 is the Chophouse for the Fairmont Banff Springs Hotel. It is pricey and has the feel of a elegant steakhouse. The filet, and salmon were very tasty. Most everything is ala carte so the meal is easily $100 a person for the basics. Service was good and the meal was delicious.
We were spoiling ourselves with a night at the Banff Springs Hotel and decided to further spoil ourselves with dinner at the Chop House. And we were indeed spoiled. The room is dark and quiet with well-spaced tables so it is very easy to talk. Given the location it's too bad that there isn't a nice view, but that's a pretty minor quibble. Service was very polished but also friendly and approachable, a tough balance. The food was very good, as it should be in such a place. Nothing cutting edge, and the focus is on beef and other proteins as you would expect. Also as is typical for meat-focussed restaurants, salads etc. are good but not inspired. I had roasted tomato soup and my wife a compressed watermelon salad with mixed greens, both good but done better elsewhere. Our part-Wagyu striploins were done very well and the vegetable sides were nicely executed and rich (beef tallow whipped potatoes!). My dark chocolate pate for dessert was competent if a bit dated, but a good match for my real treat of a flight of 4 ports ranging from 10 to 40 years old. Which reminds me, the wine list is extensive and pricey but reasonable bottles can be found (also unreasonable bottles if that's your thing).
1888 Chop House is a steak house that does what it should well.
Food and service was fantastic, winelist was exceptional especially for a corporate controlled restaurant. It is refreshing to see a large hotel chain allow their premier restaurant to have free reign on food, wine and liquor items. A special restaurant in a classic landmark hotel. Will be back again! The food was delicious and beautifully presented. Best lamb chops I have ever eaten. My husband got the free range chicken and it was amazingly tender. It was our 58th wedding anniversary which the lady who seated us acknowledged. But that was it...nothing from our waitress. I had the creme brulee for dessert, which was delicious, but thought a Happy Anniversary along with it would have been nice.
