Everything we wanted for our wedding dinner. The individualized menus were a very nice touch. Our server, Adam, was awesome with his in depth knowledgeable of the entire menu and professional demeanor. The Wagyu steak was the best piece of meat we've ever tasted, bar none. 5/5 Stars.
This place has it all figured out. 5 star steak place. Even my vegetarian girlfriend loved it. Our service could not possibly have been better. 5 star shoutout to Adam for looking after us. He represented the restaurant well! (So well we remembered his name!)
The crab and daikon appetizer was excellent. Very fresh. The filet was very very good

Everything was great, except the group of housewives that thought it was cool to play music from their phone. Legit played music for 30-40 minutes on their phone while they ate. At $435 plus $150 tip, I'd say that's a little uncalled for. Usually not the type to complain, but the staff didn't do anything about, so I'm letting you know. Great food though
Celebrating 7th anniversary and an engagement.
Bison tenderloin had outstanding flavor and tenderness, ordered medium rare minus (between medium rare and rare).
Food was okay, service was excellent as per any Fairmont Hotel Dining. Would have expected a better food experience to match the price.
Great food in a lovely setting. We were seated at a table in the middle of the room and asked to be moved, as was difficult to hear with ambient noise. They moved us asap and new table was great. The waiter was very attentive and asked often about our wine selection. We have quite a bit of knowledge about wine, and were enjoying reviewing the extensive list. We had to keep asking for more time, but that is a small thing! We did send a message that we were celebrating a birthday , but no mention was made of this by the wait staff. We still enjoyed ourselves immensely.
Every dish was outstanding. I tried Bison for the first time in my life and it was an excellent piece of beef, tender, no fat and full of flavor.

35th Anniversary. Booked about a month in advance and asked for a special table. We were seated in a cramped corner next to a party in dirty tee shirts and a table for of loud children. We dressed for a premium steakhouse event and were guests if the hotel. They did accommodate our request to move to an empty window table. Place was half empty so no reason for this issue. Oysters were great, the rest of the food less than average at top dollar price. Filet mignon were dry even though rare and wrapped in bacon. Horrible extra “ char” butter was tasteless and looked scary - pic attached. Lobster Mac and cheese had no lobster, our local diner makes better. Mushroom side was not cooked enough or seasoned. Ice cream dessert was ok but the hot sauces congealed immediately on the ice cold dish. Should have done a second dinner in the Waldhaus which was very nice. Not worth the high price, don’t waste your money. Husbands second drink took so long we were done eating and at this point the restaurant was nearly empty.
Update 9/16 - manager called to apologize. That’s it. Offer to come again, but who would pay this price twice?

Sea bass was delicious. They need a o add some additional fish dishes.
The food was only okay, the waiter was okay and it was very expensive.
We were very much looking forward to our dining experience, as we had checked the menu and saw the price point and expected food that was top notch. Unfortunately, we were both disappointed with the steaks that we ordered. I ordered mine medium, it was red and bloody in places and heading towards well done in others and it just didn't justify the steep price tag, it tasted like I'd cooked it at home. The starters, sides and the service were all excellent. But for the price, I expected much, much more from the steaks. We can get better at a chain restaurant back home in the UK for less than half the price. All in all, a huge disappointment.
Tried several local restaurants over a 10 day visit to Banff area as well as 3 hotels. 1888 Chop house was our absolute very best meal of the trip. Excellent facility, service and food and wine! Food was well cooked and presented. Service was very professional. Excellent wine list.
Everything was perfect! The food, service and ambiance.
We needed to ask the staff to change the table because a big group right besides us started a big party. We could not hear each other at the table. I made a reservation a week ahead, not last minutes reservation. But I don’t understand why they assigned our table there. It was business dinner, and ruined all.
Excellent food e excellent service but very expensive
Amazing food and well trained service, we would definately go back. My wife and I tried the waygu steak and it was the best steak we've had!

Horrible experience, the waiter was irritated that the 6 of us ordered water to start. He then asked us 3 additional times if we wanted drinks and we said no. My husband asked if we could split a salad and the waiter literally rolled his eyes at us, we should’ve left then. It took forever to get any water refills and they would only fill them half full. We had very high expectations and we were very disappointed. The table for 6 of us cost us over $500 and the service and food didn’t replicate that. I would highly recommend not wasting your valuable time or money there.
Our salads were brought before my drink was served. It came five minutes after my husband received his beer. The Caesar salad was the most tasteless one I’ve ever had. Croutons could have come out of a box.
However, the bison tartare was excellent.
Went for wife’s bday, spendy but was expecting that. Service was ok food was good but not spectacular. All in all what you would expect from banff springs hotel ....

Food and Service was excellent. Our server Jeff was amazing. The dishes were unique and very well prepared. Nice atmosphere, but our table for 2 was a bit cramped next to the wall. An overall great experience in a great location!

This is a great place. It almost has the best stake in the world! You will receive world-class service. This is definitely a place where top executives would go.

Honestly I was very underwhelmed. The service was fantastic, the wine selections were excellent, and the appetizers were quite good. However, the meat(!!!) was very underwhelming. I got the rib eye and my date got the filet mignon. Both were not cooked well. I had to send my rib eye back as it was over cooked. When it came back it was rushed and grey outside with a rare inside (asked for medium rare). It was very chewy for a rib eye. The filet was over cooked but tolerable as it’s a forgiving piece of meat. Very disappointed as this was supposed to be THE meat spot in Banff.

My friend's elk was superb. I appreciated being served a mini Coupe Denmark on request. It was was very expensive so very much for a special occasion. I was disappointed by the range of wines by the glass.
Lobster mac and cheese was phenomenal how ever for the price it could have had more lobster. Sea was not great and had way to many things going on with crossing flavors. Fois groi was extremely salty and not pleasant to eat and lobster was not prepared appropriately leaving many unpleasant things to eat. Also it was very cold. Filet mingon was great little chewy. Bread was also amazing. Definitely not worth the price you pay. And how ridiculous to charge $3 for water. < which was nothing special. Just a complete money grab. Luke our server was very understanding and apologetic towards our complaints and was also very nice. Overall the experience was good but food was not. With the exception of the mac and cheese and filet.
Great meal and fun way to celebrate my Birthday. Good service and would definitely recommend.
