Menu was more limited then it was 1 1/2 years ago. Not enough choices
We were excited to dine at the restaurant but very disappointed that the restaurant seemed closed and instead we were routed to a banquet room in the basement lower level with a buffet for Mother's Day. It seemed unfair and improper to take reservations via Open Table for a product that wasn't available. We felt duped.
Excellent rib eye. Small menu. Good drinks, but expensive.

We went on a night that was bad for the restaurant. The fryer was down, the salad dressings froze and they had no dippy cheese for the pretzel log. It made ordering tough. I got a burger - which was cooked to perfection. The only thing I didn't like about it was it was a burger with cheese and arugula and nothing else... I needed some bacon or a tomoato -but other than that it was really good. We sat outside because it was gorgeous and the noise level was high because we were right along the road so it was expected. Our server was okay. She looked like she was high and went MIA for a good 20 minutes -but she was nice. Overall -ill go back.
First time here. Great service. One of the best steaks I ever had. Apparently the fryer broke and the manager called me before our reservation to give us a heads up. Will definitely go back again! Best dinner we’ve had in years!
Ask Jeff the Chef for the vegan/vegetarian experience. Make a note with your reservation.
We eat here occasionally, and know what we like on the menu. This visit, the server was very inattentive and the service was so bad as to make the experience frustrating and disappointing. Waited very long to order drinks, and even longer to get them. She brought an extra Caesar salad by mistake but said we didn’t have to pay for it (duh.) Never checked on us throughout. I asked for a sparkling water when my dish arrived; after ten minutes i went to the bar and got it myself. About five minutes later she brought over a glass of wine which she mistakenly thought i ordered, saying that the bar was crowded so service was slow. I had seen this glass of wine sitting on the bar when i went for my water fifteen minutes before! Final straw was her inability to take two credit cards and get the right items on the right card (we had told her we wanted to do this early on.) Food is good, but this service was the worst.
Fun place if your whiskey-crazy. OK menu, not romantic. Our waitress was not rude, just tired/lazy/apethetic, which took away from the experience
Our waiter messed up a good portion of our food order, brought salads after the main course had been served and seemed very distracted most of the time he was serving our table. We would only recommend the restaurant because the food is delicious.
The steak was perfectly cooked, as was the hasselbeck potato. The Cesar salad didn't have romaine, which we found odd, but the apple pie dessert was the best we have ever had. If we are ever in Carlisle again, it will definitely be on our schedule!
Anniversary dinner was delicious, but slow service and no special touch for anniversary though it was in the reservations.
I've tried this place several times since it opened, and every time something's been screwed up. Having not been here for over a year, my wife & I decided to try it again to meet another couple before a show. Our reservation was for 6 pm, the show was at 7:30 pm, so this would seem to have been enough time. But our server was unbelievably incompetent. He mistakenly scratched out one of our orders, then tried to get the kitchen to fill it much later. The result was that we waited over an hour for our food to arrive, and when it did, it was obvious that 3 of our dishes had sat around under heat lamps while the missing order was being made. The server ignored us for most of the evening, only showing up a couple of times to apologize. At one point he asked if there was anything else he could do for us--we said, yes, bring us something to eat. He said he'd bring us an appetizer on the house--but this never came. In the end, the manager comped us the whole meal--but by then we were 20 minutes late for our show. The place wasn't actually very busy--several tables were empty--so it's hard to imagine how it could take so long to prepare and serve such mediocre food. Whiskey Rebellion is a decent space with a decent concept (emphasis on whiskeys and PA-centric food), but the prices are ridiculous. I could eat better food for less in DC or NYC. But the major problem here has always been service and the slow kitchen.
Coming from out of town to meet friends it was my first time. Food was really good some very cool twists to classic dishes. Great cocktails and ambiance as well.
Servers wonderful and food best in town
The Easter Buffet was terrible. The meat was dried out, the vegetables were overcooked, the desserts looked like grocery store purchases, the presentation was messy (didn't clean up drips, etc.). I have eaten at the restaurant many times, and it's good. The brunch was so disappointing. I won't sign up for that again.
This was our first time dining at 1794 Whiskey Rebellion and it was a fantastic experience. We had a reservation for Easter Sunday and at no time did we feel rushed. Chef Jeff Utzman circulated throughout the dining room asking guests if all was good. The wait staff was very courteous and helpful when asked questions. The area was very clean and not crowded. We were so impressed I made reservations for Mothers Day when I got home.
The staff was being very attentive and it was very much appreciated.
This place is just ok. Not bad for a quick bite. Had the shepherds pie: just ok. Very little meat and very salty.

Not a lot of foodie options in this town so we booked the best on Yelp. Our waiter Ryan was the highlight of the evening. He was personable and friendly. It was prime rib night so that is what I got for dinner. My husband got the Rib-Eye(just prepared differently). This is a college town so don't expect high end stuff. It was our half way point between Charlotte,NC and Cape Cod.
Let's start by saying that my fiancé and I wanted to try this restaurant since the minute we moved here. I mean how can you not when you drive past and see this little rustic outdoor escape with strung lights & whiskey barrels for tables all in the heart of downtown Carlisle. Its attached to the front of a hotel too, how genius. The inside was classy yet cozy and the bar area was very clean, however, we, of course, chose to sit outside because of that atmosphere I just described plus perfect weather for it. I forgot to mention there are heaters outside that keep you very warm even when the night gets chilly (they are big). They aren't hard to look at either, they fit in with the rest of the decor very well. Our service was very prompt from beginning to end, our waitress was very knowledgeable and personable, and the food was delicious. The menu had something for all. Some items were more expensive but fine dining is worth it let me tell you. If you are over 21 like we both are there are plenty of options to choose from there as well. I had a fruity seasonal drink for only $8 and it was one of the best drinks I have had in a long time that actually tasted like the ingredients listed, my fiancé on the other hand had a 20+ year old aged glass of knob creek for a whooping $41 a glass (I know, I know that's steep but it's one of the main reasons he chose this place for his birthday, he's a bourbon, whisky, scotch, craft beer, etc. connoisseur). We had an amazing night and the price was by far worth it. Don't miss out on this gem.
We booked this restaurant through Open Table and were able to get right in on a Saturday night at 730pm. The food was really good, however, the prime rib was overdone a little...filet medallions were great as was the mushroom appetizer. The chef came around to every table to greet and ask if we had any questions...a very nice touch.
Really enjoyed the mushroom appetizer and the steaks were cooked an seasoned perfectly. Our Server was very helpful, pleasant and attentive. Really enjoyed the dinner.
Whiskey Rebellion did not have our reservation. We will not deal with them or you again.
The prime rib was top of the heap.

I noted in the reservation we were celebrating 3 birthdays in our group of 7 but the restaurant did not acknowledge the event. The appetizers were spot on. The entrees were average, therefore making the prices high. I would absolutely go back for Happy hour!

We made a 6:30 reservation, we arrived 45 minutes early but our table was ready for us. We ordered cocktails which were amazing. We also ordered the onion rings. They were incredible but they are more for a party of 4. My husband received the rib eye. He said it was really good but expecting it to be a thicker cut. i got the stroganoff which was a very flavorful meal. The place was very clean and the staff was on top of it! Great place and would go back again!

Had made reservations - when we arrived had to stand and wait for about 5 minutes before anyone even acknowledged us as the staff walked by several times and no others waiting- once seated order placed and food arrived in timely manner - food was good the chicken pot pie was ok - the Shepherds pie was very good. Had to ask for drink refills and waited quite a while to get dessert - dessert was ok the pound cake was grilled a little too much and tasted a little burnt . Overall was a pleasant experience
This was our fourth or fifth visit to the 1794 Whiskey Rebellion. We love the food and the service was outstanding. The noise level is very minimal which makes it easy to carry on a conversation over dinner. Prices are a little above average for this area, but the food is always fresh, hot and absolutely delicious. I highly recommend it.
Could have been a 5 but...
Food, most of which was locally sourced, was delicious. The chicken pot pie was among the best I’ve ever had. It tasted like home made. Combination of chicken, vegetables, and delicious crust made it real comfort food. The crab cake sandwich was delicious as well. Atmosphere in front of a warm fireplace was very pleasant. What detracted from our experience was the service which was hindered by the bar tender. First drinks came in a timely manner before the entrees. One of us ordered a club soda, the other a Gentleman’s Old Fashion. The Old Fashioned tasted watered down—lots of ice and soda water. The entrees arrived. I had ordered a second Old Fashioned but had finished my dinner and it never came. Finally our waitress came to tell me the drink was on the way, that the bar tender was backed up with a large group. I told her I no longer wanted the drink as I’d finished the meal. We noticed a couple at a nearby table was having a similar experience. It was a Monday night and the place seemed under staffed. As I was enjoying my chicken pot pie I wondered first where my drink was and then came to not wanting it.
Would be willing to try this restaurant again as it might have been an off night staff wise. Would recommend it with qualifications following the experience either the service from the bartender. If you should want two drinks, be clear with your server that you prefer the second drink in a timely fashion, not as desert.
This was our second time here; first time was fantastic. This visit we had two issues: our waiter (Ryan) seemed like he was unfamiliar with waiting tables (he didn’t describe menu items well, he couldn’t remember who ordered what when plates came out), and one steak dinner was cooked incorrectly so had to be redone & rest of table was almost done eating by the time new meal came out. We will visit again since food is so good and will hope for a different server.
The food was very good, but a little expensive.
The whole experience was above excellent, I would definitely recommend this place to everyone. Our hostess Erica was the best and the chef/owner comes to your table and introduces himself to all the patrons.
The Tuesday special is a good value (two entree, one app, one dessert) a nice atmosphere and decent service. Food is really good.
We had a really good meal. Service was excellent, Kate and Ryan were great. They took care of us but didn't hover. The rib eye was perfectly done at medium rare. That ain't easy with a rib eye. Only problem we had was the noise level. We were in a room with three large parties and my lady and I could not have a conversation. Next time we'll know not to go on a Saturday night.
Absolutely beautiful environment. Food and the service was phenomenal!!
Good Food and Drink in a Hotel dining room. Thus the reason it is not a good value. If you are going to charge market premium price you need to tear out the hotel dining room cabinets and redo the dining room. Also lost a star as have great drink options but bar service was extremely slow for the amount of people it serviced.
