Our food is simple and honest, created from ingredients sourced (locally when possible) from sustainable American farmers.
Our bar is based on the "farm to shaker" concept. Using the highest quality ingredients to pair with our small batch and locally distilled spirits & extensive whiskey list.
Our primary concern is the health and safety of our guests and staff. You will see that we are taking all precautions to ensure that you are safe while dining with us. All of our tables are 6 feet apart to allow for social distancing. At the bar we have glass dividers that give you a protective barrier from guests next to you. All of our servers, chefs and bartenders wear masks and gloves. Our employees wash hands and change gloves frequently. We are constantly sanitizing all touch points.

We were guests at the hotel and thought we would try 1794. The service and food were excellent and the ambiance was perfect. We sat outside on the covered patio which was well equipped with heaters. We will definitely dine there next time we are in Carlisle.
I made a reservation two weeks before the day. We went right back to a table when we checked in. Very busy in town-car show. We were sat in the breakfast room for the motel in which the restaurant was located. Absolutely no ambience. Could have used a candle on the table. Maybe some music. We started out with drinks and an appetizer which were good. Our salads were also good. My entree was pretty much cold. I got the prime rib and it was different than what I was expecting. It was a thin piece of meat. The mashed potatoes were cool and the gravy was just warm enough to make them palatable. I had to ask two times for a drink refill and the server was not very attentive. My husband was pleased with his entree. I was disappointed. I was hoping for a better meal for $100 and it being our anniversary.
Food was very bland. Server was not that good did not check on us as much as I would have liked. Order was not put in correctly and the manager had to correct it. And the steak was not worth the price.
Pre Covid I ate at 1794 at least once a year and it was a great improvement on what was in Carlisle. The food was excellent as was the service. This year neither my friend and I were pleased with the cut of meat. It was chewy and overly fatty. I had the rib eye and my friend had the prime rib. His was so rare I would have sent it back. Next time I’m going to try somewhere else.

Steaks were a little thin but cooked to order good, sides were a little small (pickled vegetables) Staff was great. Prime rib was also on the thin side.
Food and service excellent as always. Sat outside as the weather was delightful but street traffic a bit loud at times. My friend from out of town really enjoyed it.

Me and my boyfriend had a date here the other night. We really enjoyed the food. My crab cakes were awesome and his wagyu steak was very yummy. I could’ve passed on the side salad because it was basically just lettuce but otherwise I was happy with our selection. Our drinks were good, wine & whiskey. Our server stopped by to check on us and make sure we were happy. The main turn off was the seating. I understand that the restaurant is part of a hotel but I felt like I was sitting down for dinner at the hotel, not the restaurant. The breakfast bar items were actually up right behind us. Overall I will go back. Only on special occasions though because it is a pricey meal, especially if you order alcohol.
Service was slow. We had empty water glasses most of the time. Bison burger was dry and flavorless. Steaks too small. Side Salads extremely tiny. Food lacked flavor. Waiter was timid and wimpy. Waiter didn't know anything about the menu. No croutons in the Caesar salad! Overall, way to expensive for poor service and food!
Visited Carlisle to look at Dickinson College. Chose 1794 based on reviews and was not disappointed. Food was very good, staff followed careful Covid protocols. Traveling with a person with extensive food allergies and staff was knowledgeable, careful and provided great service. Highly recommend!
We had to wait a long time for a table despite having a reservation. Once our order was taken it took well over a half hour for the food to come out AND the food didn’t all come out at the same time. Fries came out 10 minutes after the burger and looked like the bottom of the barrel. Truly underwhelming experience.
Really good food. Steak and mushroom app was delicious, same as a crab cake dinner and a steak dinner.
Great food and service good value. The local suppliers are a plus.
While visiting our son at Dickinson College, we decided to make a reservation for a Saturday night and treat ourselves. We were pleasantly surprised! We had a great meal, nicely cooked and presented in a comfortable atmosphere. Highly recommended!
Being this was our first time, I wasn't sure what to expect. I was pleasantly surprised. The food was excellent and the service was as well. Definitely will be going back.

Our dining experience was very good from start to finish. The servers quickly took our drink orders & gave us menus. We had the onion rings, a half portion, which was seven giant onion rings. They were hot, fresh & crispy with a flavorful dip. We took 3 home. My Wagyu steak with a Hasselback potato was excellent, well prepared & delicious. My wife had the Wagyu ravioli & found it to be excellent. The chocolate chip cookie dessert was served on a skillet with the chocolate sauce still bubbling....great. We expect to make The Whiskey Rebellion a regular night out as things continue to improve.

Excellent steak and we really enjoyed the ambiance and nods to Carlisle history. My husband loved all the whiskey drinks and I had a mocktail that was delicious. Looking forward to returning after baby arrives!
Logan our server was great. Little disappointed that we were sitting outside and asked to have the back wall closed due to the cool air blowing. Was told the manager said no. We really wanted to enjoy a few drinks but the wind blowing made it a little uncomfortable
First time at a restaurant in months! It was so nice sitting in the patio and experiencing being served! The waitress was extremely friendly and helpful! The whiskey rings make an awesome presentation, but need a bit more onion! The prime rib could use a bit more seasoning! The only real complaint of the night was that some of the dishes and glassware were dirty?

We were given a new waitress who was extremely nervous. I really don’t think she was quite ready to be on her own yet, which I don’t think was her fault. The other problem was that we had to wait for our food for a extremely long time, so I don’t know what was going on that the kitchen was being so slow. I don’t think it was that busy to wait for our food so long. When I got my beef medallions they were definitely not done the way I requested, but I still ate them since I probably would of had to wait a long time to get another order of them. They were supposed to be done medium well, and they came out medium. We have been to this restaurant several times, but not sure we will be going back anytime soon. Extremely disappointed with this dining experience.
We loved the cocktail and spirit selection. Our server was excellent. We all enjoyed our meals. If I’m going to be picky, I found my Chicken Pot Pie a bit on the bland side with more vegetables than chicken. But overall it was a lovely experience and we will definitely be back.
Everything was great, dinner, service, drinks, cigars. This was our second time and we had the same server, Patti, both times. She was wonderful. Super friendly and gave good recommendations. We’re new to the area and this will definitely be one of our regular spots.
I had the prime rib and the cut (8-10 oz) was very small. Brussel sprouts were very undercooked.

Our first visit to the Whiskey Rebellion and certainly not disappointed. Excellent service, food and drinks. The menu was difficult to make choices because everything looked so delicious. The ravioli was superb. The ribeye was done perfectly and melted in your mouth. I highly recommend the 1794 Whiskey Rebellion for a first class dinner in a cozy casual atmosphere.

We heard so much about 1794 Whiskey Rebellion and finally got to experience it. We were not disappointed. The Old Fashions, prime rib were delicious. The best onion rings I have ever had! We will be back!!
