Our food is simple and honest, created from ingredients sourced (locally when possible) from sustainable American farmers.
Our bar is based on the "farm to shaker" concept. Using the highest quality ingredients to pair with our small batch and locally distilled spirits & extensive whiskey list.
Our primary concern is the health and safety of our guests and staff. You will see that we are taking all precautions to ensure that you are safe while dining with us. All of our tables are 6 feet apart to allow for social distancing. At the bar we have glass dividers that give you a protective barrier from guests next to you. All of our servers, chefs and bartenders wear masks and gloves. Our employees wash hands and change gloves frequently. We are constantly sanitizing all touch points.

Great cocktails and fun menu!
Best meal we’ve had out in a long time! Every thing fresh n made in house. We’ll be back for sure!!
Me and my boyfriend had a date here the other night. We really enjoyed the food. My crab cakes were awesome and his wagyu steak was very yummy. I could’ve passed on the side salad because it was basically just lettuce but otherwise I was happy with our selection. Our drinks were good, wine & whiskey. Our server stopped by to check on us and make sure we were happy. The main turn off was the seating. I understand that the restaurant is part of a hotel but I felt like I was sitting down for dinner at the hotel, not the restaurant. The breakfast bar items were actually up right behind us. Overall I will go back. Only on special occasions though because it is a pricey meal, especially if you order alcohol.
Service was slow. We had empty water glasses most of the time. Bison burger was dry and flavorless. Steaks too small. Side Salads extremely tiny. Food lacked flavor. Waiter was timid and wimpy. Waiter didn't know anything about the menu. No croutons in the Caesar salad! Overall, way to expensive for poor service and food!
Visited Carlisle to look at Dickinson College. Chose 1794 based on reviews and was not disappointed. Food was very good, staff followed careful Covid protocols. Traveling with a person with extensive food allergies and staff was knowledgeable, careful and provided great service. Highly recommend!
We had to wait a long time for a table despite having a reservation. Once our order was taken it took well over a half hour for the food to come out AND the food didn’t all come out at the same time. Fries came out 10 minutes after the burger and looked like the bottom of the barrel. Truly underwhelming experience.
Really good food. Steak and mushroom app was delicious, same as a crab cake dinner and a steak dinner.
Great food and service good value. The local suppliers are a plus.
While visiting our son at Dickinson College, we decided to make a reservation for a Saturday night and treat ourselves. We were pleasantly surprised! We had a great meal, nicely cooked and presented in a comfortable atmosphere. Highly recommended!
Being this was our first time, I wasn't sure what to expect. I was pleasantly surprised. The food was excellent and the service was as well. Definitely will be going back.

Our dining experience was very good from start to finish. The servers quickly took our drink orders & gave us menus. We had the onion rings, a half portion, which was seven giant onion rings. They were hot, fresh & crispy with a flavorful dip. We took 3 home. My Wagyu steak with a Hasselback potato was excellent, well prepared & delicious. My wife had the Wagyu ravioli & found it to be excellent. The chocolate chip cookie dessert was served on a skillet with the chocolate sauce still bubbling....great. We expect to make The Whiskey Rebellion a regular night out as things continue to improve.

Excellent steak and we really enjoyed the ambiance and nods to Carlisle history. My husband loved all the whiskey drinks and I had a mocktail that was delicious. Looking forward to returning after baby arrives!
Logan our server was great. Little disappointed that we were sitting outside and asked to have the back wall closed due to the cool air blowing. Was told the manager said no. We really wanted to enjoy a few drinks but the wind blowing made it a little uncomfortable
First time at a restaurant in months! It was so nice sitting in the patio and experiencing being served! The waitress was extremely friendly and helpful! The whiskey rings make an awesome presentation, but need a bit more onion! The prime rib could use a bit more seasoning! The only real complaint of the night was that some of the dishes and glassware were dirty?

We were given a new waitress who was extremely nervous. I really don’t think she was quite ready to be on her own yet, which I don’t think was her fault. The other problem was that we had to wait for our food for a extremely long time, so I don’t know what was going on that the kitchen was being so slow. I don’t think it was that busy to wait for our food so long. When I got my beef medallions they were definitely not done the way I requested, but I still ate them since I probably would of had to wait a long time to get another order of them. They were supposed to be done medium well, and they came out medium. We have been to this restaurant several times, but not sure we will be going back anytime soon. Extremely disappointed with this dining experience.
We loved the cocktail and spirit selection. Our server was excellent. We all enjoyed our meals. If I’m going to be picky, I found my Chicken Pot Pie a bit on the bland side with more vegetables than chicken. But overall it was a lovely experience and we will definitely be back.
Everything was great, dinner, service, drinks, cigars. This was our second time and we had the same server, Patti, both times. She was wonderful. Super friendly and gave good recommendations. We’re new to the area and this will definitely be one of our regular spots.
I had the prime rib and the cut (8-10 oz) was very small. Brussel sprouts were very undercooked.

Our first visit to the Whiskey Rebellion and certainly not disappointed. Excellent service, food and drinks. The menu was difficult to make choices because everything looked so delicious. The ravioli was superb. The ribeye was done perfectly and melted in your mouth. I highly recommend the 1794 Whiskey Rebellion for a first class dinner in a cozy casual atmosphere.

We heard so much about 1794 Whiskey Rebellion and finally got to experience it. We were not disappointed. The Old Fashions, prime rib were delicious. The best onion rings I have ever had! We will be back!!

Whiskey Rebellion was amazing! Food and service was top notch a new the drinks were some of the best! Definitely recommend! You can also make it an overnight stay since it’s attached to the Comfort Inn. You can take advantage of all the local charm.
Food was good, but was a little disappointed we were put in what seemed like the overflow room where breakfast is served in the mornings. It didn’t really feel like we were in a restaurant. They need to make the dining area bigger.
Service was excellent, Mary did a great job, drinks were tasty and it was my first prime rib experience.. i will certainly do that again! Great job 👌 only recomendation would be some bread with entrees. I think was on menu and could be ordered? Oh and onion rings were phenomenal!
Charming, delicious food, service was fine but took way too long to for the food to arrive.
Perhaps in the time of Covid or with the weekend ice sculpture festival this was an exception but dinners took over an hour to reach our table. If you don't mind waiting that long, this is a wonderful restaraunt.

Whiskey Rebellion is one of the few places in Carlisle where you can get an upscale meal in a decent environment. We find it a nice place to double date, as it isn't overly noisy.
I was really excited to try this restaurant but it didn't live up to my expectations. First we were seated at a table by the lobby door and when anyone went in or out of the door blasts of cold air blew right on us. We asked about a table by the fireplace but were told it was a 4 top. Later after when our meal was finished they sat 2 people at that table. Seriously? Did I mention I had my reservation for 2 weeks and this the best they could do? That did not go over well with my date. The food was pretty good but the salad was tasteless and the baked potato was dry even with the cheese sauce and bacon. The best part of the meal were the Onion Ring appetizers and the Cheesecake we had for desert. I did enjoy my steak and it was cooked exactly how I like it. All in all I would go back because I saw some awesome burgers on the menu that I would like to try. Hopefully they are better than the salads and maybe I'll get a table where I'm not freezing and my food isn't getting cold.
Ordered the Molly burger and it was the best burger I have had in quite while. Our group of four all agreed the food and drinks were top notch!
Our waitress was on top of it all. She was always asking if we were good and need it anything. She also came through fast with our drinks and refills.
The bartender makes one of the best Old Fashions around. She made it smooth and strong, top notch.
Birthday dinner. The food was good, service was good unfortunately the hotel (thus the restaurant) was starting to show signs of age. Not nostalgia, just dated...I would return for the food, but I’m not in a rush to go back.
