Our food is simple and honest, created from ingredients sourced (locally when possible) from sustainable American farmers.
Our bar is based on the "farm to shaker" concept. Using the highest quality ingredients to pair with our small batch and locally distilled spirits & extensive whiskey list.
Our primary concern is the health and safety of our guests and staff. You will see that we are taking all precautions to ensure that you are safe while dining with us. All of our tables are 6 feet apart to allow for social distancing. At the bar we have glass dividers that give you a protective barrier from guests next to you. All of our servers, chefs and bartenders wear masks and gloves. Our employees wash hands and change gloves frequently. We are constantly sanitizing all touch points.

I made my reservation a week in advance to celebrate our anniversary as the reviews were good. I was not expecting it to be in the Comfort Suites Hotel, but whatever. I was very disappointed when we were seated in the breakfast bar area of the hotel instead of the restaurant. My view was a vinyl counter top with three coffee carafes, stacked Styrofoam plates and plastic silverware. The aroma was dirty mop water. I'm sure the waitstaff knew the patrons seated there were dissatisfied and their lack of enthusiasm to serve in there reflected that. We were served our food with out table ware, I had to ask for a fork and napkin. My entrée was served and my empty wine glass remained empty until my last few bites when I was offered a second. I was in the food service industry for 7 years. I don't know I have ever left a bad review. I won't be back. Too bad. The steak was delicious but I just couldn't enjoy it.
We love coming here. The food and the drinks are great. Best piece of advice is to check your bill.
This was our 2 year wedding anniversary and it was lovely as always. We actually had our “reception” dinner at the Whiskey Rebellion when we got married in 2018 and have been back annually for our anniversary. It never disappoints! Service and food are always excellent.
The food and drinks were delicious and very reasonably priced. However, I wouldn't recommend going if you are concerned about being exposed to Covid. Several customers were allowed to walk around without masks and the man bringing out the food had a mask that was dropped down to his chin as he was serving. We spoke to our waitress about the server not covering his face and she nicely dealt with it. Basically, we were pretty stressed about the lack of enforcement which is why we rated it only 3 stars.

We were seated in the room used for the morning breakfast buffet. The room is not nearly as nice as the front room with the fireplace. I can understand the need to use it but if you do at least clean off the bar. It was covered with servers cell phones, rags, bottles of cleaners and miscellaneous clutter.
Me and my family were in Carlisle for the fall Carlisle event and we stopped at this restaurant because of the great reviews and we were blown away absolutely 100% recommend great food go on a day they have prime rib it’s amazing everything was great
This was a first in a really long over due date night for my wife and I. The food was nothing to write home about my steak was rare when I asked for medium ..they did take $10 off but for a not very busy night we hardly saw our waitress. When we did see her she was very good. Desert was very good .. all in all I won’t be going back plus their menus seems to require Rosetta Stone to figure out what their menu items are.. oh well.. they nearly had something great and some how snatched mediocrity from the jaws of success.. crying shame oh well

Took Mom out for dinner as she hadn’t been out in several months. Had dining room inside to ourselves as most people sat outside. Great mixed drink menu and beer choices. This was my 3 rd time eating here and I was pleased each time with my food. The farm to table concept works so well. Apple dumpling for dessert was so delicious.

We had a wonderful time on 7/11/20. We ordered the Tempura Whiskey Onion Rings and they were cooked perfectly. My salmon entree was delicious, and my husband’s Reuben was huge and the one of the best he’s had. We ordered a crab cake, too. It was also tasty and had hardly any filler. The staff were accommodating, kind, and mindful of social distancing and our comfort. We live out of state and we look forward to dining here again.

The drinks were great and food was good. No complaints. Waitress didn’t make any suggestions when we ordered a side salad she didn’t tell us that our main course came with two sides so we had four appetizers. I asked if our salad could be one of the included sides and she said no it was too late for that?? What does that mean?? She was young and not experienced. But the drinks were great so we enjoyed ourselves anyway.

Waiters were alert and professional. Food - which for the three of us included a perfect t-bone, an excellent crab cake, a molly burger with local cheese, and the best onion rings i have ever had- was plentiful and tasty and well cooked. So nice to sit outside, enjoy the ambience and food, and not be hurried on our way.
Absolutely phenomenal food! The servers are wonderfully attentive, Laurel in the bar can really help you through the drinks menu.
Awful experience. The kitchen was overwhelmed, so we were seated knowing it would be a while. However we were assured drink service would be fine. 15 min to get menus. 40 minutes to be served cocktails. One was far too sweet and they forgot to put the alcohol in the other one. When food finally came, the Ruben sandwich was so salty we couldn’t eat it. It took about 1.5 hrs to get the food. I know they were overwhelmed with just reopening to in-house dining due to COVID, but I thought at least the food or drinks would make up for the wait. That unfortunately not the case.
Loved appetizers. The onion rings are immense. The tavern stuffed mushroom is fantastic. Bull Burger (Bison) was disappointing. The onion rings are good as appetizer, but too doughy on sandwich. The Bison was embarrassingly overcooked. Just no flavor in this sandwich. The stroganoff and medallions were much better. Lots of potential. Restaurant was busy due to COVID restrictions and Carlisle spring car show. Will try again.
We were seated in a timely fashion, the service was good as was the food.
What a disappointment. We made a reservation, and were seated. We waited for 20 mins and no one ever looked at us. Another couple arrived without a reservation, were seated and served immediately. Unfortunately we had to leave as we were thirsty and hungry. No one was bothered that we had gotten up from the table, including the manager who watched us walk out.

Enjoyed our dinner. Great server. Steak and Prime Rib were both excellent. Nice Wine (server recommendation) and George Washington Old Fashioned for dessert.
The food was incredible. I am a very picky eater, and I had the airline chicken breasts with the bourbon glaze, while my husband had the prime rib, and we had the pretzel braid for an appetizer, with an apple dumpling for my husband to finish it off, and a slice of cheesecake for myself. Everything we had, from start to finish, was hands down amazing. The chicken was tender and the glaze had a kick, but it wasn't too overpowering. The prime rib that my husband had was juicy and very delicious; he couldn't finish all of it because it was too much. We will definitely be back here again, this time with our family!

Just a great dining experience. Our server was attentive and cordial, the beer selection was impressive, and my only complaint about the menu was that there were too many delicious sounding dishes that it was hard to decide! Everything we ate was flavorful and cooked well. We’ll definitely be back.
Food was excellent, bar tender excellent and once a waitress took it upon herself to wait on our table (the assigned waiter kept walking past us) she was too notch. Host and hostess were extremely disorganized - we checked in and went to bar when our time to get a table came we checked in again and they had lost our reservation. Our table seemed to be in the way, our chairs were run into by multiple servers...very irritating especially when they looked at us like we placed the table in their way.
Had heard about this restaurant for year’s. We finally had a chance to dine at this establishment, food was average at best. My steak was just ok. We ordered desert which took about 20 minutes to bring to our table. Downtown Carlisle has many great dining options, I would suggest many others before this place.
Restaurant was overbooked, seating was delayed, and, when seated, seating was in adjoining ice cold hotel breakfast area instead of cozy restaurant with fireplace. On top of eating in my coat, the food cooled faster than it could be eaten, and our selected bottle of wine was out (one glass left). Did I mention that part way through our dinner (7:30 pm reservation), restaurant staff began streaming into room and bouncing off our chairs, to set up the next day's hotel breakfast serving items on adjoining counters? All in all, a lousy special occasion outing. This fourth trip will likely be our last, despite excellent local steaks.
Outstanding experience. Service was fantastic, she was attentive, courteous, friendly.....I could go on. Needless to say she was great. The meal was delicious. I had a prime rib that was melt in your mouth good. My wife enjoyed tenderloin tips that were just as tender the next day as when they came to the table. While the price is a little on the higher side you truly get what you pay for, service, atmosphere and delicious food with an extensive beverage selection. Do I recommend 1794 The Whiskey Rebellion? Oh yeah.
Food was phenomenal! The service was good, our waiter was a very friendly young man who made sure we had everything we could ask for. The kaesespaetzle was fantastic, it was like grown up Mac and cheese. Couldn't recommend it more!

Food was great and waitress did her best. But management made the decision to stick us in the noisy overflow section when we had made our reservations well in advance and wanted a nice dining experience on Valentine's Day.

Have dinned at 1794 several times for both business and personal occasions. Every time we have been impressed as have our guests that we brought. We have some clients that are big stake fans and they feel this is the best option in central pa and very reasonable for the quality. The stuffed mushroom appetizer is excellent, the Cesar salad is also very good. Numerous dishes have been successful, the bison burger is really good, the beef stroganoff was really good, even the chicken pie was well received.
The steak was amazing!! Service was top notch...I requested a seat by the fireplace, and even though it was their busiest day of the year, they graciously accommodated my request!
First time dining at 1794. Drinks were great and the food was delicious. Prices were reasonable for the quality of food and drinks. Service was erratic, drink orders were forgotten twice. Ambiance depends on which room you sit in. Bar was cozy, front room with fireplace had booths and tables, and I would request it next time. We were relegated to the boring hotel breakfast room, which lacked in any decor and had a rather large TV that continuously looped a commercial for the very restaurant we were sitting in! Very distracting and unnecessary. Next time, we'll eat at the bar or request the fireplace room, as it's worth a return trip for the drinks and food!
