Having heard and read such good things about Will, I had very high expectations. I was not disappointed. I was immensely impressed by the flavors, presentation and the textural variations. Spring gazpacho - bright and a perfect refreshing start to the meal. Also set the tone beautifully with its play on textures, chicken sausage - a misnomer really since the star of the dish was not the chicken but the coddled egg. The skate - perfectly cooked and moist with interesting garnishes (hello pine needles!) I also really loved the recurring "black sauce" theme in all the plates. Highly recommend this place for anyone and everyone looking for a good meal.5/19/2013 12:00:00 AMBest BYOBI'm a huge fan of BYOB's in Philadelphia for the simple fact that it allows creative, innovative, and talented chefs to start restaurants without the often insurmountable obstacle of obtaining a liquor license. Will is one such gem. From the presentation of the food to the creativity of the menu to the pride that the servers took in their jobs, Will tops my list as one of my new favorite restaurants in Philadelphia. If I could eat there every night I would! We arrived a few minutes before our reservation and they sat us immediately. The service was attentive but not overly so and the food was extremely good as usual. The highlights were the Kampachi crudo for a 1st course and then the Halibut for the entrée. The chocolate bouchon cake was also pretty tasty as well. We brought a few bottles of wine and some scotch and as usual the staff at Will was very accommodating with this. the presentation of food was stunning. not only were the flavor profiles fresh, seasonal and complex there was an artist's touch to everything. Many things were highlights from that dinner but I'll just mention the various preparations of rhubarb, pickled, shaved and candied and the Poulard 4 ways! thanks so much. we'll be back soon!

Small menu, small place, small portions, not too cramped, and not too noisy. Ok, the food is different in a good way. Very trendy, very deconstructed if you will. Ingredients and combos that you can't quite figure out. Our appys and entrees were all very good. Hen of the woods mushrooms are great. Dessert was a let down compared to the rest. I ordered a lemon meringue pie dessert which once again was deconstructed with basically a lemon bar with no crust, some raspberry sorbet and a few other things. The original would have been better. Kind of like a choccolate chip cookie. Hard to beat the original. From the moment we stepped through the door, the staff made us feel like we arrived at a friends home for dinner. Seating is tight, and the diners around us were so pleasent to talk to. Everyone around us were repeat diners, so we knew we were in for a treat. The small menu has a great choice of different and unusally prepared dishes. Our meal was excellent. Every item displayed careful attention to coordinating and complementing flavors and textures, from the squash soup with slightly crunchy quinoa and woodsy fresh greens, the subtle but effective use of pickled radish and the remarkable just-right done-ness of the poached salmon. We were there on a Sunday prix fixe evening.
