A word from Wasan
Ingredients are at the heart of cooking. Even the same ingredient can have infinite varieties, depending on where, which season, or under what weather condition they were produced.

It's not a matter of simply cutting and cooking, but how to make the best use of the ingredients by finding the best way to cook them. For instance, tuna can be eaten as sashimi, steak or simmered in soy sauce. Making good use of ingredients means that we see the conditions of the tuna first and then choose the best cooking style.

Same goes for wine: even the producer is the same, the taste varies from each year of vintage, in which glass it is poured, or how long it has been aged. And sake can be dramatically different by the temperature it is served: hot, warm, or chilled.

    What a find! Greeting and subsequent service was warm and well paced. Cold cheese Tofu was a tofu lover's delight-cool, silky texture, just the right degree of density with dashi & tomato jelly perfect accompaniments. Eel Empire satisfied my eel cravings, moist, not too sweet, unctuous. mmmmm. Hamachi Jaws were a little bit dry due to deep frying but very flavorful. Mochi ice cream was good but too frozen for my taste, it reminded me of commercial version, a bit of a disappointment. Tea hd a very pleasant toasted grain flavor. I can't wait to go back. Exceptional sake list

    Delicious japanese restaurant for the ones willing to go the extra mile beyond sushis & tempura! 80% of customers are from Asian origin which is always a very good sign :-) The service is excellent and the food quality very good as well!     I didn't try their $45 set, but there are quite a lot of options to choose from for each course. Tried the uni lover and it was fantastic as everyone so commonly says...it seems expensive for a bite, but I think sushi a la carte costs about the same. Food is plated beautifully and the location of the restaurant is off from St. Mark's so it's definitely not as crowded. The tables seem to be cramped against the wall (the kind where you literally have to shift the table out in order to get out), but the high ceiling gives the room more space. Most importantly, love the tea they serve! (Genmaicha? Roasted and rounded taste.) Not ur avg green tea.

    I had read reviews that mentioned the Uni Lover dish, and was looking forward to trying it. However, once we started ordering, the waitress revealed that they were not serving any uni that night, except in the uni and beef sushi dish on the special menu. That was a disappointment, since it seemed to be one of the signature dishes. Sake list was good, but none of the dishes we had was especially memorable.

    My second time there. This time ordered the course menu at $45. Really reasonable and a good selection of what Wasan has to offer but I kept looking at the dishes that were being served to other tables. Will definitely go again.

    I've heard stories about the sea urchin in Wasan and it was the whole purpose of bringing my friends to the restaurant. We all wanted the sea urchin and the waiter told us they didn't have any for the night, after we all had been sitting there for 10 minutes. It was rather unpleasant to know because we weren't sure should we leave or should we stay. It was too late to make reservations at another restaurant and the menu has quickly become too limited since sea urchin took up a good portion of the menu. Management should tell us once we checked in that they are out of their popular/in demand item and not give us false hopes.

    We went on a nice evening so they had the doors open and it felt quite nice to watch the street while you ate. We certainly had the uni lover roll as one of the appetizers and it was very good. We also ordered sashimiand it was quite good. For entrees I order the Eel, very good and my husband the hamachi jaws which were also very interesting. For desert we had a brownie that came with salt on the side, I loved that, since I don't like desserts that much and the addition of salt gave the brownie a more interesting twist. The service was friendly. Most of the patrons were Japanese and this gave it a more authentic feel.

    Packed into a small space are three things that make Wasan great: good food, great drinks and fantastic service. We ate from the prix fixe menu which was 5 courses that you can select from, each with its own character, but totally complementary. The food was fresh and came out as if on queue, not too quick and not too slow. My glass was always full (and if you like sake, this is the place to go) and there was always a server in the wings if you needed something. There is a small bar with about 6 chairs and I noticed folks were able to eat there so if you are flying solo this is a great choice. Make a reservation if you are with a group. I hope you enjoy as much as I did. Cheers.

    Very friendly and attentive service. When our table wasn't ready at the reserved time, the owner gave us drinks on the house while we waited and then a free appetizer with the meal. The "Uni Lover" dish is not to be missed for all Uni lovers.

    Excellent prix fixe menu changing by the month, $55 per person for five courses last week. A la carte also very good. Inventive chef but never playing fancy games. I'm not really a wagyu beef fan but theirs is well worth trying, hot stone cooking. Fish fresh of course, classic sashimi and two or three cooked fish dishes which are changed seasonally. Good sake list. Delightful staff, very good atmosphere and tables not crowded together. About my tenth or so visit and I've never been disappointed.

    During the entire service, there were only two two-tops, so it was a slow night at Wasan - or I hope for their sake it was. Our table of three opted for the Seasonal Menu.     We went to this restaurant with our family and we all loved the food. It was simply amazing. All dishes were prepared delicately with natural broth and seasoning without overpowering the main ingredient. Our favorite was foie gras sushi and the beef nikomi. Even our 6 years old son loved them. And our server was very friendly and patient. They do not have too many wine and sake selections but enough to pair with the food. The interior was not too fancy, just a nice cozy little space. The only reason that I didn't give 5 stars for overall experience is that cold wind comes directly inside when the door open since there is no partition at the entrance.

    a very good and varied menu, not over elaborated. A few sushi and sashimi dishes, all good on my 4 visits. Wasan is not a sushi restaurant,however, but has a range of dishes including delicious wagyu beef (excellent) and cooked fish (also excellent). Sake pairings are good but we most enjoyed the Tenryo (Heda region) sake which is remarkable for depth of taste, elegance and smoothness. The ambience is really pleasant, simple decor with several small booths and dark wood tables, the service impeccable and you can actually talk to your friends at the table without having to shout, rare in the city!

    Wasan must be a completely underrated hidden gem as we were there on a weeknight but were only one of 3 tables filled (hence the detraction of a star from ambience)...it's in the heart of the EV so we were surprised there weren't more people. If you love Japanese small plates and uni, this is the place for you. The food is phenomenally tasty and the presentation is lovely. The "Uni Lover" is especially notable - uni (sea urchin) and avocado on a homemade uni chip. Between two of us, we ordered two....then another two mere minutes later because it was just that tasty. One of the evening's specials, crunchy jalapeno yellowtail roll, was also incredibly flavorful and had the perfect hint of spice. Bonus: cheap but delicious wines by the glass!

    Four of us had the tasting menu. We all ordered different choices and shared. Our waitress made sharing easy by cutting items in advance to facilitate sharing and giving us each small plates with each course. The courses were exotic and tasty. My favorites were the fois gras rice bowl and the sashimi which was very fresh. Also ordered flights of sake for everyone. A memorable dinner.
