A word from Wasan
Ingredients are at the heart of cooking. Even the same ingredient can have infinite varieties, depending on where, which season, or under what weather condition they were produced.

It's not a matter of simply cutting and cooking, but how to make the best use of the ingredients by finding the best way to cook them. For instance, tuna can be eaten as sashimi, steak or simmered in soy sauce. Making good use of ingredients means that we see the conditions of the tuna first and then choose the best cooking style.

Same goes for wine: even the producer is the same, the taste varies from each year of vintage, in which glass it is poured, or how long it has been aged. And sake can be dramatically different by the temperature it is served: hot, warm, or chilled.

I've lived in Japan for over a year and am a big Japanese cuisine fan. Wasan manages to bring out all these amazing and authentic Japanese flavors while also making it new and unique. The food is delicious and beautifully plated, the service is impeccable, the sake selection extensive, the ambiance is intimate while also being jovial. A lovely, lovely place."

  • "We stumbled upon this place randomly and ever since, it has never failed us. The food is consistently really good. Tasting menu is incredibly reasonable, delicious, you leave feeling happy and full, and it changes every month. Uni Lover is to die for. It's just such an incredible restaurant, we go there for special occasions, and also sometimes when we just don't know what we want to eat - it's perfect for any occasion."

  • "There are two reasons why you should eat at Wasan, the friendly staff and the food. My fist time visiting this establishment was almost a year ago and my waitress was kind enough to mention that she remembered me. Not many people can say that about their visit to a restaurant. That aside the May tasting menu was perfection with enough options to choose from. For the starter I selected tofu in a light yet flavorful broth along with a salad. My selections also included the salmon; it was moist and melted in my mouth, I have never had salmon that tender. For the main course I selected tender broiled eel served over perfectly cooked rice. I left Wasan feeling content with a smile on my face."

  • "We decided to order a bunch of small plates to share instead of prix fixe. Every dish was good, but we found the portion to be vert tiny for the price. Oshinko, salad, cheese tofu (1.5" sqr), marinated yellowtail w/ jalapeño ponzu - all good but small that I wasn't sure if I was ever going to be satisfied, and I'm a petite Japanese woman who doesn't eat too much. Wagyu tartar was great. The sake flight also comes w/ small schnapps glass x 3 for $18. Not worth the price. Sorry, i know other places w/ much better and creative food that I'm happy to pay for. The spot is cozy and groovy. The round, wooden tables are big and beautiful but the seats are small. "

  • "You're not going to stumble onto this place, and clearly nobody had when we were there - we only saw a couple other people in the restaurant (weekday evening). But everyone else is missing out - this is as authentic as Japanese food gets (my wife went specifically for the uni) and it's all extremely fresh. Whatever you do, get the shrimp bun appetizer, and order 2! Large sake selection and even a decent selection of *real* Japanese beers - not the Canadian or American stuff with Japanese labels you find at most NYC Japanese restaurants. (Look for the 11 or 17 oz bottles on the menu.) The place is very small and intimate, with a nice decor, dark ambience and good seating for couples and small groups."

Wasan is a REAL gem with perfect food, perfect service, and perfect ambiance.   • "For a $45 course, I was satisfied with the taste and variety of dishes but though the service was not up to par. There was very little to no explanation of the dishes or recommendations or suggestions of drink pairings, which seems odd since drink is so important to the owners. And one time the chef came out and slid right past our table but didn't even acknowledge us at all. He would do well to just take a moment to ask how is our meal, etc. I would still go back. I just think for such a small place they could be a little more attentive. I think they are only attentive to customers at the bar."

  • "A Japanese friend recommended this place as one of his favorites in NYC. After having dinner here a couple nights ago, i can see why! The ambiance is intimate and cool, with a few tables in the small restaurant. We got fois gras sushi that truly blew us all away, and my salmon chirashi had incredibly fresh fish sitting on an interesting rice medley. Try their tofu flan to cleanse and please the palette."

  • "Top-notch service is how I would describe my first impression of Wasan. We were going through the menu and could not find an entree we have saw online. When asked we understand that the menu has been modified and the entree is no longer served. Our server took the initiative to check with the chefs to see if they can meet our "special" request and they accommodated our desire. Very impressed! Great service throughout and our server was knowledgeable and very friendly. Definitely blown away by the great service in the restaurant. Perfectly executed food using the freshest ingredient available in the season. Uni, Yellow-tail and Tuna always taste impeccable."

  • "Came here on Friday evening to treat a friend for dinner. Unfortunately, because of a noisy group at nearby table, the place was unusally noisy and it kind of spoiled the ambience. I normally opt for the multi-course menu here but this time I tried a couple of dish from the a la carte menu. Since I do not eat things like Uni or Sashimi, I had a rather limited selection. I think I would stick with the course in future."

  • "I came here on Monday evening to try the 3-year anniversary 6-course menu offered during the week of 14 Oct. For me, the portion was just right and it was like having several tapas. I had Chawanmushi, grilled salmon/scallop dish, the pork with Shiodare sauce, among other things. They were all very tasty. The server was courteous, and he frequently stopped by to make sure everything was OK at the table. My only complaint was when I walked in, many tables were empty and I had a reservation, yet, I was initally offered a seat at the bar area. Only after I declined, I was offered seating at one of the tables."

The service is friendly and helpful, and we were treated to some rare and expensive off menu sakes when we participated in the 'sake flight.' It was a superior dining experience, I'll definitely be back. If your'e looking for a 'scene' this is not it but it was a memorable dining experience for our group, for all the right reasons."

  • "Love their "uni lover" and foie gras sushi. The "eel empire" just melted in my mouth. All the other small plates and rices dishes were well done - they kept it simple and unpretentious. Their sake menu has fun descriptions which made the decision making process much easier. Our only complaint was the slow service - we had to wait a bit too long to order and in between courses. The staff was friendly but maybe they are underhanded - the pace of the meal felt very off-balanced."

  • "What a find! Greeting and subsequent service was warm and well paced. Cold cheese Tofu was a tofu lover's delight-cool, silky texture, just the right degree of density with dashi & tomato jelly perfect accompaniments. Eel Empire satisfied my eel cravings, moist, not too sweet, unctuous. mmmmm. Hamachi Jaws were a little bit dry due to deep frying but very flavorful. Mochi ice cream was good but too frozen for my taste, it reminded me of commercial version, a bit of a disappointment. Tea hd a very pleasant toasted grain flavor. I can't wait to go back. Exceptional sake list"
