A word from Volver
Volvér means ‘to return,’ and the restaurant is a ‘return’ for Chef Jose Garces, one of the country’s leading chefs and restaurateurs. Chef Garces brings his more than 15 years of global culinary exploration to Volvér, ‘returning’ fondly to some of his favorite meals and re-imagining them with his signature flair.


The ever-evolving menus highlight seasonal ingredients prepared with modern techniques that capture and amplify their inherent flavors, all inspired by Chef Garces’ travels around the world. Regional specialties, including locally raised meat, poultry and seafood, and produce from Chef Garces’ own Luna Farm in nearby Bucks County, feature prominently on the inventive menu.


Bar Volvér is a comfortable setting for artful cocktails, wines and beers, complemented by Chef Garces’ exciting menu of globally influenced small plates including tartares, tartines, cheeses and charcuterie. All dishes are available a la carte. Reservations are not required.

    When I read that I was buying tickets to a "performance" I was skeptical to say the least. Oh how wrong I was!!! The evening truly was a performance in excellence from the moment we arrived until we left 3 hours later. The food was a masterpiece. Not only was it insanely delicious but the presentation was artful. Each of the 15 courses was perfectly prepared and presented on cleverly themed place settings that I assume were custom made to complement the menu. The open air kitchen was fascinating. Barely a sound could be heard as food was assembled just feet away. And lastly, I cannot begin to say enough about the level of service. Simply impeccable. Our Captain was truly a master of his craft! Standing Ovation Mr Garces! Bravo!

    My wife and I went here to celebrate our anniversary, and wanted something truly memorable. Volver certainly delivered - it is evident that tremendous thought went into creating the menu, the service ware, and the pairings to create an overall exceptional experience. I've only had two meals in my life that have really blown me away, almost transported me for lack of a better term, and this was one of them. Something to be experienced.

    We went here for my wife's birthday and enjoyed the experience very much. The staff was well trained, provided great service and were very friendly. We loved the open kitchen and we had a great seat to watch them prepare our dinners. The food was very good, but there were more seafood courses than we prefer. Not their fault, just not our taste. This dinner was at the end of a long day, and we were exhausted by dessert. Tasting menus are longer than normal endeavors,so we should have made an earlier reservation. It was a bit pricey and the reservation process (or "Ticketing Process") was a bit odd. I was called and asked to pay for the meal in advance. We enjoyed the dinner and the staff, and will return for a drink and a snack at the bar.

    Despite quibbles from the city's leading food critic, this place flawlessly accomplishes what it sets out to do. Fourteen course that are each an adventure from one bite to the next, and it is not just technical wizardry - the flavors and tastes more than justify the immense amount of effort involved. Yes, the back story for each dish becomes a little tiresome - particularly the number of dishes that claim to be inspired by "street food" discovered by the chef on his various travels. Polished and knowledgeable service as well. Problem is whether this is all a bit too much for Philadelphia. There were only 8 diners, and most likely twice that number serving and cooking - hardly a sustainable economic model, even at this price point.

    There was very little, if anything, to fault. The staff were very knowledgable and pleasant. The food got progressively better and the complimenting wines from the tasting menu were spot on.

    Yes, it was pricey ($580 for two including the beverage pairings, tax and gratuity). However, it also completely lived up to the billing. A flawless "performance" (as they call it) from before you get there (calling to check on dietary requests, etc.) to the front hostess, and then fantastic service every step of the way. They completely accommodated my wife's many menu changes for her likes and dislikes. I changed nothing in the 15-course, 3 1/2 hour meal. You really must do the sommelier's pairings (optional), which is part of the experience. The dining room seats around 30, with a wide open kitchen and employees match the patrons around 1 to 1 (or so it seems). You can't call yourself a foodie and not experience Volver.

    We weren't anxious to eat here, figured it wouldn't live up to itself. Then we heard about the Summer special and gave it a chance. Glad we did! Now that we've been there, we know it's worth it, even at the regular price, and will return. Every aspect of our meal was perfect and we were very well attended by the charming Justin, who is a rare master of his profession. The entire experience of Volver was great, but there is no doubt that our excellent, beautiful and creative food was further improved by the fact that he was there. Our one criticism concerns the room. It's an elegant space, but the ugliness of Spruce St overwhelms it. The uncovered aquarium windows highlight the ugly street and put diners on display for passers by.

    This is my new favorite restaurant in Phila! It's the 198th Phila restaurant I have visited and stands out from the top crowd. My evening was fun and full of outstanding experiences. Allow 3+ hours for the meal. Get the wine pairing; it's both spectacular and interesting (includes wine, beer and saki). The food was amazing! They served me things that I had only seen on TV and all the dishes worked. The tastes were strong and clean, and the food was beautiful. The service was friendly and casual. The evening reminded me of a visit to a three star Michelin restaurant in Paris some years ago.
