A word from Vespolina, formerly Aragona
Vespolina completes the trifecta for Italian food and drink from Chef Jason Stratton joining award-winning siblings, Spinasse and Artusi.

Chef Jason Stratton and his team create simple, refined dishes grounded in authentic techniques from Piedmont, while incorporating the products of artisans and small farmers from the Pacific Northwest.

We welcome you to enjoy our handmade pastas and seasonally inspired dishes and desserts, alongside a carefully curated wine list. Our dining room reflects an authentic, rustic, classicality found in Piedmontese trattorias and our small bar features a birds-eye view of our open kitchen. Wherever you sit, your enjoyment of our food and the restaurant is of primary importance to us.

We ordered off the 3 courses for $30 menu. Three of us ordered the Caesar salad. I'm not sure how you "miss" with a Caesar salad but our salads were so doused with a limey dressing that the greens were limp and the taste was "off" and I could hardly eat it. My friend's French Onion soup she said was bland. The pork ribs I ordered with tonnato sauce and turnips was very good as was the lamb ragu. However, we ordered one bottle of white wine - one of the cheapest on the menu - $50 which is an outrageous price for white wine. The desserts were okay. I liked the fritters but in this case - I didn't need six of them! Since this was Restaurant Week - I feel a restaurant who wants to be sure you'll return really needs to do everything right.

A good italian restaurant is characterized by how good its risotto is. This place is not a good italian restaurant. Risotto requires either Arborio, Baldo, Carnaroli, Maratelli, Padano, Roma, or Vialone Nano. This place used California white rice; a soggy mess.

Even though I had a reservation we waited 15 minutes for a table during lunch time. I realize it is restaurant week so they were busy, but they should be prepared for that with only a few options on the menu. I ordered a cocktail and they didn't have a bartender so the server made it when she had time which was 20 minutes after I ordered my drink. It tasted fine and she ended up taking it off my bill without having to ask. The bolognese was salty and not as good as the bolognese at Spinasse. I enjoy relaxing several coursed lunches, and they are longer because I choose to stay. Unlike this lunch which took 1.5 hours to get my entree and I had to scarf it down to keep the lunch under 2 hours.

Second visit here, and the service has slipped from the previous slow levels. Had a reservation for lunch, yet waited 15 minutes to be seated with lots of empty tables to be seen. Food was delivered exactly 57 minutes from the time the order was placed by our table of 2. Food was pretty good, but definitely will not return as it would need to be exceptional food for the slow service.

It started off great. We were seated right away. Waitress got our order in shortly after being seated. Shortly after our appetizers came out. But then the wait between our appetizers and entrees was ridiculous. We didn't understand why when there was only maybe 4 other guest within the restaurant. We saw other tables who sat after us received their appetizers & entrees way before us. It took almost an hour before we received our entree. Once finished our plates were taken and coffee was order while we waited for the dessert to come. Another long wait, surprisingly our desserts came first and we were almost finished and the coffee still hadn't come out. I know this restaurant is sort of new but service needs major improvement!!

while our bar experience was a bit short--understaffed and under attentive-our wait person was very much a counter balance. The bolognese sublime. Perfect pasta and delightful sauce. Squash ravioli also nothing cutting edge--simply terrific. Broccolini appetizer and calamari salad also the same simple delight--pay attention and reap rewards. Fritters for dessert cut from the same cloth. wine list was not expansive but reasonably priced and very tasteful.

The happy hour menu sounds so good and the ingredients, preparation are all delicious but the proportions are ridiculously small! You can get 3 choices for $8 but just be prepared to have tiny portions. The trout for dinner was very good. Great view of the Ferris wheel and Puget Sound from the bar. They do have lunch and I'd like to try it as the location is very nice and is directly across from the Seattle Art Museum

Having been to Artusi and Spinasse, have to say this was as inviting and didn't disappoint . Really enjoyed the service, very friendly and prompt. We were on a date and I have to say that there a was a pillow strategically placed where we sat that read 'Yes, Dear'. That pretty much set the mood for the evening. Thank you so much for a great and memorable meal.

Love to hit this place often before the Symphony, but food we had wasn't that especially good tasting and the high price didn't help. I ordered trout and that's all I got on the plate, a large trout with a sauce so heavy I got tired of it very fast (it needs a more delicate treatment). Beet salad was OK - partner had lamb chop which was OK, but nothing special. Ice cream dessert was unique and the best part of the meal. They've just opened and maybe it will improve, but won't come back for a year or so to find out. Prefer Fonte, Four Seasons, Wild Ginger, and Taste -- all near by. Told our waitress we had symphony tickets, and she was totally on the ball.

Put simply, it was frustrating to dine here. Our wait time for the complimentary bread was one hour. Our meal arrived at 10:15pm for an 8:30 reservation. The Ravioli was good but the two Risotto dishes were inconsistent with too much broth - both lacking the creamy finish. We passed on dessert. Our server did not apologize for the long wait until she placed the bill face down explaining that the transition from Aragona to Vespolina has had its bumps in the road. I asked the server to remove the corking fee, surprisingly, she mentioned that corking fee and the appetizer were complimentary but she failed to tell us. It was neat to see the chef bring plates of food out to the tables, unfortunately, he did not make it our way.

This restaurant has breathtaking decor and a prime location. The food is, at best, average and the service was very slow. We had a party of 6, so we ordered half the menu and ate family style. The dungeness crab pasta and cheese ravioli with broccoli were wonderful. But the appetizers and entrees were horrible. Tuna was fishy and boring. The pork loin was so tough we couldn't cut it and the lamb lacked flavor. The trout redeemed itself, but not so much that I'd ever be tempted to return again. The service was exceptionally slow - 3 hour dinner with half of that time spent just waiting for our server. I really wanted to love this place because the decor is mesmerizing, but it fell drastically short of the hype.

I went to Vespolina with friends on Saturday, September 13. I was really excited to go because I love Spinasse, another restaurant by the same restauranteur. Sadly, the pasta here was nowhere near as good as Spinasse. Also, we very disappointed in the service. There were many issues. 1) It took an hour for our bottle of wine to arrive. 2) During the appetizer course, the four of us were sharing, but they inexplicably only brought three plates. 3) Later in the meal, one person ordered a cocktail, and he ended up having to ask two more times before it showed up about 40 minutes later. 4) We asked for bread, but it didn't arrive until halfway through our entree course.

Still a lovely space, still has good small plates, and the antipasti plate mix was good. That said, for a place offering numerous pasta plates under $20, the wine list hovers at $50 per bottle. Maybe a few lower end offerings? The house made pasta itself was good, but the sauces paired with it were not terribly imaginative. After the terrific Spanish food Aragona offered, we were disappointed with a menu lacking creativity or allure. We did not try the entrees, so will check out the lamb on another visit, maybe a few months from now to allow some more shakedown of the menu.

The menu still needs some work. Our salad of melon, tomatoes and cucumbers was tired looking. Interesting taste, but it had sat too long. My sandwich of pork was dry and not enhanced by the other ingredients. I left lunch very thristy all day meaning that things were over-salted.

We had a great dining experience here and ordered the ravioli fonduta and the Cavatelli with zucchini ricotta and basil. The cavatelli dish flavors were incredible and delicious and could easily order it every visit, (and I am not a huge zucchini fan). The Ravioli were so perfect! There were enough of them that you didn't feel cheated too. It was fun seeing the pasta sheets hanging and someone actually making the ravioli. They were filled with Fonduta and must have been drizzled with something wonderful to give it some depth of flavor. Whether that was browned butter or flavored oil not sure but it was excellent!

I didn't visit while it was Aragona, but I thought I'd try Vespolina given Jason Stratton's reputation at Cascina Spinasse. While the restaurant has only been serving Italian menus for 2-3 evenings, the offer was good, but I wouldn't say very good. The food was a mix of solid offerings, nothing too out-of-the-ordinary (but I prefer getting familiar food very well prepared to getting food that is different because it can). I would put Vespolina among the top 10 Italian restaurants in Seattle, but not in the top 5. The wine list exhibits the restaurant's previous history in Spanish cuisine and the wines by the glass were few. Service wasn't intrusive, but neither was it attentive. Maybe things will improve as time goes on.

Greatness has off nights...which is what my date and I experienced... Expectations were high going in to the evening. Food was good, but didn't wow. The vermicelli and beet salad being the stand outs. The service was below average as we waited quite some time for our main courses, the reason our server provided was that the kitchen didn't receive our ticket. She dropped off 2 shot glasses of gazpacho to make up for the delay, however.... with less than 8 tables i expected greatness...we got disappointment. I hope the Italian version is better.

Aragona brings to mind the wonderful late-night meals with friends in Madrid. Recently we has an outstanding meal there. Among the most surprising were a broccoli salad and a trout. The broccoli (yes, everyone's childhood favorite) was perfectly cooked and seasoned with a anchovy Dijon dressing that ended up tasting almost buttery. We have never tasted anything this good, at home or out. Truly wonderful. The trout escabeche was done perfectly, let the taste of the trout shine through chopped vegetables. The rich vegetable gazpacho was complemented with a sardine and crouton-perfect. Roasted lamb with eggplant, green beans with thinly sliced Serrano ham, and patatas bravas (potatoes with romesco) rounded out a perfect dinner

Second, it took over 1.5 hrs to get the food served without any previous warning from the waitress. Third: a few of the wines I selected were not available. My wife and I had a delightful dinner at Aragona. Each dish was carefully prepared and delicious and the staff were friendly and very helpful. The gazpacho, lamb, and pound cake dessert were especially good. I've read reviews of Aragona in which the reviewers complained of the portion sizes. That's silly. The appetizer portions are larger than traditional tapas, and the entrees are just right. We'll happily return to Aragona.
