A word from Type by Chef Blake Rushing
There is no doubt that fresh tastes better. As a chef, I am faced with many options for food suppliers. My promise to my community is to provide patrons with not only the freshest ingredients but also those ingredients that are sustainably and humanely harvested. By focusing on local gardens, seafood from the Gulf of Mexico and quality meats from Florida, Alabama and Mississippi, I prepare delicious meals for my community while supporting the local economy. Furthermore, I enjoy combining local ingredients with both traditional and exotic ingredients from around the world. Through this unique yet tasteful combination, I am able to provide my patrons with the unmatched experience of a local meal with a worldly taste. Continued

  • "Overall, the meal was great. We tried the corn risotto and house-cured bacon to start (both excellent), followed by the veal chop and drum (again, excellent). So after such great food, we were disappointed with the smores dessert which was very average. The additional strawberry marshmallows we received gratis tasted a little artificial (sorry). Still, we would definitely return, although maybe not order dessert."

  • "This is definitely Pensacola's most sophisticated food. While it borderlines on pretentious, the food is delicious. The food portions are large, especially for being so rich. The foie gras and risotto are the standouts for starters, and black drum for main. I wish that dessert had been a little stronger. The staff is attentive, and made great wine suggestions. The restaurant itself is very clean and bright with a lot of good looking patrons."

  • "We have dined here three times. Each time gets better and better. The menu changes every three weeks, so you must return again and again. Do NOT miss the salmon appetizer: a signature dish that does not rotate off the menu. Aside from that, I cannot tell you what to order, as I don't know what's on the menu. But, if you request to have Isaac as your server, he'll be sure to steer you in the right direction. Twice I've gotten a fish dish, and twice it was prepared perfectly. Often a dish is presented beautfiully, but pales when consumed. We cannot say this about Chef Blake Rushing's creations. We recently dined with European guests who gushed nonstop about the veal chop, cooked to perfection! We have never left room for sweets; gamble! :)"

The menu changes every 2 weeks so we're excited about that. Please try it. It will be great if we can keep a restaurant with this quality of food in Pensacola.   • "We loved our experience at Type. Do yourself a favor and get the bacon and the risotto bites = HEAVEN! Only compliant was that my steak was really, really salty and they only had caned soda products. However, this is by far my best dining experience in this town! Very happy to have a great place to go to! We will become regular diners here!"

  • "7pm Friday 2/28/2014 I was looking for something different, a break from the chains and comfort food. We were impressed, the food is unique and quite good, the service was as good as I've ever experienced (Thank You Emerald), it was a thoroughly unrushed enjoyable experience, in its self it was a great nigh out. For 2 Appetizers, 2 Entrée’s, 3 glasses of wine and 3! deserts our bill was $144, that’s quite a bit more than our usual dinner out but it was not our usual dinner out, it was an experience and a good one at that. We will be back."

  • "I dined with two others and enjoyed a variety of the menu's offerings. All the selections were very tasty to the palate, as well as the eyes. Speaking of eyes, the lighting in the main dining area is too dim to comfortably read the menu (which is printed in black ink on brown paper). I wished I had the Tiny Flashlight app on my phone! Aside from that, the evening was very pleasant. Our waitress, Emerald, was very attentive, knowledgeable and personable. We couldn't have asked for better."

  • "Not only was the food delicious, the presentation was over the top! My table gave the chef a round of applause when he came by to check on us. Chef Blake Rushing has obviously been well trained by some outstanding big city chefs and its fun to see someone so into the food they prepare. Add to his talent the superior waitstaff and you have the perfect dinning experience . We will be back often. Very reasonably priced for the quality you receive. Wow"

  • "We couldn't have been more satisfied spending Valentines at TYPE. We both wanted the lamb shank but decided to try the Mackerel as well and share. The Mackerel was outstanding, but we both thought the lamb shank was the best we ever had. I was particularly fond of the potatoes served with the lamb. They had the most incredible seasoning and taste. We also started off with the shrimp soup or bisque and the goat cheese & beet salad. Both were excellent, but the shrimp soup should be a permanent fixture on the menu. It had caramelized onions and a creamy base. We can't wait to go back and see what Blake Rushing has on the menu next time, but we will never forget these items and the incredible service during our first dining experience @ TYPE!"

  • "I took my spouse to TYPE after the holidays to enjoy a low-key night together. My spouse is a vegetarian and on a weight plan for his health. At first, he grumbled when reviewing the menu because of its more select options. The best options for him were the signature and starter items, and after he tasted the smoked salmon under glass his mood improved noticeable. By the time he finished three courses, he was happy. He was able to eat health and smaller portions. Thank goodness TYPE is here, as that gives us a fine dining option for a picky eater!"

A comment from my guest sums it up - "the food was rich and complex, but every flavor stood out and none overwhelmed the other." The best part for me was the fact the food is so flavorful that I can always share an entree, and still feel satisfied. My entire dining party gives TYPE a hearty thumbs up!"

  • "My husband and I had a wonderful experience at Type. The food was delicious, and the service was outstanding. I'm not sure we've ever had a better server than we did on Saturday night. When we first sat down, we were next to a very large, loud group, but the server was glad to move us to a more quiet location. The restaurant is small and sound bounces around a lot, so although it was quieter, I was surprised how audible the group still was. However, the rest of the night absolutely made up for it. Although the prices are a little high, the portions are sizable and the quality is excellent. You get what you pay for here. I highly recommend this restaurant to anyone."

I don't know what happened or how they thought it would go unnoticed.... I look forward to their response... I certainly won't ruin my NEXT 18th wedding anniversary dinner there."

  • "We have dined at Type several times and love the food here. The menu has some "staples" which are always available, but has additions based on what Chef Blake finds fresh locally. He even uses foods that he grows himself. The starters include a unique smoked salmon that should not be missed. We have enjoyed the entrees each time and have tried his house made pasta dishes, seafood, as well as some of the meats prepared sous vide. Portions are all generous, prices comparable to other fine restaurants and the service is attentive. The atmosphere is very comfortable, and feels like you are being served in the comfort of your home. We love to bring out of town guests here and "wow" them with this hidden gem in our little town."

  • "Chef Blake has outdone himself. Our party enjoyed his New Year's Eve Chef's tasting menu paired with wine. The meal was perfection. The wine pours were generous. Each course was beautifully plated, and tasted even better than it looked! The wines were perfectly paired with the food. From the briny Pacific oyster with caviar to the octopus and brie (velvet texture), the amazing Beef Wellington, everything was wonderful. Service was also great, and our waiter was knowledgable and friendly. Whenever I have enjoyed a meal prepared by Chef Blake, he always comes out and warmly greets us, and all diners at his restaurant, which completes the experience. TYPE is a special place, we are fortunate to have it and Chef Blake Rushing in Pensacola!!"

  • "Some of the diners in our group of 6 were very satisfied with what they ordered while a few that ordered the skirt steak were not very satisfied. Portions were small for the price charged. Dessert was average and very small portions which is fine but not at that price. Salads and soup ordered were delicious. Our server was very good and friendly."

  • "After reading about new restaurant and hearing from friends, we decided to try Type out. We were glad we did. While the menu changes every two weeks, chef keeps a few of his signature items on menu all the time. The menu was fairly small in the entrée and desert section. The wine list also needs some help. The unique flavors and attention to detail is what sets chef Blake from the rest in Pensacola. I look forward to warmer nights and sitting outside for a great dinner."

The Grand Marlin offers upscale casual dining choices with a view.Iron offers incredible nouvelle-Americana dishes.Type impressed me as a new direction of haute-southern (if that's possible). I had the monkfish and a fresh tomato salad. It's immediately clear that Type uses ultra-fresh ingredients and prepares them using the newest culinary techniques. It reminded me of Le Bernardin.So many of our restaurants' acoustics cause diners to speak over the noise of dishes, background music, the bar crowd, etc.Type's subtle colors and lighting remind one of a spa experience. I hope our town embraces the subtle elegance of Type."
