Chef Wesley True's famed Mobile restaurant, TRUE, relocated to The A&P in Montgomery this fall. True features farm-inspired, adventurous cuisine by one of Alabama's most acclaimed chefs. Executive Chef / Owner Wesley True creates the dinner and lunch menus seasonally to offer the freshest ingredients available, sourced from truly local growers.

Wesley has worked with leading chefs including John Currence, Bobby Flay, David Bouley, Marcus Samuelson and many others, and was a 2011/2012 James Beard Award Nominee. True focuses on professional service, a relaxed yet sophisticated dining experience, and food that is completely unique and exciting in Montgomery.

So, of course I had to test things out and had the most amazing gin and tonic I've ever had in my life (and I've had a few!) The fried chicken skins are to die for! Everything was just simply cuisine at it's best! Very impressive! Only downside is that we were just traveling through so we won't likely be able to go back!"

  • "My wife and I thoroughly enjoyed our first experiences at True. We arrived what appeared to be on the early side of the dinner evening, for a meal at 6:30. It was also quieter as it was a Thursday night. We had their crawfish beignets for an appetizer, then the steak and pork dishes as mains. All were delicious. The sauces on the meat dishes made them special. For dessert, my wife had a coconut crusted cheesecake and I had the wine-poached apple. They served as a delightful finish to the meals. I highly recommend and plan to go back. Jerry was an awesome waiter too!"

The "farm to table" is all the rage in Philadelphia, PA, and we were pleased with every aspect of our evening in Montgomery.   • "My husband and I went for a date lunch and we loved it. The atmosphere is great and the music that was on was low but just enough to wear you could hear it and didn't have to speak over it. The hostess was great and our server was great. But the food!!!! We had the filet minion beef tips and they were so delicious. We also had a slice of cheesecake and it was delicious as well. We will be going back for more!"

  • "Shrimp 'n grits great-1st time tasted with a tomato sauce. Baby beets a work of art, truly a small plate. Enjoyed the crawfish beignets, no pepper jelly with them? Cajun spicy creamy texture with whole c'tail inside. Fried oysters & Gnocchi on menu instead of Beach mushrooms; very satisfying, nicely subtle seasoning, warm temperature. Chicken skin appetizer perhaps strangest item, a hint of Jalapeno. Grouper and seafood saute not exceptional. Many desserts are decadent rich treats; the peanut butter pie with chocolate banana ice cream VERY intense pb flavor, and large. Choc. fondant: fudge-like strong, heavy. Vanilla cheesecake ricotta based? lighter than expected but good. Please turn down sound a tad so waiter can hear the order!"

  • "Wesley True is destined for greatness - he's actually already there. I travel to Montgomery a few times a year and always insist on having at least one meal at True. It's the Chez Panisse of the east coast as far as I am concerned. Everything is exceptionally prepared with amazing flavors and creativity. I have had the filet there several times and it has never disappointed. The preparation of the filet is ever changing, but each time the taste unique and it is perfectly cooked. Our other entrees were equally great. Our party of four also tried a number of the starters including the tuna, the beet salad and the cerviche. All amazing! I can't say enough good things. It's the best dining in Montgomery."

  • "I went here with my spouse for a nice romantic Valentine's Day dinner and we got exactly what we paid for.amanda was our server for the evening and she was spectacular. She was able to offer us great insights on the menu and what she would recommend for us. She was also able to give us recommendations on all the courses from appetizers to dinner entrees to desserts. I asked for a manager to come over afterwards so that I could tell her manager how great of a job amanda was doing. Overall an amazingly nice fine dining restaurant. With an appetizer two Andres desert and a 60 dollar bottle of wine are total came to about 100 and $60."

  • "We went to True on Valentine's Day. The menu was fixed with two selections within each of the four courses. Everything we had was really very good, from the broth with shrimp and scallop to the gumbo to the freshly prepared fish. The chocolate fendant for desert was excellent. The only hitch was the fixed price per person which was rather high for Montgomery, Alabama. At least we had terrific quality for the high price."

  • "Overall,!we had a great experience. The service was good but slightly a downer at the end when our server did not immediately bring us back our change as we paid cash. It made us feel that she did not trust us to tip her and I was annoyed. If I thought harder about it we would have said keep it and not added more as we did. My wife had the pheasant and the serving size was a little small. The dessert had a large portion and the elk was just right. The food was very tasty and we loved the atmosphere. We would definitely recommend this restaurant to a friend and come back."

Our server was adorable and was able to answer any questions we had about the menu, as well as make personal recommendations. They obviously do a great job hiring and training their employees. The food was delicious, perfectly prepared and beautifully presented. We will definitely be returning often."

  • "Received the recommendation to try True from a coworker who touted it as the best dining experience in Montgomery. After giving it a shot, it is certainly up there, but a few simple tweaks could ensure that it is. True has a fantastic ambiance, slightly degraded by our server wearing an old, tattered polo not at all fitting with the restaurant's remaining staff or the overall feel. The food was quite good, yet there was definitely an aversion to allowing guests access to salt and pepper. We asked twice for some salt, being told "no problem; right away." It never came. Trust me, Mr. True, it's really not a knock on your food if my subjective pallet would like a touch more seasoning. Now I don't know how good the food really could be..."

  • "Two of us had the salad and risotto, the other had shrimp and grits. The salad was an unusual presentation: incredibly fresh, large, whole lettuce leaves and small carrots cut in half (from pole to pole) scattered around a very large plate with a few other tasty bits and pieces. In spite of the plate size, it was not a lot of food, but good. The sweet potato risotto was creamy and well cooked but it was hard to taste the tiny cubes of sweet potato. It was a modest portion, but with the salad made for a nice supper. We found the shrimp and gritst too rich and cheesy, but loaded with shrimp. One even got left. Focaccia squares were forgettable. Service was excellent in spite of several large groups of young people. Noise was moderate."

The dinner menu is quite pricey, especially for Montgomery, but there are very few fine dining locations in Montgomery so that may be why. The food is all local, and as mentioned very tasty."

Awesome. Had me thinking I need to run to the grocery store to buy chicken skins. Very unusual but very good. The catfish was excellent. Everyone enjoyed the treat. Very reasonably priced."

  • "The service was very good the beef tenderloin excellent, I would recommend over the rib-eye....[pre-cooked on the rib-eye which is ok and they made it known] but prefer not that preperation. Chimichuri needs work, not exactly what I have had in Latin America many times. .... Crawfish Beignets excellent....escargot fair....prefer them a little more garlicy....wine was good...Syrah....would eat there again would be interested in chef specials on the weekends or popular nights."
